This simple, flavorful tomato sauce is a weeknight savior. Make a big batch and stash it in the freezer. Add to pastas, braises, soups, and stews in the weeks to come.

Yield Makes about 12 cups

Number Of Ingredients 7

1/2 cup extra-virgin olive oil
2 Vidalia or other sweet onions, peeled, very coarsely chopped
6 garlic cloves, peeled
2 tsp. dried oregano
4 (28-oz.) cans whole peeled tomatoes
4 tsp. kosher salt, plus more
1 1/2 tsp. freshly ground black pepper, plus more

Steps:

  • Heat oil in a large pot or Dutch oven over medium. Cook onion and garlic, stirring occasionally and being careful not to let brown, until aromatic, about 3 minutes. Add oregano and stir to combine. Using your hands, crush tomatoes and add to pot along with juices; season with 4 tsp. salt and 1 1/2 tsp. pepper.
  • Bring to a boil, then reduce heat and bring to a gentle simmer. Cook, uncovered, stirring occasionally, until sauce is reduced slightly, about 1 hour. Remove from heat and blend with an immersion blender until smooth. Season with salt and pepper.
  • Do Ahead: Sauce can be made 5 days ahead. Store in an airtight container and chill, or freeze up to 6 months.

1/2 cup olive oil
1 small onion, finely chopped
3 garlic cloves, finely chopped
1 (28-ounce) can crushed tomatoes with puree
1 sprig fresh oregano, finely chopped
1 teaspoon dried basil, crumbled
1 teaspoon Italian seasoning, crumbled
Salt and pepper to taste

Steps:

  • Heat the oil in a large saucepan over medium-high heat. Add the onion and cook, stirring, until tender, about 5 minutes. Add the garlic and cook, stirring, until the oil is fragrant and is seasoned, about 2 minutes. Stir in the tomatoes, and purée. Heat to simmering, and cook on low heat until the sauce thickens, about 20 minutes.
  • Add the oregano, basil and Italian seasoning, and mix well. Season with salt and pepper. Cook on low heat for another 15 minutes or so as it thickens.

Steps:

  • Heat olive oil in a saucepan over medium heat; cook and stir onion and garlic until fragrant, about 2 minutes. Add oregano, sugar, basil, rosemary, sage, red pepper flakes, salt, and black pepper; stir to combine, 2 minutes.

This is the marinara sauce I make all winter. It's basically the same sauce as the fresh tomato sauce I gave you last summer, but canned tomatoes stand in for the fresh ones (so you won't have to peel the tomatoes or put them through a food mill). If you buy chopped tomatoes in juice, you won't even have to chop them.

Yield Enough for 4 pasta servings

Number Of Ingredients 7

1 (28-ounce) can tomatoes, seeded and chopped if not already chopped, with juice
1 tablespoon extra virgin olive oil
2 garlic cloves, minced
1/8 teaspoon sugar
a few sprigs of fresh basil, if available
Salt to taste
1 tablespoon slivered fresh basil (optional)

Steps:

  • Pulse the chopped tomatoes in a food processor fitted with the steel blade, or pass through the medium blade of a food mill before you begin. Heat the oil over medium heat in a large, wide nonstick skillet or saucepan and add the garlic. Cook, stirring, for 30 seconds to a minute, until it begins to smell fragrant, and add the tomatoes and their juice, the sugar, salt, and basil sprigs. Stir and turn up the heat. When the tomatoes begin to bubble, lower the heat to medium and cook, stirring often, until thick and fragrant, 15 to 20 minutes, or longer if necessary. Remove the basil sprigs and wipe any sauce adhering to them back into the pan. Taste and adjust seasonings. Stir in the slivered basil.

¼ cup olive oil, divided
1 pound pork ribs, chopped
6 (3.5 ounce) links Italian sausages
1 large white onion, finely chopped
1 ½ teaspoons salt, divided
4 cloves garlic, minced
¼ cup red wine, divided
2 tablespoons tomato paste
1 ½ teaspoons dried oregano
½ teaspoon red pepper flakes
1 cup water
2 (28 ounce) cans whole peeled tomatoes in juice
1 teaspoon dried basil
1 teaspoon ground black pepper
1 pinch white sugar
¼ cup chopped fresh basil

Steps:

  • Heat 2 tablespoons oil in a pot and cook pork ribs until browned, about 5 minutes. Transfer to a plate. Cook sausages until browned, about 5 minutes. Transfer to the same plate as the ribs.
  • Drain off some of the excess fat. Reduce heat to medium-low and pour in remaining olive oil. Add onion and 1/2 teaspoon salt; cook and stir until translucent, about 5 minutes. Stir in garlic and cook until fragrant, about 1 minute; make sure not to burn. Pour in 1/2 of the red wine and scrape up any browned bits off the bottom of the pan.
  • Add tomato paste, oregano, and red pepper flakes. Stir until paste starts to darken, about 2 minutes. Stir in remaining red wine and water.
  • Add tomatoes and their juices, crushing by hand as you add them to the pot. Season with basil, remaining salt, and pepper. Bring to a boil; reduce heat to a low simmer. Taste and add sugar if sauce is too acidic.
  • Return ribs to the pot. Simmer, partially covered, adding more liquid if needed, for at least 2 hours. Add sausages back to the pot for the last 45 minutes of cooking. Add fresh basil during the last 15 minutes of cooking. Discard bones before serving.

Have had this recipe for years, can't remember where I got it, being that my husband had an Italian family with so many good cooks. Is excellent served with Italian Meatballs, with fresh grated Parmasen cheese sprinkled over pasta, and a glass of Chianti wine. Don't forget the garlic bread!!! If you can buy canned San Marzano tomatoes, they are the best.
