Easy grilled swordfish recipe that utilizes a delicious Mediterranean marinade with cumin, fresh garlic cloves and more. But you don't even need to leave it in the marinade too long! Just a few minutes while your grill is heating!

6 to 12 garlic cloves, peeled
1/3 cup extra virgin olive oil
2 tbsp fresh lemon juice, more for later
1 tsp coriander
3/4 tsp cumin
1/2 to 1 tsp sweet Spanish paprika
3/4 tsp salt
1/2 tsp freshly ground black pepper
4 swordfish steaks, about 5 to 6 ounces each, from sustainable sources
Crushed red pepper, optional

Steps:

  • In a food processor, blend the garlic, lemon juice, olive oil, spices, salt and pepper for about three minutes or until well-combined forming a thick and smooth marinade.
  • Pat the swordfish steaks dry and place them in a pan (or a dish with sides to it) and apply the marinade generously on both sides and set aside for 15 minutes or so while you heat the grill.
  • Preheat a gas grill on high (be sure to oil the grates before using). When ready, grill the fish steaks on high heat for 5 to 6 minutes on one side, turn over once and grill on the other side for 3 minutes or so (the fish should flake easily, while maintain firmness. You will likely see a bit of pink on the inside, but it should cook through by the time it gets to the table).
  • Finish with a splash of fresh lemon juice and a sprinkle of crushed red pepper flakes if you like heat. Enjoy!

2 swordfish steaks (1-inch thick (about 2 lbs))
Juice of 1/2 lemon
Extra virgin olive oil
Salt and freshly ground black pepper
4 tablespoons unsalted butter (softened)
1 teaspoon freshly squeezed lemon juice
Zest of 1 lemon
1/2 teaspoon garlic (minced (about 1/2 clove))
1/4 teaspoon salt
2 tablespoons minced fresh basil

Steps:

  • Preheat a gas or charcoal grill to high heat.
  • Cut each swordfish steak in half, drizzle with lemon juice and let stand for 1 minute. Rub both sides of each steak with olive oil, salt and pepper and set aside.
  • Place the butter, lemon juice, lemon zest, garlic, salt and basil in a small bowl and combine well. Set aside until ready to serve.
  • Oil the grill grates and add the fish. Grill the swordfish steaks until opaque throughout, 3-1/2 to 4-1/2 minutes per side. To avoid drying out the fish, do not leave unattended.
  • Top each piece of fish with about 1 tablespoon of the lemon-basil butter just as it comes off the grill. Rest for 3 minutes before serving.

½ cup white wine
5 cloves garlic, minced
2 teaspoons chopped fresh rosemary
4 (4 ounce) swordfish steaks
¼ teaspoon salt
¼ teaspoon ground black pepper
2 tablespoons lemon juice
1 tablespoon extra virgin olive oil
4 slices lemon, for garnish

Steps:

  • Stir wine, garlic, and 1 teaspoon rosemary together in an 8 inch square baking dish. Sprinkle fish with salt and pepper. Place in the baking dish, turning to coat. Cover, and refrigerate for at least 1 hour.
  • In a small bowl, stir together the lemon juice, olive oil, and remaining rosemary. Set aside.
  • Preheat grill for medium heat.
  • Transfer fish to a paper towel-lined dish, and discard marinade. Lightly oil grill grate to prevent sticking. Grill fish 10 minutes, turning once, or until fish can be easily flaked with a fork. Remove fish to a serving plate. Spoon lemon sauce over the fish, and top each fillet with a slice of lemon for garnish.

6 (1/2-inch-thick) swordfish steaks (5 to 6 ounces each)
4 ounces baby arugula
Grated zest of 1 lemon

Steps:

  • Light a charcoal grill or preheat a gas or stovetop grill until very hot.
  • For the sauce, whisk together the lemon juice, olive oil, oregano, red pepper flakes, 1 tablespoon salt, and 1 teaspoon black pepper. Set aside.
  • When the grill is ready, sprinkle the fish with salt and pepper and cook over medium-high heat for 2 minutes on one side, then turn and cook for 1 to 2 minutes on the other side until almost cooked through. Remove to a flat dish, prick holes in the fish with the tines of a fork, and pour the lemon sauce over the fish while it¿s still hot. Sprinkle liberally with salt and pepper, cover with aluminum foil, and allow to rest for 5 minutes.
  • When ready to serve, place the swordfish on dinner plates or a serving platter, pile the arugula on top, drizzle with the sauce from the fish, and sprinkle with the grated lemon zest. Serve warm.

Delicate and light, this sauce has a loose texture that's somewhere between a vinaigrette and a salad. It complements most any grilled fish, so feel free to substitute salmon, tuna or halibut steaks for the swordfish.

1 medium English cucumber, peeled and finely diced to yield 2 cups
2 Tbs. fresh lemon juice
1/2 tsp. granulated sugar
Kosher salt and freshly ground black pepper
1/4 cup extra-virgin olive oil
2 Tbs. minced fresh dill
1 Tbs. minced shallot
2 tsp. minced fresh mint
1-1/2 Tbs. olive oil; more for brushing the grill
Six 1-1/4-inch-thick swordfish steaks (6 to 8 oz. each)
1 tsp. kosher salt

Steps:

  • Put the cucumber in a medium bowl. Add the lemon juice and the sugar, toss to combine, and season with salt and pepper to taste. Stir in the olive oil, dill, shallot, and mint, and add more salt and pepper if necessary. Let sit for 30 minutes to allow the flavors to marry. Taste for seasoning again just before serving and adjust if necessary.
  • Clean and oil the grates on a gas grill and heat the grill to medium high, or prepare a medium-hot charcoal fire.
  • Meanwhile, generously coat both sides of the swordfish with the oil and season both sides with salt. Let the fish sit at room temperature for 15 minutes (while the grill heats). Grill the swordfish steaks directly over the heat source (covered on a gas grill, uncovered on a charcoal grill), without touching, until they have good grill marks, 2 to 4 minutes. Flip the steaks and grill until the second sides have good grill marks and the fish is done to your liking, another 2 to 4 minutes. (Check for doneness by slicing into one of the thicker pieces.) Serve immediately, topped with the cucumber sauce.

1 pound swordfish (You can buy two 8-ounce filets or one 16-ounce filet)
1 tablespoon olive oil
1 tablespoon butter
1/4 cup chicken stock (or dry white wine)
Leaves of fresh mixed herbs (such as rosemary, thyme, or sage) (minced)
1 clove garlic (peeled and minced)
1 Meyer lemon (one half juiced, one half sliced into rounds)
Salt and pepper to taste

Steps:

  • Pat the swordfish dry and season with salt and pepper.
  • Heat olive oil in a skillet over medium high until shimmering and very hot. Add the swordfish and cook for six minutes. Flip and cook an additional six minutes. The swordfish should be at about 135ºF at this point.
  • Add the butter to the skillet with the swordfish and cook until melted and frothy. Add the chicken stock, lemon juice, herbs, and minced garlic. Reduce heat to medium and cook until reduced slightly, about 5 minutes. Once the fish reaches 145ºF, turn off the heat.
  • Add the fish to a serving plate and spoon the sauce over top. Garnish with two slices of lemon. Enjoy!
