CHILE LIME SAUCE
This chili lime sauce is a great side sauce for dipping everything from pork kebabs and chicken tenders, to topping fajitas.

Steps:
- Gather the ingredients.
- Place all ingredients into a food processor blender. Blend mixture well.
- Bring sauce to a simmer over medium-high heat for 1 to 2 minutes. Reduce heat to low and let simmer for 5 more minutes. Stir occasionally. Remove from heat and let cool 5 to 10 minutes before serving.
- Follow the above directions, if using as a marinade, but let the sauce cool for 30 minutes before using. Marinade beef for 6 to 12 hours, chicken and pork for 4 to 6 hours, fish, seafood, and vegetables for 30 minutes.
- Make this sauce ahead of time and store in an airtight container in the refrigerator for up to one week after preparation.

- Tip all the ingredients except the sugar into a mini chopper or blender and blend to a chunky sauce. Scrape the contents into a shallow saucepan with the sugar and 100ml water and bring to a simmer.
- Simmer for 15 mins, stirring occasionally until it becomes syrupy. Keeping a close eye on it, continue to simmer and stir for 5 mins more until it easily coats the back of the spoon and you see the bottom of the pan when you stir. Leave to cool and infuse for 1-2 hours. Will keep in a small sterilised jar for up to a month.

SWEET CHILI LIME CHICKEN WITH CILANTRO COUSCOUS
A very flavorful Asian-type meal with a sweet heat that incorporates my favorite flavors (chili, lime, and cilantro) with a little bit of sugar. The sauce glazes the chicken and is wonderful over the cilantro couscous. You can substitute salt and pepper to taste for MSG.

- Heat olive oil in a large skillet over medium heat; cook and stir chicken breast cubes in the hot oil until the juices run clear and chicken is no longer pink inside, 5 to 6 minutes. Sprinkle chicken with monosodium glutamate as it cooks. Remove chicken from skillet.
- Mix soy sauce, brown sugar, red pepper flakes, lime juice, and lime zest in a bowl, stirring to dissolve sugar. Pour sauce into hot skillet, bring to a boil, and reduce heat to low. Simmer, stirring occasionally, until sauce begins to reduce slightly, 3 to 4 minutes. Mix cooked chicken into sauce and cook until sauce forms a glaze on chicken pieces, about 2 to 3 more minutes, stirring often.
- Bring vegetable broth to a boil in a saucepan. Stir couscous into vegetable broth, turn off the heat, and let couscous stand until broth is absorbed, about 5 minutes. Stir cilantro into couscous.
- Arrange couscous onto a serving platter, top with chicken and sauce, and serve with lime wedges. Squeeze lime wedges over couscous and chicken before serving.

SWEET CHILI LIME FISH
An excellent sauce for fish cooked on the barbecue. Feel free to substitute different, larger pieces of fish and the taste will still be fantastic. I think it's the sesame oil, when added to the chili/lime that really lifts it out of the ordinary.

- In a small bowl, whisk together the lime juice, fish sauce, garlic, jalapeños, and brown sugar. (Or, in a 12-ounce/180-ml or larger jar with a lid, combine the ingredients, cover, then shake vigorously.) Dip a piece of lettuce in the dressing and check the seasonings; add more jalapeños, if you like. The sauce should have a balance of hot, sweet, sour, and salty, which is typical of Thai foods. Keep, covered, in the refrigerator for up to 2 weeks.

You can either use sweet chili sauce with a twist of lime of for better results use Canyon Farms Sweet Chili Lime Sauce. Serves great with rice and a side of green beans. - Heat saute pan w/oil. Cut chicken into chunks and season w/about 1-2 tbs. Adams Rub.
- On med. high saute chicken about 3-4 minutes on each side, chicken is now done, REMOVE.
- Add veggies and saute on high till slightly tender, then add Chili Lime Sauce to warm and toss chicken back inches.
- Serve over rice noodles or rice and enjoy!
