SIMPLE VEGETARIAN STUFFING



Simple Vegetarian Stuffing image

The best simple vegetarian stuffing made easy with just a few ingredients. Vegan and gluten free friendly!

3/4 cup butter ((1 1/2 sticks))
1 large yellow onion (diced)
1 large carrot (diced)
3 stalks celery (diced)
3 tablespoons fresh chopped sage (divided)
2 cloves garlic (minced)
2 teaspoons fresh thyme (stems removed, chopped)
Coarse kosher salt and freshly ground black pepper
1 1/4 cups vegetable stock
12 ounces unseasoned dried stuffing cubes

Steps:

  • Preheat the oven to 350ºF. Coat a large baking dish with cooking spray or butter. Set aside.
  • In a large skillet, melt butter over medium heat.
  • Add onion, carrot, celery, and 1 tablespoon sage. Cook, stirring frequently, until the vegetables begin to soften, about 7 minutes.
  • Add the garlic, thyme, and salt and pepper to taste. Cook, stirring, 1 minute.
  • Add the vegetable stock and remove from the heat.
  • Pour the stuffing cubes into the prepared baking dish and add the remaining sage and broth mixture. Stir well to coat.
  • Bake 45-60 minutes, stirring once, until the stuffing is beginning to crisp on the edges.

This is how I always make my stuffing - I can never beat the flavor of the boxed stuff, but this way no one has to know that's how I did it! I think I might have got this off a box a long time ago but can't remember.

2 1/2 cups chicken broth
1/2 teaspoon ground black pepper
2 stalks chopped celery
1 chopped onion
16 ounces seasoned stuffing mix (any flavor will do, but I think the herb flavored ones work best)

Steps:

  • Heat broth, pepper, celery and onion in a saucepan over medium-high heat to boiling. Reduce heat to low. Cover saucepan and cook 5 minutes more till veggies are tender.
  • Add stuffing and mix lightly.
  • Spoon stuffing into a greased casserole dish. Cover and bake at 350 for 30 minutes.

Now my vegetarian doesn't have to miss out on stuffing. And it is a good way to use up slightly stale bread--just stick the ends in the freezer!

1 cube vegetable bouillon
1 cup boiling water
3 tablespoons salted butter
½ cup chopped onion
1 stalk celery, chopped
2 cloves garlic, minced
2 teaspoons dried parsley
½ teaspoon dried sage
¼ teaspoon dried marjoram
⅛ teaspoon ground black pepper
4 ½ cups cubed stale bread

Steps:

  • Combine boiling water and bouillon cube; stir until dissolved.
  • Melt butter in a 2-quart saucepan over medium-low to low heat. Add onion, celery, and garlic; cook until softened, about 5 minutes. Stir in parsley, sage, marjoram, and pepper, then pour in dissolved bouillon.
  • Bring mixture to a boil, then remove pan from the heat. Gently stir in bread cubes. Cover and let sit for 5 minutes.

  • Grease 9x13 pan with butter. Pre-heat oven to 375°F. Tear bread into bite sized pieces and set aside in a large bowl.
  • In a large skillet, melt butter over medium-high heat. Add onion and celery. Cook 4-7 minutes, until tender. Add salt and pepper to taste. Remove from heat, set aside, and stir in freshly chopped herbs.
  • Mix onion mixture and bread together. Add beaten eggs and stir until combined. Stir broth into mixture in increments of 1/2 cup - you want to pour enough in so the mix is soft, but not mushy. We use approximately 2 cups, but do use your judgement as well.
  • Add mixture to greased pan and cover with foil. Cook for 20 minutes covered and then remove the foil. Cook for an additional 20-25 minutes until golden brown and crispy on top. The edges will also begin to pull away from the pan. If it isn't crisping to your liking, broil for 3-5 minutes.
