Using a spiralizer, zucchini is turned into a tasty stand-in for pasta in this non-breaded take on chicken Parmesan.

4 zucchini, cut into spirals using a spiral slicer
1 teaspoon salt
1 tablespoon Italian seasoning
4 skinless, boneless chicken breast halves
salt and ground black pepper to taste
1 cup marinara sauce
cooking spray
4 slices mozzarella cheese
¼ cup freshly grated Parmesan cheese, or to taste

Steps:

  • Line a baking sheet with parchment paper.
  • Place zucchini spirals in a colander and sprinkle 1 teaspoon salt and Italian seasoning over zucchini; toss to coat. Set colander over a bowl to allow water from zucchini to drain.
  • Wrap chicken in plastic wrap and place on a work surface; pound into 1/4- to 1/2-inch thickness. Remove plastic wrap and season chicken with salt and pepper.
  • Heat marinara sauce in a saucepan over low heat.
  • Coat a nonstick skillet with cooking spray and place over medium-high heat. Cook chicken in the hot skillet until browned and no longer pink in the center, 4 to 5 minutes per side. Transfer chicken to the prepared baking sheet.
  • Set oven rack about 6 inches from the heat source and preheat the oven's broiler.
  • Place zucchini in the same nonstick skillet over medium-high heat; cook and stir until tender yet firm to the bite, 3 to 4 minutes.
  • Spoon marinara sauce over each chicken breast and top with mozzarella cheese.
  • Broil chicken in the preheated oven until cheese is melted, 1 to 2 minutes.
  • Transfer zucchini to each serving plate and add chicken. Spoon warm marinara over each piece of chicken and top with Parmesan cheese.

4 cups fresh basil
1 cup grated parmesan cheese
½ cup pine nuts
2 cloves garlic
½ lemon, juiced
salt, to taste
pepper, to taste
½ cup olive oil

3 zucchinis
1 cup cherry tomato
2 boneless, skinless chicken breasts, chopped

Steps:

  • In a food processor, combine the basil, Parmesan, pine nuts, garlic, lemon juice, salt, pepper, and olive oil. Pulse until smooth texture. Set aside.
  • With a vegetable peeler, shave ribbons of the zucchini until you reach the seeds. Set aside.
  • Slice the cherry tomatoes and set aside.
  • Heat a 4-quart jumbo cooker over medium-high. Add a little oil, the chicken breasts, and sprinkle with salt and pepper. Cook until the chicken is cooked through and browned on all surfaces.
  • Turn off the heat and add the cherry tomatoes, pesto, and zucchini ribbons. Toss until well combined and heated through.

4 medium zucchini
1 tablespoon plus 1 teaspoon olive oil
Kosher salt and freshly ground black pepper
1 pound ground chicken
1 teaspoon dried Italian seasoning
2 cloves garlic, minced
1 1/2 cups homemade or jarred marinara (I like Rao's)
1/2 cup shredded mozzarella
2 tablespoons grated Parmesan

Steps:

  • Preheat the oven to 400 degrees F.
  • Slice off the ends of the zucchini and cut in half lengthwise. Use a spoon to remove the flesh of the zucchini, then chop the flesh and set aside. Place the zucchini boats on a baking sheet and drizzle with 1 teaspoon of the olive oil. Season lightly with salt and pepper. Bake for 20 minutes.
  • Meanwhile, heat the remaining 1 tablespoon olive oil in a medium skillet over medium-high heat. Add the ground chicken and cook, using a wooden spoon to break up the chicken, until browned, 8 to 10 minutes. Add the Italian seasoning, garlic, zucchini flesh, 3/4 teaspoon salt and 1/4 teaspoon pepper. Cook an additional 2 to 3 minutes. Add 1/2 cup of the sauce and mix well.
  • Spoon some of the chicken mixture into each zucchini boat. Top each zucchini boat with some of the remaining marinara, then top with the mozzarella and a sprinkle of Parmesan. Bake until the cheese is bubbly and golden brown, an additional 15 to 20 minutes.

6 tbsp of breadcrumbs (40 grs)
3 tbsp of butter
5 tbsp Parmesan cheese (30 grs)
¼ cup of oil

2 medium or 3 small zucchinis (300 grs)

Steps:

  • Wash the zucchini, remove the stems and cut crosswise. Then, cut zucchini slices approximately one centimeter thick.
  • Crush the garlic and season the chicken with 3 garlic (reserve 1 garlic clove), Italian herbs, salt, and pepper.
  • Place the flour with a pinch of salt on a flat plate, mix the bread with the Parmesan cheese and place it on a second flat plate. Finally, beat the egg, add the last crushed garlic and a pinch of salt, place the egg in a medium bowl.
  • Breaded the chicken supremes: pass the chicken supremes first through the flour, then through the egg and finally through the mixture of bread and Parmesan cheese.
  • When the chicken supremes are breaded, place them on a plate while arranging a medium pan with the butter and oil. Bring the pan to the stove over medium-high heat and fry the chicken breasts until they are golden brown on all sides.
  • Then add the zucchini, lower the heat to medium-low and let cook about five minutes over low heat. Stir a little so that the zucchini brown, being careful not to damage the breaded chicken. When the zucchini begins to toast, the chicken will be ready.
  • Remove the pan from the heat, serve two or three tablespoons of zucchini with a chicken supreme. Sprinkle with a little parsley if desired.

8 Tablespoons butter (divided)
½ cup Italian Bread Crumbs
½ cup plus 1 Tablespoon grated parmesan (divided)
¼ cup flour
2 medium zucchini (sliced)
2 garlic cloves (minced)

Steps:

  • In a large skillet over medium heat melt 2 Tablespoons butter. To make the chicken: Melt the remaining 4 tablespoons of butter in a shallow dish. In another shallow dish combine bread crumbs, parmesan cheese, and flour. Dip the chicken in the butter and then coat in the bread crumb mixture and place in skillet.
  • Cook on each side for about 3-4 minutes until the outside is crispy and the chicken is cooked throughout. Set aside on plate.
  • Add 2 Tablespoons of butter back to the skillet and saute the minced garlic for a minute. Add the zucchini to the skillet and saute until tender. Salt and pepper to taste and add 1 Tablespoon parmesan. Add the chicken back to the skillet and heat for a minute or so. Serve immediately.

16 oz Chicken breasts (boneless, skinless)
1-2 teaspoons Dried Oregano
1/2 teaspoon salt
1/2 teaspoon Ground Black Pepper
1 cup shredded mozzarella cheese (4 oz)
1/4 cup grated Parmesan cheese
1 tablespoon Olive Oil
1/2 cup Panko bread crumbs
2 tablespoons Parmesan
1/2 teaspoons Garlic Powder
1/2 teaspoons Salt
1/2 teaspoons Ground Black Pepper
1 tablespoon Fresh Parsley (chopped)
1 teaspoons Dried Oregano

Steps:

  • Preheat oven to 425°F. Drizzle or Spray a 13x9 inch (or similar size) casserole dish with Olive Oil.
  • Add all of the Crushed Tomatoes, Tomato Paste, Garlic Powder, Dried Oregano, Salt, and Ground Black Pepper to the casserole dish and then whisk together so the tomato paste is fully mixed in. Whisk in the chicken broth. Then stir in the pasta. Finally, mix in 1/2 cup of the parmesan cheese.
  • Slice the zucchini in long, flat 1/4 inch slices, from stem to stem.
  • Cut your chicken breast lengthwise from the side to create 2 thin breasts. Season both the zucchini and the chicken with a sprinkle of dried oregano, salt and pepper.
  • Place the zucchini slices on top of the pasta mixture in a single layer, then top each with a pieces of chicken. Top with the mozzarella cheese and 1/4 cup of Parmesan cheese. Cover with aluminum foil and Bake on the center rack 30 minutes or until pasta is cooked through.
  • While the casserole is baking, make the breadcrumb topping by adding the panko breadcrumbs to a bowl and drizzling over the olive oil and stirring to combine. Mix in the rest of the ingredients, the 2 tablespoons of parmesan, garlic powder, salt, pepper, parsley, and dried oregano. After 30 minutes in the oven, remove the casserole and sprinkle the topping all over the top.
  • Place back in the oven for a final 10 minutes, until crispy and lightly browned (Note, you can also turn the broiler on for quicker browning, but watch closely so it doesn't burn!).
