SWEET, SALTY, SPICY PARTY NUTS
I find this technique much easier than the stovetop pan method. You'll get beautiful, perfectly frosted nuts that are roasted evenly, with no bitter burned spots.

SWEET AND SPICY NUTS
The first time I made this I had a small tub of raw nuts in my cabinet and didn't know what to do with them. My mom gave me the recipe, and after I made it I couldn't stop eating them. I am not a nut person, but I am totally addicted to these coated nuts. They're perfect for parties and festive occasions!

Steps:
- Preheat oven to 300 degrees F (150 degrees C).
- Place the nuts on a large baking pan and bake in the preheated oven 10 to 12 minutes, taking care they do not burn. Remove from heat and let cool approximately 5 minutes.
- In a small bowl, mix the white sugar, brown sugar, salt, pepper, cumin, curry powder, cloves and cinnamon.
- In a large saucepan over medium heat, place the nuts and approximately 1/2 the sugar mixture. When the mixture begins to melt, mix in the remaining mixture. Shake the pan until all the nuts are coated, about 5 minutes. Use a spoon to separate nuts that stick together. Remove from heat and cool on a lightly greased baking sheet or wax paper. Separate the nuts to prevent sticking.

SWEET AND SPICY WALNUTS
Steps:
- Adjust a rack in the center of the oven and preheat the oven to 350 degrees F. Spread the walnuts in a single layer on a parchment-lined baking sheet and bake until they are toasted and fragrant, about 7 minutes. Remove from the oven and let the nuts cool completely, about 30 minutes. Leave the oven on. Meanwhile, in a medium bowl, combine the sugar, salt, chili powder, cinnamon, cayenne, and cloves. Once the nuts have cooled, beat the egg white in a medium bowl with and electric mixer until it is very frothy, about 2 minutes. Add the walnuts and toss to coat evenly. If necessary, strain the walnuts through a fine mesh sieve to remove the excess egg white. Transfer the walnuts to the bowl with the sugar mixture and toss well to coat. Spread the walnuts back onto the baking sheet and bake for 5 minutes. Stir the nuts and bake until they are fragrant and golden brown, 5 to 10 minutes.

SALTY AND SWEET WALNUTS
These walnuts are great to serve to you guests at a party...the combination of sweet and salty is a different taste from the regular spiced or sweet nuts...I think you will really go for these...make lots of these, cause you will need them...they go fast! Note: these nuts will keep in an airtight container for up to 1 week, also, try to use only lard if you can for stir-frying the nuts, as it produces better results.

SIMPLE SWEET AND SAVORY SPICED WALNUTS
These are really simple and use much less butter than some. They are mildly sweet and mildly spicy---those who love super spicy will have to add cayenne, etc. They are a lovely complement to a glass of sherry or a cheese board to be served with wine. They are a great addition to salads and can be chopped and included in any number of sweet and savory pastries.

Steps:
- Have ready a silpat on a sheet pan or a parchment lined pan on a surface which can withstand heat.
- Mash the garlic with the brown sugar and spices to form a paste.
- Melt the butter in a non stick skillet over medium heat.
- Add the sugar/spice paste to the skillet and, using a wooden spoon or spatula, stir to combine the butter and paste (about a minute or two).
- Once it is roughly combined, add the walnuts and stir to coat; this will take no more than a minute or two.
- When the walnuts are coated, transfer them to the silpat or parchment.
- Spread them out with your wooden spatula and allow to cool.
- Store the cooled nuts in a tin or jar.
- Use in salads (butter lettuce, beets, blue cheese and these nuts--super!), or as a nibble with cocktails/apertifs.
