TOASTED COCONUT CREAM CAKE

A rich, moist, and delicious cake that tastes even better the next day!

2 cups flaked sweetened coconut
1 (3.5 ounce) package instant coconut cream pudding mix
1 (14 ounce) can coconut milk
1 (18.25 ounce) package white cake mix
1 cup vanilla yogurt
¼ cup vegetable oil
3 eggs
½ cup flaked sweetened coconut
1 (8 ounce) package cream cheese, at room temperature
1 cup confectioners' sugar, or to taste
2 tablespoons milk
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray 2 9-inch round cake pans with cooking spray, and set aside.
  • Spread 2 cups of flaked coconut onto a baking sheet, and toast in the preheated oven, stirring often, until lightly browned and fragrant, 8 to 10 minutes. Set the toasted coconut aside.
  • Place the pudding mix and coconut milk in the work bowl of an electric mixer, and mix on Low speed until thoroughly combined, about 1 minute. Add the cake mix, yogurt, vegetable oil, eggs, and remaining 1/2 cup flaked coconut and mix on Medium speed until the batter is smooth, about 2 minutes. Pour the batter into the prepared cake pans, smoothing the top with a spatula if necessary.
  • Bake in the oven until the top is lightly browned and the cake springs back when pressed gently, about 40 minutes. Let the cakes cool in the pans for 20 minutes before removing to a wire rack to finish cooling.
  • To make frosting, place the cream cheese into the work bowl of an electric mixer and beat on Low speed until the cream cheese is softened, about 30 seconds. Beat in the confectioners' sugar, milk, and vanilla extract, and beat on Medium speed until the frosting is thick and fluffy, about 2 minutes.
  • Spread the cream cheese frosting over the top of one of cooled cake rounds, place the second cake round on top of the frosted round and spread the remaining frosting evenly over the layered cake. Press the toasted coconut gently into the top and sides of the cake.

2 ounces Bacardi "Rock Coconut" rum or plain white rum
4 ounces Malibu Coconut rum
3 ounces whipped cream vodka
2 ounces coconut cream
2 ounces pineapple juice
Drizzle of Godiva white chocolate liqueur
Toasted coconut
Honey

Steps:

  • To toast the coconut, I just put a big handful into a round cake pan and popped it into the oven under the broiler a few minutes. You do have to keep and eye on it, and move it around every couple of minutes. Do NOT turn your back on it... it will burn in a heartbeat if you aren't paying it any attention! Then, to rim the glasses, I ran a bead of honey all around the rim, then inverted the honey rimmed glass down into toasted coconut firmly. Into a martini shaker, mix together the alcohols, cream of coconut, and pineapple juice. Add ice and shake for a minute or so until cold. Strain the drink out into toasted coconut-rimmed martini glasses. Drizzle some of the Godiva white chocolate liqueur over the top and garnish with a bit more toasted coconut if you'd like.

3 cups unsweetened flaked coconut
2 cups white sugar
6 eggs
8 ounces cream of coconut
1 quart half-and-half
1 tablespoon vanilla extract
1 cup flaked coconut
½ cup whole milk, or as needed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spread 3 cups flaked coconut onto a baking sheet.
  • Bake coconut in the preheated oven, turning once, until toasted, 6 to 10 minutes. Cool completely.
  • Beat sugar and eggs together in a bowl until light and frothy; add cream of coconut and beat well. Add half-and-half and vanilla extract into egg mixture, beating well after each addition. Stir toasted coconut and flaked coconut into half-and-half mixture.
  • Pour coconut mixture into the bowl of an ice-cream maker. Pour milk into coconut mixture to fill machine to the fill-line, if necessary. Freeze according to the manufacturer's instructions.

¾ cup shredded unsweetened coconut
2 cups all-purpose flour, sifted
¾ teaspoon baking powder
¼ teaspoon baking soda
1 pinch salt
3 large eggs
1 ¾ cups white sugar
1 ¾ cups whole milk
1 cup extra-virgin olive oil
5 tablespoons lemon zest
5 tablespoons lemon juice
1 teaspoon vanilla extract

Steps:

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan. Spread coconut on a baking sheet.
  • Bake in the preheated oven until lightly toasted, about 5 minutes. Remove and let cool while you prepare the cake. Leave the oven on.
  • Combine flour, baking powder, baking soda, and salt in a large bowl.
  • Whisk eggs and sugar together in another large bowl until very well combined. Stir in milk, oil, lemon zest, lemon juice, and vanilla extract; mix until well combined. Fold in dry ingredients and add coconut. Pour into the prepared pan.

Coconut Crusted Stuffed French Toast image

6 1.5 inch thick slices of French Bread
2 large eggs
1/2 tsp vanilla
1 tbs cream of coconut
1 tsp sugar
4 oz cream cheese (softened)
1 tbs cream of coconut
1 1/2 cup of coconut flakes
1 tbs vegetable oil for cooking

Steps:

  • Preheat a saute pan on medium heat.
  • Slice the French bread slices in the middle but not all the way through.
  • In a small bowl, mix cream cheese and 1 tbs of cream of coconut until well combined.
  • Place coconut flakes in another shallow, wide bowl.
  • In a shallow, wide bowl, whisk eggs, 1 tbs of cream of coconut, vanilla and sugar until smooth.
  • Spread the cream cheese mixture in the middle of the bread slices.
  • Dip the bread in egg mixture and then into coconut flakes. Press the flakes lightly.
  • Cook the French toast on medium heat for about 3-5 minutes on each side. (If the coconut is toasting too fast, you may need to lower the heat a little bit.)
