How to tenderise beef (velveting beef) image

Chinese restaurants tenderise economical cuts of beef so they are tender and juicy in stir fries. It's also done for chicken. There's a few methods - this baking soda way is the easiest, fastest and highly effective. Though I'm sharing this with beef stir fries in mind, don't just limit yourself to Asian food. This beef can be used for any recipe calling for strips of beef to be cooked quickly, like Beef Stroganoff. Do not use this method for whole steaks (read Note 4).

250 g / 8 oz stewing beef or other economical beef cuts ((Note 1))
3/4 tsp baking soda / bi-carbonate soda ((Note 2))

Steps:

  • Slice beef thinly against the grain. (Note 3)
  • Place in a bowl. Sprinkle over baking soda, toss with fingers to coat evenly.
  • Refrigerate for 30 to 40 minutes. (See Note 1 for different cuts)
  • Rinse beef well with tap water. Shake off excess water, then use paper towels to blot away excess water (doesn't need to be 100% dry).
  • Proceed with recipe of choice. Beef can be marinated or seasoned before cooking, stir fried or deep fried, and it will be soft and tender, "velvet" like. Use for Stir Fries, Stir Fried Noodles, Beef Stroganoff and any other recipe calling for quick-cooked beef strips.

My take on restaurant-style Mongolian Beef! Instead of frying the beef, we use a secret ingredient to marinate and tenderize it, and the results are phenomenal!

Number Of Ingredients 14

1-1¼ pound beef, such as skirt or flank steak trimmed and cut thinly against the grain (at a 45º angle)
2 tablespoons low sodium soy sauce
3 tablespoons EACH: cornstarch AND fresh minced garlic
¾ teaspoon baking soda
¼ teaspoon EACH: white pepper AND garlic powder
½ small red onion, cut into thick slices
2-3 dried red chilies, optional
6-8 scallions, trimmed and cut into 4-5 pieces each
Oil, for cooking
¼ cup EACH: water AND low sodium soy sauce
3 tablespoon brown sugar (I prefer dark brown)
2 teaspoons fresh ginger, grated or minced
¼ teaspoon kosher salt
1 tablespoon hoisin sauce

Steps:

  • MARINATE: Add the thinly sliced beef, soy sauce, 1 tablespoon water, cornstarch, baking soda, white pepper, and garlic powder to a bowl and stir to combine. Set aside for at least 15 minutes and ideally, 1-2 hours works best to tenderize the meat.
  • SAUCE: Combine the ingredients for the sauce in a bowl with a whisk or in a mason jar with a lid.
  • SEAR THE MEAT: Heat a wok a large skillet over medium-high heat. Add 1 ½ tablespoon of oil and allow for the oil to be just below the smoking point. Add one-third of the meat in a single layer and allow for it to cook through for 1-2 minutes or until it crisp, flip, and continue cooking for another 1 minute. Remove the meat to a plate and repeat with the remaining meat in batches, adding oil as needed.
  • PUT IT TOGETHER: Add 2 tablespoons of oil to the same skillet and sauté the onion slices and dried red chilies for 1 minute. Add the garlic and give it 30 seconds then, add the beef back into the pan and toss. Kick the heat up to the highest setting and stir everything. Drizzle the sauce over the meat and toss to combine so all the meat is evenly coated in the sauce. Allow the sauce to sizzle and thicken a tiny bit before adding the scallions and tossing until the scallion wilt just a bit. Top with sesame seeds and serve warm!

I have no idea where I got this recipe; I found it on a piece of paper among all my lose recipes. I added a dash of Accent to the marinade and let the meat marinade overnight. The beef came out tender, I used the beef to make beef and broccoli. I used sirloin steak sliced thin for my beef. The recipe calls for 1 pound of beef. I didn't include marinating time in the cooking time.
