Oh yummm, this fresh salsa is so good. Remember, the green chile peppers vary in heat, so use discretion.

2 large tomatoes
2 tablespoons chopped red onions
3 tablespoons chopped celery (*I use celery seed for a more mild flavor)
3 tablespoons chopped green peppers
2 tablespoons chopped green chili peppers
1/2 teaspoon mustard seeds
1 tablespoon red wine vinegar
1 tablespoon chopped parsley or 1 tablespoon cilantro (**I recommend that you use cilantro.)
1/2 teaspoon salt
1 dash black pepper
2 tablespoons oil

Steps:

  • In a medium size bowl, combine the tomatoes, onion, celery, green pepper, chile peppers, mustard seed, parsley or cilantro, vinegar, salt and pepper.
  • Stir in oil.
  • Refrigerate and allow flavors to blend for a few hours before serving.

2 celery ribs, chopped
1 medium tomato, diced
1 small onion, chopped
1 medium carrot, chopped

1 can (14-1/2 ounces) diced tomatoes, drained
1/2 cup water
1/2 cup tomato sauce
1/3 cup tomato paste
3 garlic cloves, minced
1 tablespoon lemon juice
1/4 teaspoon pepper
Tortilla chips

Steps:

  • In a bowl, combine the first seven ingredients. In another bowl, combine the water, tomato sauce, tomato paste, garlic, lemon juice and pepper; stir into the vegetable mixture. Serve with chips. Refrigerate leftovers.

This recipe can be prepared in 45 minutes or less. We loved this refreshing condiment teamed with lean beef and with grilled shrimp.

Yield Makes about 3 cups

Number Of Ingredients 5

1 pound fresh tomatillos
4 celery ribs
1 cup packed fresh cilantro sprigs
6 radishes
1 tablespoon fresh lemon juice

Steps:

  • Remove husks from and rinse tomatillos under warm water to remove stickiness. Pat tomatillos dry and cut about three fourths into 1/4-inch dice. In a blender or food processor puree remaining tomatillos until smooth. Cut celery into 1/4-inch dice and finely chop cilantro. Slice radishes and cut into julienne strips. In a bowl toss together all ingredients and season with salt. Salsa may be made 1 hour ahead and chilled, covered.

10-1/2 pounds tomatoes (about 35 medium), peeled and quartered
4 medium green peppers, chopped
3 large onions, chopped
2 cans (12 ounces each) tomato paste
1-3/4 cups white vinegar
1/2 cup sugar
1 medium sweet red pepper, chopped
1 celery rib, chopped
15 garlic cloves, minced
4 to 5 jalapeno peppers, seeded and chopped
1/4 cup canning salt
1/4 to 1/2 teaspoon hot pepper sauce

Steps:

  • In a large stockpot, cook tomatoes, uncovered, over medium heat 20 minutes. Drain, reserving 2 cups liquid. Return tomatoes to the pot. , Stir in green peppers, onions, tomato paste, vinegar, sugar, red pepper, celery, garlic, jalapenos, canning salt, hot pepper sauce and reserved tomato liquid. Bring to a boil. Reduce heat; simmer, uncovered, 1 hour, stirring frequently., Ladle hot mixture into 10 hot 1-pint jars, leaving 1/2-in. headspace. Remove air bubbles and adjust headspace, if necessary, by adding hot mixture. Wipe rims. Center lids on jars; screw on bands until fingertip tight. , Place jars into canner with simmering water, ensuring that they are completely covered with water. Bring to a boil; process for 20 minutes. Remove jars and cool.
