this is a quick and easy tex-mex recipe that you can use as a main dish. served with a salad, it makes a meal. you may also serve it as an appetizer by serving it in a chafing dish with a basket of tortilla chips for dipping.

  • brown ground beef in a large skillet and drain
  • add onion and cook briefly
  • add tomatoes with chiles , chili mix and beans and simmer for 15 minutes
  • add cheese and cream and simmer for 5 minutes or until cheese is melted
  • to serve , place tortilla chips on individual plates and pour ground beef mixture over the top

  • 1 large onion, chopped
  • 2 (10 ounce) cans tomatoes and green chilies
  • 1 (1 ounce) package chili seasoning mix
  • 2 (15 ounce) cans ranch style beans

  • 1 cup light cream or 1 cup half-and-half
  • tortilla chips, to taste

  • Preheat oven to 400 degrees F (200 degrees C). Lightly grease a 9x13 inch baking dish.
  • In a medium bowl, mix together cream cheese, barbeque sauce and steak sauce.
  • Arrange mushroom caps in the baking dish, and stuff each cap with equal portions of the cream cheese mixture. Sprinkle with bacon bits.
  • Bake 10 to 15 minutes in the preheated oven, or until lightly browned.

  • Preheat oven to 425. Bake Texas toast for 10 minutes; cool and cut into 1-1/2" pieces. Put in a bowl. Lower oven to 325. In a large skillet, brown and cook crumbled sausage until no longer pink. Drain sauage on paper towel. In the same skillet, melt buttter and saute onion, celery and green pepper until tender. In a large mixing bowl, combine sausage, vegetable mix, toast and sage. Add eggs and broth. Toss gently, salt and pepper to taste. Spoon into a buttered 3-4 qt baking dish. Cover with foil. Bake for 60 minutes. Uncover and bake 10 min longer or until lightly browned. Check internal temp - it should read 165 when done.

  • 2 cups celery, chopped
  • 1 cup green pepper, chopped
  • 1 tsp rubbed sage
  • 2 eggs, lightly beaten
  • 2 cups chicken broth
  • salt and pepper

  • In a saucepan over medium heat, add the butter and allow to warm. Then add the celery and onions. Reduce the heat to medium-low and cook, stirring with a spoon, for 15 minutes. Once cooked, remove the pan from the stovetop.
  • Preheat the oven to 375 degrees F.
  • Put the Texas toast cubes in a 12-by-18-inch roasting pan. Add the celery mixture, stock, sage, parsley, garlic, salt and pepper. Gently mix and allow to rest for 20 to 30 minutes. During the rest, stir gently again with a spoon, ensuring not to break the bread apart. After resting and marinating the bread, cover with foil and bake until set, 30 to 45 minutes. Once cooked, remove from the oven and serve.
