Steps:
- Preheat the oven to 350°F and grease and flour or line with parchment paper a 9-inch baking pan (square, round, or Texas shaped) or a 9×5 loaf pan.
- In a mixing bowl together the chopped dates, pecans, coconut, flour, orange zest, salt, cinnamon, and ginger until well combined. Pour in the sweetened condensed milk, and stir until a thick, sticky batter forms.
- Spread the fruitcake batter into the baking pan and then bake uncovered for 30-35 minutes or until the top is lightly brown. Be careful not to over bake it, as it will harden as it cools. Allow to cool for 30 minutes before slicing. The cake can keep in an airtight container for several days. It also freezes well.

- Grease and line three 8x4-in. loaf pans with waxed paper; set aside. In a large bowl, combine dates, nuts and cherries. Combine the flour, sugar, baking powder and salt; stir into fruit mixture until well coated. In a bowl, beat eggs and vanilla until foamy. Fold into fruit mixture and mix well. Pour into prepared pans., Bake at 300° for 1 hour or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks. Remove waxed paper. Cool completely before slicing. Wrap and store in a cool, dry place.

- Preheat oven to 325°F. Beat butter and sugar with a stand mixer fitted with a paddle attachment on medium-high speed until light and fluffy, about 3 minutes. Add eggs 1 at a time, beating well after each addition.
- Stir together baking powder, salt, and 3 1/2 cups of the flour in a bowl. Gradually add flour mixture and lemon extract to butter mixture, beating on medium speed until just combined. Stir together pecans, raisins, and remaining 1/2 cup flour in a separate bowl; stir into batter until combined.
- Coat a 10-inch tube pan with baking spray with flour. Spoon batter into prepared pan. Bake in preheated oven until a wooden pick inserted in center comes out clean, 1 hour, 15 minutes to 1 hour, 30 minutes. Cool in pan 15 minutes. Remove from pan; let cool completely on a wire rack, about 1 hour.

- Mix butter, sugar, and eggs. Use one cup flour to mix in fruit and nuts. Mix rest of flour into batter and add flavoring. Stir batter into fruit and nut mixture. Grease and flour tube pan. Put batter in tube pan and bake at 275 degrees F for 2 to 2 1/2 hours. Refrigerate for smooth slicing.

- Preheat oven to 350 degrees F (175 degrees C). Grease three 9x5 inch loaf pans, line them with parchment paper, and grease the paper.
- Beat eggs, salt and vanilla together until very light and lemon colored. Add sugar, 1 cup of the flour and 2 teaspoons baking powder. Put brazil nuts, walnuts, pecans, red and green cherries into a large bowl. Dust with the remaining 1/2 cup flour. Then add the egg and sugar mixture. This is a very stiff mixture. Mix with hands.
- Press into 3 - 9x5 inch loaf pans which you have lined with parchment paper and have greased both pan and paper. Bake for 1 hour at 350 degrees F (175 degrees C).

- Preheat oven to 325°F.
- Grease and flour a 10 inch tube pan or bundt pan.
- Cream butter in a large mixing bowl; gradually add sugar, beating until light and fluffy.
- Add eggs, one at a time, beating well after each addition.
- Sift 3 1/2 cups flour and baking powder together, reserving 1/2 cup flour.
- Gradually add to creamed mixture alternately with lemon extract, beginning and ending with flour mixture.
- Beat well after each addition (the batter will be quite thick).
- Dredge pecans and raisins in remaining 1/2 cup flour; stir into batter.
- Spoon batter into prepared pan.
- Bake for 1 3/4 hours or until cake tests done with a toothpick.
- Cool in pan 15 minutes.
- Turn out onto cooling rack and let cool completely before serving.
TEXAS PECAN CANDY CAKE
This cake should be made at least two weeks ahead to allow the flavors to blend. Hint: I cheat and use the date pieces coated with sugar (instead of regular pitted dates), just taking off most of the sugar by rubbing them in my hands.

- Preheat oven to 250 degrees F (120 degrees C). Grease and flour a 9 inch tube pan with a removable bottom.
- Combine cherries, pineapple, and dates; sprinkle with flour, and toss to coat. Add pecans and coconut; mix thoroughly by tossing. Stir in the sweetened condensed milk, mixing well. Spoon into prepared pan, and smooth the top.

- 1. Cream together brown sugar and margarine or butter. Add egg yolks. Reserve egg whites for Step 5.
- 2. Dredge fruit in 2 cups of the flour.
- 3. Mix baking powder and remaining two cups of flour, and add to sugar and egg batter.
- 4. Stir in fruit mixture from Step 2.
- 5. Beat egg whites to a soft peak and fold in.
- 6. Pour into either a prepared 13 x 9 pan or Bundt pan, sprayed with cooking spray.
- 7. Bake at 225 degrees for 3 to 3-1/2 hours, considering not all ovens were created equal. ;)
- 8. Enjoy a big ol' hunk of Texas goodness with a large dollop of your favorite vanilla ice cream. Mmm-mmm good! ;)
