This is going to sound so cliché, but the first time I remember trying Swedish meatballs was at IKEA.

2 Large Eggs, Lightly Beaten
1/4 c. Milk
1 lb. Ground Beef
1 lb. Ground Pork
1 c. Panko Breadcrumbs
2 tsp. Unrefined Sea Salt
1 tsp. Freshly Ground Black Pepper
1 tsp. Onion Powder
1/2 tsp. Garlic Powder
1/4 tsp. Ground Nutmeg
FOR THE GRAVY:
5 tbsp. Salted Butter
5 tbsp. All-purpose Flour
1 1/2 tsp. Unrefined Sea Salt
1/2 tsp. Freshly Ground Black Pepper
4 c. Whole Milk
FOR SERVING:
Parsley, For Garnish (optional)
Mashed Potatoes, For Serving
Lingonberry Sauce, For Serving

Steps:

  • For the meatballs:Preheat oven to 400°F (205°C).Place all of the ingredients for the meatballs in a large bowl. Using your hands, mix it all together thoroughly. Just make sure to not over-mix it or the meatballs could get tough.Roll the meat into 1 1/2-inch balls and place them on a baking sheet, making sure they don't touch. You may need to use more than one pan. You should get about 46 meatballs.Bake in preheated oven for 15-20 minutes, or until cooked through.For the gravy:Meanwhile, as the meatballs are baking, make the gravy. Melt the butter in a large pot over medium heat. Whisk in the flour, salt and pepper. Cook for 2 minutes, whisking frequently. Pour in 1 cup of milk while whisking, then pour in the remaining milk. Whisk until smooth. Cook, stirring frequently, until mixture thickens and comes to a boil. Boil and whisk for 1 minutes. Remove from heat.Add meatballs and stir to coat in the gravy. Garnish with parsley if desired. Serve over mashed potatoes with lingonberry sauce off to the side.

1 pound ground sirloin
1/2 pound ground pork
1/2 pound ground veal
1 3/4 cups dry seasoned bread crumbs
1/2 cup freshly ground Italian Pecorino cheese (2 ounces)
1/2 cup freshly ground Italian Parmesan cheese (2 ounces), plus extra for serving
2 garlic cloves, minced
2 tablespoons chopped fresh parsley leaves
Kosher salt and freshly ground black pepper
2 extra-large eggs, lightly beaten
3/4 cup dry red wine, such as Chianti
1/4 cup good olive oil
2 (32-ounce) jars good marinara sauce, such as Rao's
Creamy Parmesan Polenta (recipe follows) or cooked spaghetti, for serving
4 cups chicken stock, preferably homemade
2 teaspoons minced garlic (2 cloves)
1 cup yellow cornmeal, preferably stone-ground
1 tablespoon kosher salt
1 teaspoon freshly ground black pepper
1 cup freshly grated Parmesan cheese, plus extra for serving
1/2 cup creme fraiche
2 tablespoons (1/4 stick) unsalted butter

Steps:

  • Preheat the oven to 400 degrees F. Line two sheet pans with parchment paper.
  • Place the sirloin, pork, and veal in a large mixing bowl and lightly break up the meats with a fork and your fingertips. Add the bread crumbs, Pecorino, Parmesan, garlic, parsley, 2 teaspoons salt, and 1/2 teaspoon black pepper. Add the eggs, wine, and 3/4 cup water and combine lightly but thoroughly.
  • Measure out 2-ounce portions of the mixture (I use a rounded 1 3/4-inch ice cream scoop) and roll each lightly into a ball. Place one inch apart on the prepared sheet pans. Brush the meatballs with the olive oil.
  • Bake the meatballs for 25 to 30 minutes, until lightly browned. Pour the marinara into a large pot and bring to a simmer. Carefully add the meatballs and simmer for 10 minutes, until heated through.
  • To serve with polenta, spoon a puddle of creamy Parmesan polenta on one side of each dinner plate. Spoon 1 or 2 meatballs plus a puddle of tomato sauce on the other side, allowing them to combine in the center of the plate. To serve with spaghetti, distribute among shallow pasta bowls. Spoon the meatballs and sauce onto the pasta. Sprinkle with extra Parmesan and serve hot.
  • Place the chicken stock in a large saucepan. Add the garlic and cook over medium-high heat until the stock comes to a boil. Reduce the heat to medium-low and very slowly whisk in the cornmeal, whisking constantly to make sure there are no lumps. Switch to a wooden spoon, add the salt and pepper, and simmer, stirring almost constantly, for 10 minutes, until thick. Be sure to scrape the bottom of the pan thoroughly while you're stirring. Off the heat, stir in the Parmesan, creme fraiche, and butter. Taste for seasonings and serve hot with extra Parmesan cheese to sprinkle on top.

Made from a combination of beef and pork, these meatballs are a Scandinavian favorite that goes from appetizer to main in a flash (just add noodles). It's a tradition to serve them with sweet-tart lingonberry jam; if you can't find it, grape or red-currant jelly is a good substitute.

1 pound ground pork
3 cups panko (Japanese breadcrumbs)
1 1/2 cups whole milk
2 large eggs, lightly beaten
2 garlic cloves, minced
Coarse salt and ground pepper
1/4 teaspoon ground allspice
3 tablespoons butter
1/3 cup all-purpose flour
3 cups canned reduced-sodium beef broth
Grape or red-current jelly, cooked egg noodles, chopped parsley, for serving (optional)

Steps:

  • Preheat oven to 475 degrees. In a large bowl, combine beef, pork, panko, 1/2 cup milk, eggs, garlic, 1 tablespoon salt, 1/2 teaspoon pepper, and allspice. Mix just until combined.
  • Using a rounded 1-tablespoon measure for each, form mixture into meatballs (you should have about 48). Place meatballs onto two rimmed baking sheets; bake until golden brown and cooked through, 10 to 12 minutes, rotating sheets halfway through.
  • Meanwhile, make sauce: In a medium saucepan, melt butter over medium-high. Add flour; cook, whisking, 1 minute (do not let darken). Gradually whisk in remaining cup milk and broth; bring to a boil. Reduce heat, and simmer until sauce has slightly thickened, 2 to 3 minutes. Transfer to a large bowl.
  • Using a slotted spoon, add meatballs to bowl with sauce; gently toss to combine. Serve as an appetizer, on toothpicks, with jelly on the side; or as a main, over noodles, garnished with parsley, with jelly on the side.

¼ cup brown mustard
1 Tbsp Worcestershire sauce
2 ¼ cups beef broth
1 pinch ground allspice
1 Tbsp cornstarch
¼ cup heavy cream
1 x 25-count bag All-Purpose Meatballs (still frozen is fine), recipe follows
Buttered noodles, for serving
Chopped fresh parsley, for serving
5 lb(s) ground beef
1 ½ cups plain breadcrumbs
½ cup milk
¼ cup heavy cream
¼ cup chopped fresh flat-leaf parsley
2 Tbsp grainy mustard
1 tsp salt
1 tsp freshly ground black pepper
½ tsp red pepper flakes
4 large large eggs
2 Tbsp olive oil

Steps:

  • In a large skillet over medium-high heat, add the mustard, Worcestershire and 2 cups of the beef broth and bring to a boil. Add the allspice.
  • Make a slurry by mixing the cornstarch into the remaining 1/4 cup broth, whisking to get out all the lumps. Whisk the slurry into the skillet and when the mixture starts to boil again, slowly add the cream, whisking constantly. Add the All-Purpose Meatballs, cover and cook until the sauce thickens and the meatballs are heated through, 8 to 10 minutes.
  • Serve over buttered noodles and garnish with fresh parsley.
  • To make the meatballs, combine the ground beef, breadcrumbs, milk, cream, parsley, mustard, salt, black pepper, red pepper flakes and eggs in a large mixing bowl. Mix together well with your hands. Scoop out 1-tablespoon portions and roll them into balls with your hands. Place the meatballs onto parchment-lined baking sheets and put the baking sheets in the freezer for 5 to 10 minutes for the meatballs to firm up.
  • To brown the meatballs, heat the olive oil in a heavy pot or large skillet over medium-high heat. Add the meatballs in batches, making sure not to overcrowd the pot. Cook, turning the meatballs to make sure they brown all over, 5 to 7 minutes per batch. Drain on paper towels.
  • Freezer instructions: Put the cooked meatballs in a single layer on baking sheets and put into the freezer. When frozen, divide them into freezer bags, 25 per bag, and return them to the freezer. Yield: 125 meatballs.

Some people drive for hours to get to an Ikea store, and we know they aren't making the trek just for the $9.99 chairs. They're going for the Swedish meatballs. The dish has been a main attraction at Ikea Restaurants since an in-store chef developed the recipe in Switzerland in 1985. Although Ikea's Real Swedish Food Book, published in 2000, included a meatball recipe, reps confirmed that it is not the one served at their restaurants. Ikea is keeping that baby a secret, so chefs in Food Network Kitchens hit a nearby store for a tasting, then created this spot-on copy.

1/3 cup minced white onion
2 cloves garlic, minced
1/4 teaspoon ground allspice

3/4 pound lean ground beef
1/2 pound lean ground pork
1 large egg plus 1 egg white, beaten
Vegetable oil, for brushing
2 tablespoons unsalted butter
2 tablespoons all-purpose flour
1 1/2 cups low-sodium beef broth
1 teaspoon Worcestershire sauce
1/4 cup heavy cream
Kosher salt and freshly ground black pepper
2 tablespoons chopped fresh parsley (optional)
Lingonberry jam, for serving (optional)

Steps:

  • Make the meatballs: Put the breadcrumbs in a large bowl. Heat the butter in a skillet over medium heat. Add the onion, garlic, allspice, 2 teaspoons salt and 1/4 teaspoon white pepper and cook, stirring, until soft, about 5 minutes. Add the milk and Worcestershire sauce and bring to a simmer. Pour the milk mixture over the breadcrumbs and stir to make a thick paste; let cool. Add the beef, pork, egg and egg white to the bowl and mix until combined.
  • Brush a baking sheet with vegetable oil. Roll the meat into 1-inch balls and arrange on the prepared baking sheet. Cover with plastic wrap and refrigerate at least 1 hour.
  • Preheat the oven to 400 degrees F. Bake the meatballs until cooked through, about 20 minutes.
  • Make the gravy: Melt the butter in a large skillet over medium heat. Add the flour and cook, whisking, until smooth. Whisk in the beef broth and Worcestershire sauce and bring to a simmer. Add the cream and meatballs. Reduce the heat to medium low and simmer until the gravy thickens, about 10 minutes. Season with salt and black pepper. Transfer to a serving dish; sprinkle with the parsley and serve with lingonberry jam, if desired.

From a Food Network "Calling All Cooks" segment several years ago as made by Inglill Mutti with my alterations. These are about as Swedish as they get and my once a year MUST make recipe each Christmas season. This joins my Top Ten favorite recipes! Two tips: Cardamom can be expensive & hard to find. I finally found it at "Wild Oats" where bulk spices are sold by the ounce. I also use Tyler Florence's recipe for the accompanying Lingonberry Sauce, another hard to find item. I found 2 brands at Cost Plus World Market, and I also hear it's sold at Ikea if there's one near you.

2 cups fresh breadcrumbs
1/2 cup milk (I use buttermilk)
1 lb lean ground beef
1 lb ground pork
3 eggs
salt & pepper (to taste)
1 tablespoon ground cardamom
1 1/2 cups yellow onions, finely chopped (divided use)
1/2 cup butter (divided use)
2 tablespoons sugar
3 cups beef broth
2 cups heavy cream
3 tablespoons gravy mix
1 teaspoon fresh ground nutmeg
1 teaspoon ground allspice
1/4 teaspoon ground cloves
1/4 teaspoon ground cinnamon
3 -4 tablespoons cornstarch
1/4 cup water
2 tablespoons all-purpose flour
1 1/2 cups chicken broth
3/4 cup sour cream
1/4 cup lingonberry preserves or 1/4 cup lingonberry jam

Steps:

  • Soak bread crumbs in milk or buttermilk in large mixing bowl for 5 minutes. Add meat, eggs, salt & pepper, cardamom and 1 cup chopped onion. Mix well and roll into 1-1/2" meatballs. It helps to wet your hands as you roll.
  • Saute meatballs in 1/4 cup butter approximately 20 minutes. Remove browned meatballs and set aside.
  • In same skillet, saute 1/2 cup chopped onion with 1/4 cup butter, sugar and pepper unti caramelized, about 10 minumtes.
  • Add beef broth to onion & sugar mixture, scraping up any browned bits from the pan. Briefly cook over high heat.
  • Add cream, gravy maker and all other spices and bring to a simmer.
  • Make a slurry of the cornstarch & water and whisk the slurry into the mixture to thicken.
  • If you're going to serve the meatballs right away, add them to the sauce and simmer another 20-30 minutes. Otherwise, cool and refrigerate sauce & meatballs, either together or separately. (I do this separately, as I often freeze the meatballs without the sauce.).
  • Combine all ingredients for the lingonberry sauce and mix well.
  • Serve meatballs in a chafing dish with sauce and lingonberry sauce on the side as a dip.
