- Preheat the oven to 425 degrees F.
- Remove the chicken giblets. Rinse the chicken inside and out. Remove any excess fat and leftover pin feathers and pat the outside dry. Liberally salt and pepper the inside of the chicken. Stuff the cavity with the bunch of thyme, both halves of lemon, and all the garlic. Brush the outside of the chicken with the butter and sprinkle again with salt and pepper. Tie the legs together with kitchen string and tuck the wing tips under the body of the chicken. Place the onions, carrots, and fennel in a roasting pan. Toss with salt, pepper, 20 sprigs of thyme, and olive oil. Spread around the bottom of the roasting pan and place the chicken on top.
- Roast the chicken for 1 1/2 hours, or until the juices run clear when you cut between a leg and thigh. Remove the chicken and vegetables to a platter and cover with aluminum foil for about 20 minutes. Slice the chicken onto a platter and serve it with the vegetables.

- In a spice grinder or mortar, combine kosher salt, caraway seeds, sage, fennel, coriander, and rosemary. Grind to a coarse powder. Transfer spice mixture to a bowl and stir in paprika, garlic powder, flour, and onion powder; mix in vegetable oil to make a smooth paste.

I cook this every week and I always try to do something different with it. Basically what I do is carefully part the skin from the meat on the top of the chicken breast and stuff the gap with fresh, delicate herbs such as parsley, basil and marjoram, then I tie it up and roast it with some olive oil and salt.

- Preheat the oven and a roasting tray to 220ºC/425ºF/gas 7.
- Pick and finely chop the soft herbs, halve the lemon and tear the bay leaves.
- Rub inside the chicken cavity with sea salt, then carefully grab the skin at the tip of the chicken breasts, making sure that it doesn't rip, and pull up gently. With your other hand gently separate the skin from the meat of the breast - it's normally connected by a little bit of tissuey-type stuff, and you can either leave this attached in the middle and make two little tunnels either side or you can try to cut away the middle.
- Sprinkle a little salt down the gaps that you have made, push in most of the chopped herbs and drizzle in a little oil.
- Push the lemon halves into the cavity along with the bay and rosemary sprigs, then pull the skin of the chicken breast forward so that none of the flesh is exposed, tuck the little winglets under, and tie up as firmly as possible.
- Rub a little oil all over the chicken skin, scatter over the remaining chopped herbs and season very generously with salt and black pepper. Slash each thigh about 3 or 4 times to allow the heat to penetrate directly.
- Remove the hot tray from the oven and drizzle with a little oil. Put the chicken into the tray, breast-side down and leaning to one side, then place in the oven. Roast for 5 minutes, then lean it to the other side, still breast-side down. Cook for another 5 minutes, then place the chicken on its bottom and cook for 1 further hour, or until golden and cooked through - the skin should be really crispy and the herbs will flavour the meat- this really must be the best roast chicken. - Adjust oven rack to middle position.
- Place roasting pan on rack and heat oven to 475 degrees.

- In a medium sized bowl, whisk the dry ingredients together.
- Grease a baking sheet really well and set aside.
- Beat the eggs and place in a small bowl. Line up your bowls and your baking sheet in this order from right to left; egg, flour, then baking sheet. This will make sense once you start dipping, for a messy cook like me, I have to try and keep things clean once in a blue moon.
- First, dip your chicken into the flour mixture and cover it completely.
- Then go to the egg mixture, and cover it again completely, this time with egg.

- Place the chicken on the baking sheet, and repeat with all the pieces of chicken until they are all done. Now it is time to put them into the fridge and let them sit for 30 minutes. DO NOT skip this part, it helps the layers adhere to not only the chicken, but themselves. And make sure you let the chicken sit in the fridge, in the cold.
- After the 30 minutes, melt the margarine and pour over the chicken pieces.
- Preheat the oven to 400°F.
- Bake the chicken for 40-45 minutes until the breast meat reaches 165 °F and the thigh meat is 180 °F.
- Remove and serve!

- Place a rack in lower third of oven; preheat to 450°F. Place a 12" cast-iron or stainless-steel skillet in oven.
- Pull off excess fat around cavities of chicken; discard. Using paper towels, thoroughly pat dry chicken inside and out. Arrange chicken breast side up on a cutting board. Gently loosen skin covering breasts and thighs. Tuck 4 thyme sprigs under loosened skin, 1 sprig for each breast and thigh.
- Combine 1 Tbsp. plus 1 tsp. salt and 1/2 tsp. pepper in a small bowl. Pat dry cutting board and chicken again, then tie legs together with kitchen twine.
- Using a metal skewer or paring knife, poke 20-30 holes all over chicken, paying special attention to fatty (thickest) parts of skin. Season chicken with salt mixture, placing a pinch inside cavity, but primarily covering outside of bird.
- Cut remaining thyme sprig crosswise into 3-4 pieces and place in a large bowl. Add potatoes, onions, oil, 1/2 tsp. salt, and a generous pinch of pepper. Toss to combine.
- Carefully remove skillet from oven. Transfer potato mixture to skillet (mixture will sizzle), then place chicken, breast side up, on potato mixture. Return skillet to oven (remember, handle is hot!). Roast until an instant-read thermometer inserted into thickest part of breast registers 160°F and thickest part of thigh registers 175°F, 45-55 minutes.
- Remove skillet from oven. Using tongs or a large wooden spoon inserted into cavity, transfer chicken to a large plate. Give potato mixture a stir, then return to oven. Let chicken rest about 5 minutes.
- Using a sharp knife, slash stretched skin between thighs and breasts to let steam escape. Carefully tilt bird and plate over a large bowl to drain juices; reserve juices. Let chicken rest until potatoes are fork-tender, 15-25 minutes more.
- Tilt chicken and plate again over bowl with juices to drain any last bits, then transfer chicken to a cutting board and carve. (If juices have cooled and congealed, gently rewarm over low heat or for 10 seconds in the microwave.)
- Arrange chicken on a platter. Serve with roasted potatoes and onions alongside, spooning juices over.
- Cooks' Note: If time allows, after patting dry and salting chicken, place on a wire rack set in a rimmed baking sheet, or on a V-rack set in a roasting pan, and chill, uncovered, at least 12 hours or up to 2 days. This 'dry brine' will result in a flavorful juicy chicken with even crispier skin.

- Place a wire rack on top of a rimmed baking sheet. Liberally sprinkle salt all over the outside of the chicken. Cover the chicken loosely with parchment paper and refrigerate overnight (about 24 hours).
- Preheat oven to 500° F. Let the chicken sit on the counter and come to room temperature for about 30 minutes before roasting.

- Assess your bird. Sure, a three-pound chicken is on the smaller side. But size ain't everything, particularly when we're talking about those ridiculous 6-pound robofrankenchickens you sometimes see at the grocery.
- Unwrap the chicken and pat it dry with paper towels. (Ideally, do this next part the night before. If you forget or don't have time, you can do this the morning of, or at least a couple of hours ahead of time.
- To save more cooking time, butterfly your bird. This is also known as "spatchcock"ing your chicken. This all sounds way harder than it actually is. (There are 28 million examples of how to do this on YouTube, if you're a visual learner.
- Season both sides of the chicken liberally. Like, democratic socialist from Vermont liberal. I probably use close to a tablespoon of kosher salt on each side of the chicken, and maybe half as much black pepper and garlic powder.
- Clear out some space in your fridge. Throw away that barely-used jar of jelly that's been in there for a year. Same with the Vitaminwater with one sip left.
- CLEAN EVERYTHING. WASH YOUR HANDS A DOZEN TIMES. WIPE DOWN YOUR COUNTERS WITH CLOROX WIPES. SCRUB ANYTHING THAT GOT RAW CHICKEN ON IT. PUT YOUR KITCHEN SPONGE IN THE DISHWASHER AND RUN IT.
- A day later, when it's time to cook, take the chicken out of the fridge. It should look different. Depending on how long you let it chill out, the color will have deepened, the skin will have tightened up a bit, and if you touch the skin, it will feel a little gummy.
- Turn on your oven to 400 and put a rack near the top. The temperature at which you roast your chicken is not concrete. I find 400 to be the magic number: hot enough to give you crispy skin and cook the meat quickly; not so hot that the skin burns or the oven gets smoky.
- When your oven hits 400, put the chicken in a skillet, skin side up, and throw it in the oven. Set the timer on your phone for 40 minutes, and then go listen to this week's Big '80s on 8 countdown on SiriusXM while lurking people you wanted to date in high school on Facebook.

- Place the chicken breast side down on a work surface and use a sharp knife to make 4 1-inch incisions along the chicken’s back. (This creates openings for the fat to escape.) With your fingers, separate skin from thighs and breasts. Use a metal skewer to poke 15 to 20 holes in the fat deposits on top of breasts and thighs. Tuck wing tips under chicken.
- In a small bowl combine salt, baking powder, and pepper. Pat chicken dry with paper towels and sprinkle all over with salt mixture. Use your hands to coat the surface. Set chicken breast side up on a baking sheet and place in refrigerator for 12 to 24 hours.
- Put oven rack in lowest position and heat oven to 450 degrees. Poke approximately 20 holes in a 16 by 12- inch piece of aluminum foil and place loosely in the bottom of a large roasting pan. (The aluminum foil is supposed to keep the drippings from burning.) Place a V-rack on top of foil and place chicken breast side down on top of V-rack. Roast for 25 minutes.
- Remove pan from oven and carefully turn chicken breast side up. Continue to roast for 15 to 25 minutes.
