SALLY'S WEST COAST CHILI
We often have chili cook-offs at our church, so we trade lots of different recipes. I was always mixing and matching ingredients and experimenting, trying to come up with an original recipe that would be a little different. Steps:
- In a Dutch oven, cook bacon until crisp; remove to paper towels to drain. Reserve 3 tablespoons drippings. , Brown beef in drippings. Add onions; cook until tender. Add garlic; cook 1 minute longer. Return bacon to pan. Stir in the next 12 ingredients. , Bring to a boil. Reduce heat; cover and simmer until meat is tender, about 3 hours. , Add beans and heat through. Discard bay leaf. Garnish with cheddar cheese.

- In a large saucepan over medium heat, brown bacon and the beef or venison; drain. Add the seasonings; cook and stir for 5 minutes. Stir in tomatoes, celery, onion, carrots and green pepper; bring to a boil. Reduce heat; cover and simmer for 40 minutes. Stir in beans; cook 30 minutes longer.

CANADIAN CHILI RECIPE
I'm a chili fan, and over umpteen years of making the stuff, this is my present method. I've posted it in my "Camping" thread, but thought it should get shown on the Board as well, in order that a wider group should have access to it. Chili is what you want to make it, but this stuff tastes pretty good, has both Mexican and American influences, but is a simple thing to make for dinner after getting home from work; mind it does taste better the next day, also freezes well!

Steps:
- Melt fat, and brown meat, preserving the drippings in the pan and maintaining temperature at medium heat.
- Add onion and garlic, allowing onion to wilt somewhat.
- Add tomato sauce and tomato paste, mix well.
- Add seasonings, jalapenos and kidney beans, mix well.
- Add celery and allow celery to get to medium cooked texture.
- Add bell pepper pieces, and cook until only slightly crisp in texture.
- Serve with sourdough bread and crispy refridgerator dills.
- Enjoy!

Steps:
- Put the chicken stock base, broth, and beans in a large pot (I like my Crock Pot).
- Simmer it for two hours, covered.
- Saute the onions in the oil until they are gently browned.
- Combine the onions with the spices, chicken, and other vegetables, and simmer for another hour or so.
- Add the cheese and sour cream, cooking until the cheese melts in the chili.
- You might want to serve the chili with more sour cream, green onions, diced tomatoes, salsa, cilantro, or cheese.
- The recipe serves about four people, but I always double it, because it tastes even better the second day.
- If you don't use fresh cilantro, you might want to double the amount you use.
- Also, I have found the garlic to be low, but you can tell by my name that I love to cook with garlic.
- It was also great to substitute some of the chicken broth with beer (preferably Mexican), if you add a few shots of tequila for added ummph!

- Heat oil in 6-quart stock pot. Stir fry pork cubes 7 minutes on high heat. Add onion; stir fry 5 minutes.
- Stir in remaining ingredients except sour cream and cilantro. Bring to a boil over medium-high heat; boil 15 minutes. Reduce heat and simmer 30 minutes, stirring occasionally.
- Remove chili from heat. Stir in sour cream and cilantro just before serving.
