This dip would be perfect with the big straw pretzels, pita chips, sweet potato fries, on the side of potato pancakes, and also might make a welcome substitute ranch for chicken strips or peanut sauce for pork satay.

2 pound frozen cranberries
4 cups orange juice
5 cups ginger ale
5 tablespoons maple syrup
8 tablespoons light brown sugar
1 teaspoon kosher salt
2 pc. oranges, zested

Steps:

  • Make sure to thaw the cranberries before making the recipe. Prepare 9 half pint jars for sterilizing by boiling them for 10 minutes in a water bath canner.
  • In a stockpot, combine all ingredients and bring to a boil.
  • Reduce heat and simmer, stirring occasionally for 30 to 45 minutes or until liquid is reduced by half. Carefully puree with an immersion blender or blender until smooth.
  • Using your funnel fill the jars with the cranberry mixture in half pints or pint size canning jars. Continue filling till the jars are filled to 1/4" headspace.
  • Remove the air bubbles with the rubber or plastic spatula and refill to the proper headspace if necessary.
  • Wipe the rims and place the hot lid/rings on the jars. Process in a water bath canner for 15 minutes at a full rolling boil.
  • (Adjust for altitude) Wait 5 minutes, remove and place on dishtowel overnight undisturbed.
  • The next day remove rings and clean jars and label with recipe name and date. Store in a cool, dry, and dark place.

Skip the traditional canned cranberry sauce and mix up this refreshingly tart cranberry dipping sauce instead; it's turkey's perfect pairing. I find that dipping sauce provides an unexpected way to deliver on some expected Thanksgiving flavors. Not to mention, it's also a whole lot easier to make than classic giblet gravy. This recipe first appeared in Season 1 of Good Eats.

  • Combine all ingredients in a non-reactive (stainless steel) saucepan, and bring to a boil. Reduce heat and simmer, stirring occasionally, until the liquid is reduced by half, 30 to 45 minutes.
  • Carefully puree with an immersion blender or in a conventional blender until smooth. Check for seasoning and serve alongside your roast turkey.

This is a recipe my boss handed down to me, and I have made these cranberries for every Christmas and Thanksgiving for the last 10 years. I always pour this into a beautiful glass dish after it has cooled before it goes into the refrigerator. It has a beautiful look.

1 cup frozen cranberry juice concentrate, thawed
⅓ cup white sugar
1 (12 ounce) package fresh cranberries, rinsed
½ cup dried cranberries
3 tablespoons orange marmalade
2 tablespoons fresh orange juice
2 teaspoons minced orange peel
¼ teaspoon ground allspice

Steps:

  • Stir the cranberry juice concentrate and sugar together in a saucepan over medium-high heat, and bring to a boil, stirring until sugar has dissolved. Mix in the fresh and dried cranberries, reduce heat to medium, and cook until the dried cranberries soften and the fresh ones pop, 7 to 10 minutes. Remove from heat.
  • Mix in the orange marmalade, orange juice, orange peel, and allspice until thoroughly combined. Allow the cranberry sauce to cool completely. Pour into glass serving dish, cover, and chill until cold, at least 2 hours. Can be made up to 2 days ahead of time and refrigerated until serving.
