Guacamole Greens Salad with Lime Cilantro Jalapeno Vinaigrette. An easy, copycat recipe from the popular Sweetgreens salad chain! This chicken salad is easy to make, incredibly filling, and makes a great healthy main course salad!

2 tablespoons freshly squeezed lime juice
¼ cup packed fresh cilantro leaves
1 small strip of jalapeno pepper (seeds and ribs removed, finely chopped)
¼ cup avocado (or grapeseed oil)
¼ teaspoon ground cumin
freshly ground black pepper
kosher salt
4 ounces grilled chicken breast (or rotisserie or leftover roast chicken, cubed)
3 ounces grape tomatoes (halved)
¼ cup (1 ounce) finely diced red onion
8-10 large (1 ounce) corn tortilla chips (crushed lightly with hands)
1 small avocado (pitted and cut into medium chunks)
3½ ounces mixed spring greens
wedge of lime (for serving)

Steps:

  • Prepare Vinaigrette: Combine all ingredients in a blender, or small food processor bowl. Puree or pulse ingredients together, until mixture just begins to come together, and cilantro is still finely chopped. Set aside in a small container. Shake before using.
  • Assemble Salad: In a large bowl, place the cooked chicken, halved tomatoes, diced red onion, crushed tortilla chips, avocado, and mixed spring greens. Squeeze the wedge of lime over the salad, then toss the salad lightly with lime cilantro jalapeño vinaigrette. Serve immediately.

Cilantro Lime Dressing takes just 5 minutes in our blender and is about to become your go-to intoxicating dressing! This dressing makes everything better from salads to tacos, to burritos to bowls to grilled chicken or fish. It also makes a fabulous dip for veggies, quesadillas, empanadas, etc. It's spiked with tomatillos, jalapeno, garlic, cilantro, lime and smoked paprika to create a luscious dressing packed with irresistible tangy, punchy flavor.

Number Of Ingredients 10

1/3 cup packed cilantro
2 tomatillos (husks removed and roughly chopped)
1 jalapeno (deveined, seeded, roughly chopped)
2 garlic cloves (peeled)
1 cup real mayonnaise
1 cup sour cream (may sub Greek yogurt)
1 1/2 teaspoons lime juice (use less if using Greek yogurt)
2 tablespoons ranch seasoning mix ((1 oz. packet) - see DIY NOTES)
1/4 teaspoon smoked paprika (optional)
Milk as needed

Steps:

  • Add all of the ingredients to a blender puree until smooth, scraping sides down as needed. Add milk, a tablespoon at a time to reach desired consistency.
  • Chill before serving (a must!). Dressing will thicken in the refrigerator so you may need to whisk in some milk before serving. This Cilantro Lime Dressing stores fabulously well for about 5-7 days, but honestly, it never lasts that long at our house!

1/4 cup lime juice
1 garlic clove
2 teaspoons chipotle chiles
2 teaspoons honey
1/2 teaspoon salt
3/4 cup canola oil
1 cup cilantro

Steps:

  • Chipotle chilies should be in adobe sauce and can be found in the Mexican section of your store.
  • -Chop Cilantro and set aside.
  • - Mince garlic and set aside.
  • - Puree Chipotle chilies in food processor.
  • - Add all ingredients except oil and cilantro to processor and blend.
  • - Slowly add stream of oil to form emulsion.
  • - Add cilantro to processor and pulse to combine.
  • Toss this dressing with baby greens, corn, chicken breasts, plum tomatoes, jack cheese, roasted red pepper and toasted pumpkin seeds.

TEQUILA-LIME CHICKEN WITH CILANTRO DRESSING



Tequila-Lime Chicken with Cilantro Dressing image

3/4 cup tequila
1/4 cup white wine vinegar
Juice of 3 limes
1/2 cup Lemon Oil, recipe follows
5 large shallots, peeled and chopped
1 cup chopped fresh cilantro plus 1 large bunch cilantro, leaves only
2 teaspoons minced garlic
1 1/2 pounds boneless chicken breasts, trimmed of all fat
Coarse salt and freshly ground pepper to taste

1/2 cup canola oil
2 cups vegetable oil
Shells of 4 lemons that have already been juiced
Few sprigs fresh thyme

Steps:

  • If using wooden skewers, soak in water for at least an hour.
  • In a small nonreactive container, combine 1/2 cup of the tequila with the vinegar and lime juice. Whisk in the Lemon Oil. When well emulsified, stir in the shallots, chopped cilantro, and 1 teaspoon of the minced garlic. Pour into a nonreactive, shallow container large enough to hold the prepared skewers. Set aside.
  • Using a very sharp knife, slice the chicken into 30 strips about 1/4-inch thick and 2 inches long. Thread the strips onto the soaked skewers and place them into the marinade, leaving as much of the skewer exposed as possible as you do not want the wood to soak up the marinade. Cover and marinate for 8 hours.
  • Place the cilantro leaves in a saucepan of rapidly boiling salted water for 10 seconds to blanch and set the color. Immediately pat dry and refresh under cold water. Drain very well and pat dry.
  • Place the blanched cilantro in a blender with the remaining 1/4 cup of tequila and 1 teaspoon of garlic. Pulse to combine. With the motor running, slowly add the canola oil, processing until the mixture is thick and bright green. Taste and adjust the seasoning with salt and pepper.
  • When ready to serve, remove the skewers from the marinade. Place a stovetop griddle, heavy-duty grill pan, or nonstick saute pan over high heat. When very hot but not smoking, add the skewers, a few at a time, and sear for 1 1/2 to 2 minutes per side or until the chicken is nicely browned and cooked through. Serve immediately with the Cilantro Dressing on the side.
  • Combine oil with the lemon shells and fresh thyme in a heavy saucepan. Place the pan over medium-high heat and bring to a boil. Immediately lower the heat and barely simmer for 15 minutes. Remove from the heat and allow to cool. Strain into a clean container. Cover and store in a cool spot for up to 6 months. Use the oil for sauteing, frying, and for vinaigrettes.
