3 cups rhubarb, cut into small pieces
3 cups strawberries, cut into small pieces
1 cup sugar
1 1/3 cups flour, divided
1/2 teaspoon cinnamon
1 cup brown sugar
1 cup old fashioned oats
1/4 teaspoon nutmeg
1/2 cup butter, melted

Steps:

  • In large bowl combine rhubarb, strawberries, sugar, 1/3 cup flour and cinnamon. Put into to greased 9 x 13 inch baking dish.
  • In another bowl combine remaining 1 cup flour with brown sugar, oats and nutmeg. Add butter and blend well. Sprinkle over rhubarb/strawberry mixture pat gently.
  • Bake at 350 degrees for 35-40 minutes in preheated oven.

1 1/4 cups granulated sugar
1 1/2 teaspoons grated orange zest
1 tablespoon cornstarch
1/2 cup freshly squeezed orange juice
1 cup all-purpose flour
1/2 cup light brown sugar, lightly packed
1/2 teaspoon kosher salt
1 cup quick-cooking (not instant) oatmeal, such as McCann's
12 tablespoons (1 1/2 sticks) cold unsalted butter, diced
Vanilla ice cream, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • For the fruit, toss the rhubarb, strawberries, 3/4 cup of the granulated sugar and the orange zest together in a large bowl. In a measuring cup, dissolve the cornstarch in the orange juice and then mix it into the fruit. Pour the mixture into an 8-by-11-inch baking dish and place it on a sheet pan lined with parchment paper.
  • For the topping, in the bowl of an electric mixer fitted with the paddle attachment, combine the flour, the remaining 1/2 cup granulated sugar, the brown sugar, salt and oatmeal. With the mixer on low speed, add the butter and mix until the dry ingredients are moist and the mixture is in crumbles. 4 stalks rhubarb, cut into 1/2-inch lengths
1/2 cup sugar
1/4 cup cornstarch
1 orange, zested and juiced
2 tablespoons balsamic vinegar
1 1/4 cups whole-wheat flour
1/2 cup rolled oats
1 cup brown sugar
1 1/4 sticks butter, cut into pea-sized pieces
1 teaspoon vanilla extract
Pinch salt
1 to 2 tablespoons water

Steps:

  • Whipped cream or ice cream, for serving
  • Preheat the oven to 350 degrees F.
  • Filling:
  • Combine all of the ingredients in a large bowl and stir to be sure everything is well combined. Spoon the filling into 8 individual ramekins or 1 wide shallow baking dish.
  • Topping:
  • In a food processor combine the flour, oats and brown sugar and pulse to combine. Add the butter, vanilla and salt and pulse pulse pulse until the mixture looks dry and crumbly. Add 1 tablespoon of water and pulse until the mixture starts to come together and look crumbly. If the mixture still seems dry add 1 more tablespoon of water and pulse to combine.
  • Crumble the topping over the filling. Bake in the preheated oven until the filling is hot and bubbly all the way through and the topping looks crispy and light brown, about 25 to 30 minutes. Serve warm with whipped cream or ice cream.
  • It's berry delicious!

I came across this recipe in a magazine, and with a few adjustments I was able to make it into a delicious crisp. It goes great with vanilla ice cream and one can also alter the recipe to make a mango raspberry crisp which is just as delightful!
