Our Tex-Mex chopped chicken salad recipe is easy to make and high in protein! Thought salads were boring? Think again.

1 cup ranch dressing
2 Tbsp taco seasoning (hot or mild)
3 cups chicken (cooked, cooled and diced)
4 cups Romaine lettuce (chopped, about 1 head)
2 Roma tomatoes (diced)
1 cucumber (seeded and diced)
1 cup corn kernels (fresh or frozen)
4-5 green onions (sliced)
1 15 oz can black beans (drained and rinsed)
4 oz sharp cheddar cheese (or pepper jack, cut into ¼" cubes)
1/4 cup cilantro (chopped )
juice of 1/2 of a lime
1 cup tortilla chips (crushed )
jalapeño (diced, toasted pumpkin seeds, diced avocado or jicama for garnish (optional))

Steps:

  • In a small bowl, stir together ingredients for dressing then refrigerate until ready to use.
  • In a large bowl, toss salad ingredients together. Add dressing a little at a time then toss until lightly coated.
  • Season with salt and pepper to taste. Serve immediately.

1 cup ranch dressing
2 tablespoons taco seasoning (hot or mild)
SALAD:
3 cups cooked chicken, cooled and diced
4 cups romaine lettuce, chopped (about 1 head)
2 Roma tomatoes, diced
1 cucumber, seeded and diced
1 cup corn kernels (fresh or frozen)
4 to 5 green onions, sliced
1 (15-ounce) can black beans, drained and rinsed
4 ounces sharp cheddar or pepper jack cheese, cut into 1/4-inch cubes
1/4 cup cilantro, chopped
Juice of 1/2 lime
1 cup tortilla chips, crushed
OPTIONAL GARNISHES:
Diced jalapeño
Toasted pumpkin seeds
Diced avocado or jicama

Steps:

  • In a small bowl, mix the dressing ingredients together and then refrigerate until ready for use. In a large bowl, toss the salad ingredients together. Add a little dressing at a time and then toss until lightly coated. Season with salt and pepper to taste. Serve immediately.

This easy Tex-Mex chopped salad is so healthy, filling and fresh!

2 cups chopped or shredded cooked chicken (about 2 breasts and a little over 8 ounces)
1 red bell pepper (diced)
1 can black beans (drained & rinsed)
1 can sliced black olives (drained)
1 can sweet yellow corn (drained (or 1 cup frozen corn, thawed))
2 small to medium tomatoes (diced)
1 heart of romaine lettuce (chopped well)
¼ cup fresh cilantro (chopped)
2 small ripe avocados or 1 large Haas avocado (diced)
⅔ cup nonfat plain Greek yogurt (I like Chobani Greek yogurt) (or about 5.3 oz. )
⅓ cup Just Mayo or avocado oil mayo (or use additional Greek yogurt)
1 tsp garlic powder
½ tsp cumin
½ tsp garlic salt
1 tablespoon taco seasoning (store-bought or homemade)

Steps:

  • In a large bowl, combine all salad ingredients together.
  • In a small bowl stir all dressing ingredients together.
  • Pour dressing over salad, gradually, as you toss to combine, then gradually add more dressing until salad is coated in dressing. Add salt to taste, as needed.
  • Serve on bread, in a wrap, over greens or dip style with tortilla chips. Enjoy!

1 whole skinless, boneless chicken breast, halved
2 tablespoons Montreal steak seasoning
2 tablespoons butter
½ head iceberg lettuce, chopped
1 tomato, chopped
½ green bell pepper, cut into 1/4-inch cubes
¼ cup seeded and chopped jalapeno peppers, 3 tablespoon juice reserved
2 tablespoons chopped green chile peppers
¼ cup drained canned corn kernels
¼ cup drained sliced black olives
¼ cup drained and rinsed black beans
½ cup shredded Cheddar-Monterey Jack cheese blend
1 cup ranch dressing
½ teaspoon ground black pepper
¼ teaspoon garlic powder

Steps:

  • Sprinkle chicken breast evenly with Montreal steak seasoning.
  • Melt butter in a frying pan over medium heat; cook chicken until no longer pink in the center and juices run clear, 5 to 10 minutes per side. Remove chicken from pan and cut into small pieces.
  • Mix lettuce, chicken, tomato, green bell pepper, jalapeno peppers, green chile peppers, corn, black olives, black beans, and Cheddar-Monterey Jack cheese blend in a large bowl; gently toss.
  • Whisk ranch dressing, reserved 3 tablespoons jalapeno juice, black pepper, and garlic powder together in a bowl; drizzle over salad. Toss to coat.

1 cup quinoa
2 cups water
1 teaspoon kosher salt
¼ cup fresh lime juice
2 tablespoons olive oil
⅛ teaspoon ground black pepper
1 (14 ounce) can diced tomatoes with green chile peppers, drained
1 (14 ounce) can garbanzo beans, drained and rinsed
1 bunch cilantro, chopped
2 avocados, cubed
¼ cup crumbled cotija cheese

Steps:

  • Bring quinoa, water, and salt to a boil in a saucepan. Reduce heat to medium-low, cover, and simmer until the quinoa is tender, 20 to 25 minutes. Meanwhile, stir together the lime juice, olive oil, pepper, diced tomatoes, and garbanzo beans. When the quinoa is done, stir it into the tomato mixture, then cool in refrigerator until cold, about 2 hours
  • When the quinoa is cold, fluff with a spoon, and gently fold in the cilantro, avocados, and cheese.
