Creamy Dijon Dressing image

1/2 cup Dijon mustard
1/2 cup fat-free mayonnaise
1/2 cup orange juice
1/4 cup honey
2 tablespoons cider vinegar
1/4 teaspoon celery salt
Salad greens and vegetables of your choice

Steps:

  • In a blender or food processor, combine the first six ingredients; cover and process until smooth. Serve over greens and vegetables. Store in the refrigerator. Shake before serving.

Steps:

  • In a medium bowl, whisk together the white wine vinegar, Dijon mustard, maple syrup, and kosher salt.
  • Whisk in the olive oil 1 tablespoon at a time until a creamy emulsion forms. Store refrigerated and bring to room temperature before serving (keeps at least 2 weeks).

This recipe is from the Hawaii Diet cookbook. When I first saw it, I thought there was no way I would like it, but the calories (24 per serving) made it tempting to try and surprisingly I loved it. Now I make it all the time. Some changes I made: I used extra virgin olive oil in place of the canola oil, red wine vinegar in place of white vinegar, deleted garlic and replaced salt with Janes crazy mixed up seasoned salt (which has garlic in it.) I also sometimes substitute KAME hot chinese style mustard for the dijon.
