Thanksgiving in a Bun image

Instead of letting your Thanksgiving leftovers go to waste, use 'em to make our Thanksgiving in a Bun recipe. This sandwich is basically a combination of everything that you love about Thanksgiving, all "stuffed" inside a roll. It's a recipe that adds a whole new meaning on a leftovers sandwich.

1/4 cup mayonnaise
4 kaiser rolls, cut in half
12 ounces leftover sliced or shredded turkey meat
1/4 cup cranberry sauce
1 cup leftover stuffing
1/4 cup leftover gravy

Steps:

  • Preheat oven to 400 degrees F. Tear 4 sheets of aluminum foil into 12- x 12-inch squares.
  • Evenly spread mayonnaise on both sides of rolls. Layer bottom of rolls with equal amounts of turkey, cranberry sauce, stuffing, and gravy. Place tops of rolls over filling, place each on a sheet of foil, and seal tightly.
  • Bake 15 to 20 minutes, or until heated through. Serve warm.

2 cups plus 2 tablespoons milk
7 tablespoons unsalted butter, plus more for the baking dish
3 tablespoons granulated sugar
One 1/4-ounce package active dry yeast
5 cups unbleached all-purpose flour
1 tablespoon fine salt
Vegetable oil, as needed

Steps:

  • In a small saucepan, combine the milk, 3 tablespoons butter, and sugar. Place over medium-high heat and cook, stirring, until the butter has melted. Remove from the heat and cool to about 110 degrees F. Scatter the yeast over the surface of the liquid and set aside until foamy, about 10 minutes.
  • Meanwhile, in large bowl, whisk together the flour and salt and set aside.
  • Pour the milk and yeast mixture into the bowl of flour and mix until a soft, ragged mixture is formed. Transfer the flour mixture to a well-floured work surface and knead by hand until a soft, elastic dough is formed, about 10 minutes. Transfer the dough to a lightly oiled bowl, cover with a kitchen towel and place in a warm spot, until puffed and doubled in size, about 2 hours.
  • Place a rack in the center of the oven and preheat to 400 degrees F. Transfer the dough to the work surface and, using your hands, gently flatten into a disc. Divide the dough into 12 equal pieces. Using your hands, round each dough piece into a ball.
  • Butter a buttered 9 by 13 by 2-inch baking dish. Place the balls of dough, seam side-down, in 3 rows of 4 each. Cover with a kitchen towel and place in a warm spot until they've risen almost to the top of the baking dish, about 2 to 2 1/2 hours.
  • Melt the remaining 4 tablespoons butter and liberally brush the rolls with it. Bake until golden brown, about 25 minutes.
  • Remove the rolls from the oven and let cool slightly. Transfer the rolls to a cooling rack to cool completely before serving.

1 teaspoon ground cinnamon
½ teaspoon ground nutmeg
1 (15 ounce) can sweet potatoes, undrained
3 eggs
¼ cup coconut oil
½ cup chopped pecans

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 6 jumbo muffin cups or line with paper liners.
  • Soak dried cranberries in a bowl of hot water until plump, about 10 minutes; drain.
  • Combine whole wheat flour, white sugar, oat flour, baking powder, baking soda, salt, cinnamon, and nutmeg together in a bowl. Beat sweet potatoes, eggs, and coconut oil together in a separate bowl until smooth; stir into flour mixture until batter is smooth. Fold plump sweetened cranberries and pecans into batter; spoon into prepared muffin cups.
  • Bake in the preheated oven until a toothpick inserted in the center of a muffin comes out clean, 25 to 30 minutes.

This is something I created as a teenager and I always do the day after Thanksgiving, when all the leftovers are twice as good because they've sat all night and really got the chance to soak up all the flavors! I hope this becomes a post-Thanksgiving tradition at your house too.

1 slice turkey breast (a thick slice of REAL turkey breast, not that store bought stuff!)
2 -3 tablespoons cranberry sauce (or 1-2 slices of canned cranberry sauce)
2 -3 tablespoons prepared stuffing
1 hawaiian roll (Hawaiian sweet rolls, the huge ones)
2 tablespoons mayonnaise
salt and black pepper (to taste)

Steps:

  • Split the Hawaiian sweet roll (or you can use a potato bread roll which is equally delicious) and spread each side with mayonnaise to your liking (the more, the merrier for me!).
  • Take a big slice of turkey breast right off the bone and lay it down on one half of the roll. Season lightly with salt and pepper.
  • Spread stuffing on top of the turkey, then add fresh whole berry cranberry sauce/sliced canned cranberry sauce.
  • Put the top piece of bread on the sandwich and go to Thanksgiving heaven on a roll! (also tastes good hot if you microwave it for about 45 seconds on high).

1 package (1/4 ounce) active dry yeast
1-1/4 cups warm water (110° to 115°)
1 large egg, room temperature
1 tablespoon sugar
4 to 4-1/2 cups all-purpose flour
FILLING:
1/2 pound bulk pork sausage
1 small onion, chopped
1 celery rib, chopped
2 cups shredded cooked turkey
1/2 teaspoon pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon poultry seasoning
1/2 teaspoon celery salt
1/2 teaspoon dried rosemary, crushed
1 cup whole-berry cranberry sauce
2 cups shredded Swiss cheese
1 large egg, beaten

Steps:

  • In a small bowl, dissolve yeast in warm water. In a large bowl, combine egg, sugar, yeast mixture and 2 cups flour; beat on medium speed until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., In a large skillet, cook sausage, onion and celery over medium sausage is no longer pink and vegetables are tender, 8-10 minutes, breaking sausage into crumbles; drain if needed. Stir in turkey and seasonings., Punch down dough. Turn onto a lightly floured surface. Roll into an 20x12-in. rectangle. Spread cranberry sauce to within 1 in. of edges; sprinkle with cheese and top with sausage mixture. Roll up jelly-roll style, starting with a long side; pinch seam to seal. Cut into 12 slices., Place 1 in. apart on a parchment-lined baking sheet, cut side down. Cover with a kitchen towel; let rise in a warm place until almost doubled, about 35 minutes., Preheat oven to 350°. Brush rolls with beaten egg. Bake until lightly browned, 25-30 minutes.
