3 tablespoons all-purpose flour
3 cups sliced fresh strawberries
3 cups diced rhubarb
1 ½ cups all-purpose flour
1 cup packed brown sugar
1 cup butter
1 cup rolled oats

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • In a large bowl, mix white sugar, 3 tablespoons flour, strawberries, and rhubarb. Place the mixture in a 9x13 inch baking dish.
  • Mix 1 1/2 cups flour, brown sugar, butter, and oats until crumbly. You may want to use a pastry blender for this. Crumble on top of the rhubarb and strawberry mixture.
  • Bake 45 minutes in the preheated oven, or until crisp and lightly browned.

1 cup roasted almonds
2 cups old fashioned oats
1 tablespoon cinnamon
1 cup fresh strawberries (tops removed)
1/2 cup honey
1 tablespoon vanilla
1 cup dried cranberries

Steps:

  • Preheat oven to 325°F Line a baking sheet with parchment or silpat.
  • Place the nuts into a small food processor and pulse to crumble (if you don't have a food processor, you can use a Ziploc bag and a rolling pin). Don't overdo it, you don't want them finely ground, just lightly chopped/crushed.
  • In a medium sized bowl combine the chopped nuts, oats, and cinnamon. Stir to combine and set aside.
  • Place the fresh strawberries, honey, and vanilla in a small food processor (or blender) and blend until pureed. Pour into oat/nut mixture. Toss/stir to combine.
  • Line a baking sheet with parchment paper or a silpat. Spread the granola in a single layer on top. Bake for 20-25 minutes, stirring every 5-7 minutes. Don't be concerned if the granola seems mushy. Remove from the oven and let it sit and cool for one hour.
  • After the granola has cooled and become crunchy, fold in dried cranberries and store in a Ziploc bag. Enjoy as a cereal, snack, or over ice cream.

1 cup diced white onion
1 cup diced button mushrooms
¾ cup finely chopped red bell pepper

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C).

1 cup flour
1 cup brown sugar substitute (for baking)
3/4 oatmeal, uncooked
1/2 cup butter, melted
2/3 sugar substitute (for baking)
1 -2 teaspoon cinnamon
2 cups rhubarb, diced (about 2 good-sized stalks)
2 cups strawberries, sliced
1 cup water
2 tablespoons cornstarch
1 teaspoon pure vanilla extract

Steps:

  • Preheat oven to 350.
  • In a roomy bowl, combine the flour, brown sugar substitute, oatmeal, butter, white sugar substitute, sugar and cinnamon and mix until crumbly.
  • Press half of the mixture into a greased 9x13 baking pan. Cover with the rhubarb and strawberries.
  • In a small saucepan, heat the water, cornstarch and vanilla over medium-low heat until thick and clear, stirring often. This takes about 5 minutes.
  • Pour over the rhubarb/strawberry layer.

1/4 cup ketchup, chili sauce or barbecue sauce
Thin slices green bell pepper, if desired

Steps:

  • Heat oven to 350°F. Into food processor or blender, tear toasted bread into pieces. Cover; process with on-and-off pulses until bread is crumbly and evenly chopped.
  • In large bowl, mix bread crumbs and remaining ingredients except ketchup and bell pepper slices. Spread mixture in ungreased 8x4- or 9x5-inch loaf pan. Spread ketchup over top.
  • Baked 1 hour to 1 hour 15 minutes or until meat thermometer inserted in center of loaf reads 165°F.
