PISTACHIO FRUIT BALLS

Number Of Ingredients 7

5 ounces (approximately 1 cup) roasted pistachios
4 ounces (approximately 1 cup) dried cherries
2 ounces (approximately 1/2 cup) dried apricots
2 ounces (approximately 1/2 cup) golden raisins
2 ounces (approximately 1/2 cup) pitted dates
1 tablespoon orange juice
2 tablespoons creme de cassis

Steps:

  • Put the pistachios in the bowl of a food processor and pulse until finely chopped, but not powdery. Divide in half into 2 separate bowls and set aside.
  • Put the cherries, apricots, raisins, and dates through a food grinder using the medium-grind blade. Add to the bowl with half of the pistachios. Add the orange juice and creme de cassis to the mixture and combine, using your hands, until the liquid is evenly distributed throughout. Shape the mixture into 24 walnut size balls and roll them in the remaining chopped pistachios. Store in an airtight container in the refrigerator for up to 1 week.

This makes for an easy, satisfying breakfast when summer fruit is plentiful. Tahini, a Middle Eastern nut butter made from ground sesame seeds, is most often used to make hummus and baba ghanoush. I find that locally made and organic brands of tahini are fresher, sweeter, and looser than commercial brands, in which the oil has often separated from the solids.

1 cup tahini
1/2 cup honey
4 cups sliced fresh fruit (berries, peaches, apricots, apples, bananas)

Steps:

  • In a small bowl, whisk together the tahini and honey. Divide the fruit among the bowls and top with a heaping 1/4 cup of the tahini mixture. Stir gently to incorporate.

Watermelon and Grapefruit Salad With Tahini image

This fruit salad is simple to make but thrilling to eat because it hits all the marks of a good salad in surprising ways. The base is crunchy-sweet watermelon and tangy-tart grapefruit. (If you can't eat grapefruit, substitute orange sprinkled with lemon or lime juice.) These two fruits look similar, but taste different, and that is part of the fun of eating them together. Tahini is used like a nuttier, richer oil, and honey mellows the mix. The balance really depends on the quality of your ingredients, though, so adjust to taste until each bite races between sweet, savory, juicy and creamy.

1 (3- to 4-pound) seedless watermelon, chilled
2 grapefruit
1/4 cup tahini
1/4 cup honey, plus more as needed
Flaky or kosher salt

Steps:

  • Cut off the top and bottom inch of the watermelon and set it on one of its flat, cut sides. Follow the curve of the fruit to cut away the rind. Cut the watermelon in half through the top, then lay each half on its large cut side. Cut each in half lengthwise, then into 1/4-inch-thick triangles. Transfer to a platter, along with any juices.
  • Working with one at a time, cut off the top and bottom of each grapefruit, then set it on one of its flat, cut sides. Follow the curve of the fruit to cut away the peel and pith. Cut in half through the top, then lay each half on its cut side. Cut in half lengthwise, then into 1/4-inch-thick triangles. Remove seeds. Transfer to the platter of watermelon, along with any juices.
  • Drizzle the tahini over the fruit, followed by the honey. Sprinkle with salt. Taste. If it's bitter, add more honey. If it's dull, add more salt and honey. Eat right away.

I had no peanut butter to make traditional no-cook peanut butter balls and came up with this NA*ME-inspired recipe using what I had on hand: tahini and almond butter. The amount of ingredients is estimated. Some oats are gluten-free and I know that Bob's Red Mills' oats are.

1/2 cup tahini
1/2 cup almond butter
1/4 teaspoon ground cardamom
1/2 teaspoon ground cinnamon
2 tablespoons honey or 2 tablespoons Agave, to taste
1 tablespoon pomegranate molasses
1 tablespoon date syrup
1/2 cup oats
5 dried dates, pitted and cut into very small pieces
3 tablespoons finely ground walnuts (can substitute almonds, pine nuts, hazelnuts)
1 teaspoon orange blossom water
grated coconut, to roll

Steps:

  • Place all ingredients *except* coconut in a bowl and stir together to mix well.
  • Place the grated coconut in a flat plate.
  • Roll the mixture into balls (about the size of a walnut.).
  • Roll the balls in the grated coconut.
  • Place the balls on a serving platter, cover and refrigerate until firm.
