Time 40m

Number Of Ingredients 14

2 tsp Neutral Oil ((such as canola or vegetable))
1 pound Ground Pork Sausage ((or ground beef, chopped chicken livers or gizzards))
12-14 ounces Andouille Smoked Sausage (- diced)
2 small Bell Peppers (- seeded & small dice (about 1 1/2 cups) (I use 1 green & 1 red bell pepper))
1 medium Yellow Onion (- small dice (about heaping 2 cups))
2 large Ribs Celery (- small dice (about ¾ cups))
3 large Cloves Garlic (- peeled & minced)
2 ½ tsp Cajun or Creole Seasoning
¼ tsp Cayenne Pepper
Kosher Salt & Ground Black Pepper
2 Cups Uncooked Long-Grain White Rice (about 13 ounces)
4 Cups Unsalted Broth (- Beef or Chicken Broth)
1 Bay Leaf (- OPTIONAL)
Optional for Garnish: Fresh Green Onions & Parsley (- chopped)

Steps:

  • Brown pork sausage: In a Dutch oven or high-sided large skillet, heat the oil over medium-high heat. Add the pork sausage and cook, undisturbed for 2 minutes. Use a spatula to flip the pork over and season with salt and pepper. Continue to cook, undisturbed for an additional 2 minutes. Use a wooden spoon to stir and break the pork up into large crumbles. Cook the crumbled of pork 1 more minute undisturbed. Use a large, slotted spoon to remove the sausage to a paper towel-lined plate and set aside. (Note: Pork will continue to cook in next steps)
  • Brown the andouille: Add the andouille sausage to the pan. Cook, undisturbed for 2 minutes. Stir and continue to cook, stirring occasionally, until the andouille is well caramelized about 2 additional minutes. Use a large, slotted spoon to remove the andouille sausage to a separate paper towel-lined plate and set aside. (Note: If you have a lot of fat in the pan, drain off or blot all but 1 tablespoon of fat from the pan before proceeding with the next step.)
  • Add vegetables + seasonings: Reduce the heat to medium and add the bell peppers, onion and celery. Cook, stirring occasionally, until the vegetables are softened, about 6-8 minutes. Add the garlic, Cajun seasoning and cayenne. Season with ½ teaspoon of salt and ¼ teaspoon of pepper. Cook until fragrant, about 30 seconds to 1 minute.
  • Add the rice + broth: Return the pork sausage to the pan. Add the rice, broth and bay leaf (if using). Stir everything together, using the back of your spoon to gently scrape up any brown bits stuck to the bottom of the pan.
  • Boil, Simmer, Cover and Cook: Bring the mixture to a boil over medium-high heat and then immediately reduce the heat to maintain a simmer. Cover the pan and simmer for 20-22 minutes, or until the rice is cooked and tender.
  • Let steam off heat then add andouille: Remove the pan from the heat and let sit COVERED for 5 minutes. Remove the cover. Remove and discard bay leaf. Fluff the rice with a fork and stir in the andouille. Taste and adjust for seasoning with salt and pepper.
  • Serve: Garnish with green onions and parsley. Serve and enjoy!

DIRTY RICE

Dirty Rice image

This is the ultimate "anything goes" dish. All you need is some sausage and any kind of raw or cooked meat you might have on hand. We use a tasty mix of sausage, chicken, pulled pork, and ham. The only thing you can't skip are the chicken livers. That's what makes Dirty Rice dirty and gives it its deep, rich flavor. We've been servin' it every Wednesday as a featured side, and we've found that Central New Yorkers really appreciate this frugal New Orleans specialty. It's also good as a stuffing for Cornish hens, pork chops, or turkey.

Yield feeds 4 as a main course or 8 as a side dish or stuffing portion

Number Of Ingredients 17

1/3 cup olive oil
2 cups chopped onion
1 cup chopped green pepper
1 or 2 jalapeño peppers, seeded and minced
Kosher salt and black pepper
2 tablespoons minced garlic
1/2 pound boneless, skinless chicken thighs, cut in 2-inch cubes
1 pound bulk sweet Italian sausage
1/4 pound leftover ham, cut in strips or cubes (about 1 cup)
1/4 pound leftover meat of any kind, shredded or diced (about 1 cup)
1/2 pound chicken livers, puréed in a food processor
3 cups chicken broth or stock (to make your own, see page 168)
1/4 teaspoon cayenne pepper
1 teaspoon ground cumin
1 teaspoon dried oregano
1 bay leaf
1 1/2 cups parboiled long-grain rice (preferably Uncle Ben's)

Steps:

  • Set a Dutch oven on the burner. Pour in the oil and get it nice and hot over medium-high heat. Toss in the onions, green peppers, and jalapeños. Season with salt and pepper. Cook til tinged with brown; then add the garlic and cook 1 minute more. Toss in the cubed chicken and cook, stirring, til the pieces are coated with the veggies. Crumble in the sausage and keep cooking and stirring til it loses its pink color. Toss in the remaining meats and the liver purée. Douse the meats with the broth and add the cayenne, cumin, oregano, and bay leaf. Stir in the rice and bring it all to a boil. Cover and turn the heat down low. Cook for 20 minutes without stirring. Pull the pot off the stove and remove the bay leaf. Now give it a stir and it's ready to serve.

MADELINE ROSELAND'S DIRTY RICE

Madeline Roseland's Dirty Rice image

Madeline Roseland is my grandmother from Louisiana. She made this every year for Thanksgiving, and like most Cajun recipes, the amounts are general, as well as the prep and cooking times. Cook the rice until it's done. If you use the microwave, it will be finished sooner than the rice steamer. Keep adding spices until it tastes good to you. It should be as spicy as you can handle. If you've ever read a Cajun cookbook, you'll know I'm telling the truth when I say they don't usually use cookbooks or measuring spoons. They just know it and hand it down to the next generation by teaching in the kitchen while actually preparing the recipe. The turkey drippings are what makes this rice so good, and for the very best flavor, use the turkey juice from the bottom of the roasting pan when your turkey is almost done. It just isn't the same without it. I know lots of people don't like the liver, but if you do this recipe correctly, the liver taste does not come through as liver, it just adds a distinctive flavor, but is not overwhelmingly liver. Granny also used Bruce's Ma Cayenne pepper, which has a flavor all its own, but I think the company went out of business years ago, because we haven't been able to find it in forever. Other Cajun brand peppers work better than the traditional red peppers.

Provided by Kat Wood

Categories     Rice

Time 1h40m

Yield 10-12 serving(s)

Number Of Ingredients 13

2 cups white rice
4 cups turkey drippings, juice
1 lb ground beef
1/2 lb ground chicken liver
1 large onion, chopped
1 large bell pepper, chopped
3 -4 stalks celery, finely chopped
4 fresh garlic cloves, minced
1/2 cup real unsalted butter
1/2 teaspoon cayenne pepper, more to taste
1/2 teaspoon cajun spices, more to taste (I use Tony Chaceries)
salt
black pepper

Steps:

  • Cook rice in turkey stock in microwave or rice steamer.
  • If using the steamer, reduce turkey stock to 2 cups.
  • Sauté garlic and vegetables in butter until soft.
  • Add ground meat and seasoning to sautéed vegetables.
  • Brown until done.
  • Do not drain liquid--this is not a low fat recipe!
  • Just continue cooking until the liquid is reduced almost completely (leave it a little juicy) back into the meat and vegetable mixture. You don't want the rice runny, just moist.
  • Stir meat mixture into rice and serve.

  • Start by making the roux, place the flour and the butter into a small skillet over medium heat and whisk together. Continue to whisk until mixture turns to a medium to dark brown, about 5 minutes, set aside off heat.
  • Over medium heat, place a dutch oven or thick-bottomed skillet. Allow to get hot and add the sausage, cumin, pepper, and paprika. Get a hard sear on the sausage, mixing it with the spices and letting it get browned and bits will stick to the bottom of the pan.
  • Deglaze the pan with 1/2 cup of the stock, scraping off all the browned bits on the bottom of the pan with a wooden spoon. Add the garlic and mix in until fragrant, about 1 minute. Add the roux. Reduce heat to medium and cook uncovered for 10 minutes, adding in the rest of the stock slowly so the mixture doesn't completely dry out. Stir occasionally.
