STUFFED POTATOES WITH CREAM CHEESE AND SALMON



Stuffed potatoes with cream cheese and salmon image

An easy meal to make with potatoes :-)

4 potatoes
2/3 cup cream cheese
salt
pepper
dill
1 Tbsp lemon juice
2 slices smoked salmon

Steps:

  • Wrap the potatoes in aluminium foil individually. Bake for 1 hour at 350°F (180°C).
  • Combine creamcheese, lemon juice, dill, salt and pepper. Cut the smoked salmon into strips and add them to the previous mix.
  • Cut the potatoes in halves and add the stuffing in the middle.
  • There you are, your stuffed potatoes are ready!

A healthier alternative to most stuffed potatoes. It came from a calendar I got at the grocery store a few years ago. A meal in a spud.

4 large baking potatoes
1 tablespoon butter
1 cup milk, heated
1 teaspoon Dijon mustard
1/4 teaspoon salt
fresh ground pepper
1 cup small broccoli floret
1/2 cup flaked canned salmon
1 teaspoon fresh lemon rind
2 teaspoons chopped fresh dill
1/2 cup crumbled feta cheese

Steps:

  • Wash the potatoes& poke with a fork so they don't explode.
  • Wrap in paper towels& cook for 10 minutes until soft.
  • If your microwave doesn't have a turntable inside it, turn the potatoes yourself a few times during cooking.
  • Preheat oven to 400 degrees.
  • Slice a bit off the top of each potato, and scoop out the flesh, leaving a bit of a wall near the skin.
  • Mash the potatoes with butter, milk, Dijon, salt& pepper until blended.
  • Mix in the salmon, broccoli, lemon rind, dill& Feta then stuff the potatoes gently, so as not to break the skins.
  • Put potatoes on a baking sheet& bake for 20 minutes, or until the top of the potatoes are golden brown.

  • Place the potatoes in a large pot. Cover with cold water that comes up 1 inch over the tops of the potatoes. Season the water generously with kosher salt.
  • Place the pot over high heat and bring the water to a boil. Boil the potatoes for 10 minutes, then drain.
  • Once the potatoes are cool enough to touch, slice them in half. Use a melon baller or small spoon to scoop out the flesh from each half, leaving a 1/4-inch around the edges. Place the scooped out flesh in the bowl of a food processor. Set the potato halves aside to cool completely.
  • Add the smoked salmon, cream cheese, 2 tbsp sour cream, Dijon mustard, and 1 tsp chopped tarragon to the food processor. Pulse until combined. If the mixture seems dry, add another tablespoonful or two of sour cream and pulse until mixed. The mixture should be soft and creamy.
