Take courgettes to tasty new heights with this delicious stuffed courgette recipe. Serve with plenty of bread to mop up all the cheesy, tomatoey flavours

500 gram beef mince
1 red onion, finely chopped
1/4 cup fresh breadcrumbs
1/4 cup grated parmesan
1 egg, whisked
2 tablespoon parsley, chopped
2 garlic cloves, crushed
4 courgettes
1 cup tomato passata
1/2 cup grated mozzarella
1/2 cup grated tasty cheese
mixed salad, toasted Turkish bread to serve

Steps:

  • Preheat oven to moderate, 180°C. Lightly grease a 20 x 30cm baking dish.
  • In a bowl, combine mince, onion, fresh breadcrumbs, grated parmesan, egg, parsley and garlic.
  • Halve courgettes lengthwise. Scrape out the flesh with a teaspoon, leaving a 5mm-thick shell.
  • Stuff courgette shells with mince mixture. Place side by side in dish. Pour over passata and sprinkle with combined grated mozzarella and tasty cheese.
  • Bake for 30-35 minutes until golden and bubbling. Serve with mixed salad and Turkish toast.

3 zucchini
1 pound pork sausage
1 cup dry bread crumbs
1 clove garlic, minced
1 (32 ounce) jar spaghetti sauce
½ cup grated Parmesan cheese
½ cup shredded mozzarella cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Trim stems from zucchini and slice lengthwise. Scoop out seeds and put in a bowl. Mix seeds with sausage, garlic, bread crumbs, and Parmesan cheese. Stuff squash with sausage mixture and place in a 9x13 inch baking pan. Pour spaghetti sauce over the top and cover the pan with foil.
  • Bake in preheated oven until sausage is browned and cooked through, about 45 minutes. Remove foil and cover with mozzarella cheese. Return to the oven and cook until cheese is melted, about 15 minutes more.

1-1/2 pounds lean ground beef (90% lean)
1 large onion, chopped
1 large green pepper, chopped
1 jalapeno pepper, minced
1-1/4 cups soft bread crumbs
1 large egg, beaten
1 tablespoon dried parsley flakes
1 teaspoon dried basil
1 teaspoon Italian seasoning
1 teaspoon salt
1/8 teaspoon pepper
2 cans (8 ounces each) tomato sauce, divided
2 medium tomatoes, coarsely chopped
4 medium zucchini
2 cups shredded mozzarella cheese

Steps:

  • In a large bowl, combine first 11 ingredients and 1 can of the tomato sauce; mix well. Stir in tomatoes. Halve zucchini lengthwise; scoop out seeds. Fill with meat mixture; place in two 13x9-in. baking dishes. Spoon remaining tomato sauce over each. , Bake, uncovered, at 375° until the zucchini is tender, about 45 minutes. Sprinkle with cheese during the last few minutes of baking.

1 tomatoes
2 teaspoons oil
1/2 teaspoon mixed herbs

Steps:

  • Peel and chop the onion. Cut the rind from the bacon; cut or chop it into small pieces. Chop the tomato. Heat the oil in a frying pan, add the onion and fry gently for 3-4 minutes, until soft. Add the bacon, and cook for a further 8-10 minutes, stirring well. Add the tomato and seasoning.
  • Wash the courgettes in cold water and cut a wedge-shaped 'lid' along the length of each courgette, to leave a hollow. Pile the filling into the hollow. Put the courgettes carefully into a greased, ovenproof dish and top with the 'lids'. Cover with a piece of foil and bake in a moderate oven (350F/180C/Gas Mark 4-5) for about 45 minutes. Serve with hot, brown bread rolls and butter, and a green salad.

Pack courgettes with pine nuts, sundried tomatoes, breadcrumbs and herbs then oven bake for a healthy veggie main

4 courgettes , halved lengthways
3 tsp extra-virgin olive oil
mixed salad , to serve
50g dried white breadcrumbs
50g pine nuts
6 spring onions , trimmed and finely sliced
1 garlic clove , crushed
6 sundried tomatoes in oil, drained
1 tbsp thyme leaves
25g parmesan or vegetarian alternative, finely grated

Steps:

  • Heat oven to 220C/200C fan/gas 7. Place the courgettes in a single layer in a shallow ovenproof dish, fairly tightly together, cut-side up. Brush lightly with 1 tsp oil and bake for 20 mins.
  • To make the stuffing, mix all the ingredients together in a bowl and season with lots of black pepper.
  • Sprinkle the stuffing on top of the courgettes and drizzle with the remaining olive oil. Bake for a further 10-15 mins or until the courgettes are softened and the topping is golden and crisp. Serve hot with a mixed salad.
