Summer Cucumber Salad Spicy Recipes
SUMMER CUCUMBER SALAD
Whenever I pack a picnic, this salad comes along. It's great with grilled entrees or sandwiches. In summer and fall, it's among my most requested side dishes. It keeps well in the refrigerator, so you can make it ahead of time.

- In a large bowl, combine the cucumber, tomato, green pepper and onion. In a jar with a tight-fitting lid, combine lime juice, vinegar, dill, salt and pepper; shake well. , Pour over cucumber mixture; toss to coat. Cover and refrigerate for 15 minutes. Serve with a slotted spoon.

SPICY CUCUMBER SALAD

- Peel cucumbers and cut them lengthwise. Scrape out seeds with small spoon, leaving hollow shells. Cut cucumbers crosswise into 1/4 inch strips. Combine soy sauce, vinegar, sugar, sesame seed oil, hot sauce, salt and pepper in a small bowl and mix well. Add cucumber and toss to coat each slice. Chill before serving.

This recipe is nice for a warm summer day. It came from my next door neighbor. It is a really spicy salad if you put a lot of cayenne in it, if you like spicy stuff.

Steps:
- Peel and slice cucumbers thinly.
- Then add 1 tsp of pickling salt and work until really juicy.
- Let stand for 1/2 an hour or longer.
- Then after that time squeeze out the juice.
- After add 1/2 tsp of paprika,cayenne pepper, and vineger.
- Let stand for 15- 20 minutes.
- When ready to eat add whipping cream or sour cream until juicy.

SUMMER CUCUMBER SALAD - SPICY
Slight twist on the classic. Uses garlic and red pepper to boost the bite a bit! Watch how much onion you use as too much will overpower the cukes.

Steps:
- Peal cukes in stripes leaving some green.
- On a mandolin slice very thin the cukes, place in large bowl.
- Dust with sea salt.
- (You must press and drain the cukes or you will have a watery mess).
- Place wax paper on cuke slices.
- Place a plate on top of cukes and a weight on top of that. ( Tea kettle, Cans etc.).
- Every 20 mins or so, drain the cukes, mix and re-salt. Replace the weights.
- Do this at least 3 times, more if you are patient.
- Meanwhile, peal a small onion and slice very thin on a mandolin. Place in a bowl and wait for cukes to dehydrate.
- When cukes are ready, mix with onions, mayo, sour cream, garlic, parsley, dill, cayenne and S & P to taste.
- Mix well and let sit for 10 minutes.
- Drain off a bit of the liquid.
- Cover and refrigerate.
- Before serving, mix all and drain more liquid away.
- Serve.
- NOTE: Play with the amount of mayo/sour cream to your taste. Also garlic and cayenne pepper as liked.
