The best part of this recipe is that it is easier to make than risotto, and taste even better the next day. This one is for the books!

1 tbsp olive oil
4-5 spring onions ( or half a large yellow onion)
3 cloves of garlic
¼ tbsp. cumin powder
½ cup quinoa
3 cups vegetable broth or water
2 cups canned tomatoes
2 tomatoes
1 cup white beans (optional)
2-3 inch rind of Parmegiano Reggiano
½ cup arugula
Parmegiano Reggiano to taste (optional

Steps:

  • Place a large pot over high heat. Pour olive oil and place quartered spring onions into the pot. Add a generous pinch of salt and cumin powder. Cook over medium heat until onions become translucent. Add garlic and cook for 2-3 minutes. Stir in quinoa and toast for 2 minutes. Add broth. Bring to a boil, then reduce heat to low, cover, and cook for 20 minutes.
  • Add the canned tomatoes, white beans, and if you have save the rind of Parmeggiano Reggiano, add that too. Simmer for another 10-15 minutes. When ready to serve, add arugula and fresh tomatoes. Pour about ¾ of a cup into each serving plate drizzle with olive oil, sprinkle with ground black pepper, and shaved Parmegiano Reggiano. Devour!

3 pounds tomatoes, peeled and seeded
1 cup creme fraiche (if kosher, 1 cup of unflavored soy milk or chicken broth)
1 cup basil leaves, julienned
1 tablespoon unsalted butter
1 medium shallot, minced
2 cups quinoa, rinsed and drained
1 teaspoon kosher salt

Steps:

  • In a food processor, puree the tomatoes and creme fraiche. Transfer to a mixing bowl and use a wooden spoon to beat in all but 2 tablespoons of the basil. Reserve the remaining basil for garnish.
  • Melt the butter in a large saute pan over medium heat and saute the shallot until softened, about 2 minutes. Add quinoa and salt and cook, stirring, 2 minutes.
  • Add 1/2 cup of the tomato puree at a time to the pan, stirring until the liquid is absorbed. Continue adding the puree until 6 cups have been added.
  • Place the quinoa in a serving dish and drizzle the remaining tomato puree around the edge of the bowl. Garnish with the remaining basil.

  • Preheat the oven to 375°. In a saucepan, bring the quinoa with 2 1/2 cups of water and a large pinch of salt to a boil. Cover and cook over low heat until the water is absorbed and the quinoa is tender, 20 minutes. Let stand covered for 15 minutes, then fluff with a fork.
  • Meanwhile, in a bowl, mix the panko with 2 tablespoons of the olive oil, 1/2 teaspoon of the rosemary, half of the garlic and a generous pinch each of salt and pepper. Arrange the tomatoes cut side up on a rimmed baking sheet and top with the panko. Bake for 25 minutes, until the crumbs are lightly browned and the tomatoes are softened; keep warm.
  • Peel the lemon with a sharp knife, being sure to remove all of the bitter white pith. Working over a bowl, cut in between the membranes to release the sections. Cut the lemon sections into 1/4-inch pieces.
  • In a medium saucepan, heat the remaining 1/4 cup of olive oil until shimmering. Add the shallot and remaining garlic and cook over moderate heat, stirring, until softened, about 4 minutes. Add the remaining 1 teaspoon of rosemary and cook for 1 minute.
