A thick, tomatoey vegetable soup with "swampy" bits of spinach and gooey swiss cheese make this unconventional Swamp Soup unforgettable!

3 cloves garlic ($0.24)
1 yellow onion ($0.32)
1/2 lb. carrots (about 4 medium) ($0.30)
3 ribs celery ($0.46)
2 Tbsp olive oil ($0.32)
1 Tbsp dried basil ($0.30)
1 Tbsp dried oregano ($0.30)
3 8oz. cans tomato sauce ($0.75)
3 15oz. cans diced tomatoes ($1.35)
1.5 cups vegetable broth ($0.20)
1 10oz. pkg frozen chopped spinach ($0.99)
8 oz. Swiss cheese ($1.69)

Steps:

  • Mince the garlic, dice the onion, peel and slice the carrots, and slice the celery. Add the onion, garlic, carrots, and celery to a large soup pot with the olive oil and sauté over medium heat for about five minutes, or until the onions are soft.
  • Add the tomato sauce, diced tomatoes (with juices), vegetable broth, basil, and oregano to the pot. Stir to combine, then allow the soup to come to a simmer.
  • Once the soup is simmering, add the frozen spinach (no need to thaw). Stir the spinach into the hot soup until it has melted and heated through.
  • Once the spinach is thoroughly mixed into the soup, give the soup a taste and add salt if needed. I did not add any, but this will ultimately depend on the sodium content of your canned goods and vegetable broth.
  • Dice the swiss cheese into small cubes. Add a small handful of cubes to each bowl, then ladle the hot soup over top. Serve and enjoy!

3 slices bacon
2 heads freshly cut swamp cabbage (hearts of palm), chopped
1/2 cup sugar
1 tablespoon salt
1/2 tablespoon freshly ground black pepper

Steps:

  • In a medium saucepan, fry the bacon over medium heat. Set aside, reserving drippings. Put swamp cabbage and remaining ingredients, including fried bacon and bacon drippings, in a 6-quart pot. Fill the pot 1/2 full with water and bring to a boil. Continue to boil for 10 to 15 minutes, until the cabbage is tender. Adjust salt and pepper, to taste. Serve hot as a side dish.

1 can (7 oz.) whole kernel corn, undrained
1 cup tortilla chips, crushed
1 cup KRAFT Mexican Style Shredded Cheese

Steps:

  • Brown meat in large saucepan; drain.
  • Add broth, salsa and corn; mix well. Bring to boil. Reduce heat to low; simmer 5 minutes or until heated through, stirring occasionally.
  • Serve topped with the crushed chips and cheese.

This recipe was given to me by my aunt. I've never heard of it before but it is really good. A mixture of turnip greens, northern beans, kielbasa sausage, and seasonings. Great served with cornbread.

1 teaspoon vegetable oil
1 pound kielbasa sausage, cut into 1 inch pieces
1 onion, chopped
5 cups chicken broth
2 (20 ounce) cans turnip greens
2 (14.5 ounce) cans great Northern beans, rinsed and drained
1 package vegetable soup mix (such as Knorr's®)
1 teaspoon hot pepper sauce (such as Tabasco®)
1 teaspoon garlic powder
1 pinch Creole seasoning (such as Tony Chachere's®), or to taste
salt and ground black pepper to taste

Steps:

  • Heat oil in a skillet over medium heat. Cook and stir kielbasa and onion in the hot oil until the onion is tender, 5 to 7 minutes; set aside.
  • Stir chicken broth, turnip greens, great Northern beans, vegetable soup mix, hot pepper sauce, garlic powder, Creole seasoning, salt, and black pepper together in a large saucepan; bring to a boil. Stir kielbasa mixture into the boiling broth mixture, reduce heat to medium-low, and cook at a simmer for 2 hours.
