TILAPIA FILLETS IN BOURSIN SAUCE

This is a real treat for fish lovers.

- 2 tbsp. butter
- 4 boneless skinless tilapia filets
- 1/2 cup flour, seasoned with salt and pepper
- 1 tbsp. chopped fresh shallots
- 1/4 cup dry white wine
- 1/4 cup heavy cream
- 2 tbsp. boursin cheese
- 1 tbsp chopped fresh parsley

Steps:

  • Melt butter in large sauté pan over medium heat. Dredge fillets in seasoned flour and sauté on first side for 4 minutes or until browned. Turn and cook for another 3 minutes or until fillets flake evenly with a fork. Put fillets on plate and hold in a warm oven. Add shallots and wine to sauté pan and cook for 2 minutes, or until volume of liquid is reduce by half. Add cream, bring sauce to a boil and turn off heat. Using a wire whisk, stir in Boursin until melted. Put warm fillets on plates, spoon sauce over each and garnish with parsley. Makes 4 servings. Cooking the Costco Way

This dish is quick, easy, and even better, it's healthy! Served on a bed of rice with the sauce arranged artistically around the plate, it looks absolutely stunning.

4 (4 ounce) fillets tilapia
butter flavored cooking spray
4 teaspoons margarine, melted
2 tablespoons lemon juice
2 tablespoons chopped fresh dill weed
1 tablespoon lemon-pepper seasoning
4 teaspoons cream cheese
5 tablespoons lemon juice, or to taste
2 tablespoons chopped fresh dill weed

Steps:

  • Preheat the oven to 375 degrees F (175 degrees C).
  • Grease a baking sheet with cooking spray. Place the tilapia fillets on the sheet, and coat them lightly with cooking spray. Spoon the melted margarine over each fillet, then drizzle with 2 tablespoons of lemon juice. Season with lemon pepper and 2 tablespoons of dill.
  • Bake for 15 minutes in the preheated oven, or until the fish is opaque and flakes easily.
  • While the fish is baking, combine the cream cheese, 5 tablespoons of lemon juice and 2 tablespoons of dill in a small bowl. Heat in the microwave for 1 minute and 10 seconds, then stir to blend.
  • Place fillets onto serving plates, and spoon sauce around them in a decorative fashion.

2 tablespoons butter
4 tilapia fillets
1/2 cup flour, seasoned with
salt and pepper
1 tablespoon shallot, chopped
1/4 cup dry white wine
1/4 cup heavy cream
2 tablespoons boursin cheese
1 tablespoon parsley, chopped

Steps:

  • Melt butter in a large saute pan over medium heat.
  • Dredge fillets in the seasoned flour and saute on the first side for 4 minutes, or until browned.
  • Turn and cook for an additional 3 minutes, or until fillets flake easily with a fork, place fillets on a plate and hold in a warm oven.
  • Add shallots and wine to the saute pan and cook for 2 minutes, or until the volume of liquis is reduced by half.
  • Add cream and bring the sauce to a boil and turn off the heat, using a wire whisk stire in Boursin until melted.
  • Place the warm fillets on plates, spoon some sauce over each and garnish with parsley.

1/8 teaspoon salt
1/8 teaspoon pepper
Dash garlic powder

Steps:

  • Preheat oven to 425°. Place tilapia in a greased 11x7-in. baking dish; drizzle with butter. In a small bowl, mix remaining ingredients; sprinkle over fillets., Bake, covered, 10 minutes. Uncover; bake until fish just begins to flake easily with a fork, 5-8 minutes.

4 tilapia fillets
3 tablespoons olive oil
sea salt in moderation and pepper
1 large fennel, heart finely chopped
1 small yellow onion, chopped
2 large tomatoes, peeled, seeded and coarsely chopped
100 ml chicken broth
2 tablespoons capers
1 tablespoon dried oregano or 1 tablespoon blend mixed Italian herbs

Steps:

  • In a saucepan, heat 2 tablespoon of oil and cook fennel and onion for about 1 minute. Add tomatoes and simmer for 4 minutes.
  • Add broth, capers, oregano or italian herbs and cook for 3 to 4 minutes longer.
  • Heat remaining oil in a skillet or on a grill. Cook tilapia fillets for 2 to 3 minutes per side. Season to taste with fennel and caper sauce.
