Roasted Garlic Bread & Tomato Dip

1 head of garlic
2 Tbsp. olive oil
salt and pepper, to taste
8 oz. unsalted butter, softened
1 packet Hidden Valley® Original Ranch ® Buffalo Dressing
8 oz. marinara sauce
1 baguette

Steps:

  • Preheat oven to 400°F.
  • Cut the top off the garlic head to reveal cloves. Place cut bulb in the center of a piece of aluminum foil and drizzle with olive oil and salt. Bring edges of foil together to encapsulate garlic. Place in the oven and cook for 30 minutes or until garlic cloves are very soft. Allow garlic to cool before squeezing out roasted garlic cloves. Set aside.
  • Mix together the softened butter, roasted garlic and half of the Hidden Valley® Original Ranch® Dips Mix. Spread the butter mixture onto the sliced baguette and place on a baking sheet. Bake for 20 minutes or until golden and crispy. Remove from oven and slice into 2-inch thick pieces.
  • Meanwhile, stir together the marinara and remaining Hidden Valley® Original Ranch® Dips Mix. Heat over low or microwave until warm.
  • Serve roasted garlic bread with the seasoned tomato dip.

Steps:

  • In a small bowl, beat cream cheese and mayonnaise until smooth. Stir in the tomato, bacon, basil and pepper. Cover and refrigerate for 1 hour., Cut a 1-1/2-in. thick slice off the top of bread; set aside. Carefully hollow out loaf, leaving a 1/2-in. shell. Cut removed bread into cubes. Fill bread shell with dip. Serve with bread cubes and crackers.

Tomato dip prepared with this recipe has tangy and spicy taste and can be served as accompaniment with snacks like nachos, tortilla, chips, finger chips, etc. or as relish. In this recipe, first tomatoes are sauteed with spices in olive oil and then pureed into smooth paste using blender. The garlic, onion, cilantro and adds their own nuances giving it a nice complex flavor.

1 Onion, finely chopped
2-3 Garlic cloves, finely chopped
1 Green Chilli, finely chopped
1 Dry Bay Leaf
1/2 teaspoon Red Chilli Flakes
1 teaspoon Black Pepper Powder
2 tablespoons Tomato Ketchup
2 teaspoons Cilantro, finely chopped
2 tablespoons Olive Oil
Salt

Steps:

  • Directions:Heat 2 tablespoons olive oil in a frying pan on low flame.Add chopped onion and sauté until onion becomes translucent or for around 1-2 minutes.Add chopped garlic, chopped green chillies and dry bay leaf, sauté for a minute or less.Add chopped tomatoes, red chilli flakes and salt, stir thoroughly and cook on low flame until tomatoes become soft, approx 8-10 minutes. Stir in between occasionally.Discard bay leaf from prepared mixture and transfer to blender or food processor jar. Add black pepper powder, cilantro and tomato ketchup, blend all ingredients together until smooth paste.Tangy tomato dip is ready, transfer it to a serving bowl, garnish with a cream and cilantro and serve.

This recipe was given to me by my Italian FIL. I don't measure when I make this, I just eyeball it. So if you wish to make any adjustments to the amounts, feel free. Eat it with a crusty or toasted Italian bread. It is yummy! Entered for the Zaar World Tour 2005.

1 tablespoon italian seasoning

  • Mix all of the ingredients together. Cover and let them meld in the refrigerator overnight. Shake the container occasionally to mix a little.
  • This can be eaten right away if you wish, but it does taste better if it marinates for a while before you eat it.

¼ cup sun-dried tomatoes in oil, drained and chopped
8 ounces cream cheese, at room temperature*
½ cup sour cream
½ cup mayonnaise, best quality such as Hellmann's
10 dashes Tabasco sauce
1 teaspoon kosher salt
¾ teaspoon freshly ground black pepper
2 scallions, thinly sliced (white and green parts), plus a bit more for garnishing if desired

Steps:

  • Place the tomatoes, cream cheese, sour cream, mayonnaise, Tabasco sauce, salt and pepper in a food processor fitted with a metal blade. Blitz to blend well. Add the scallions and pulse twice. Cover and refrigerate until ready to serve. Let dip come to room temperature, garnish with sliced scallions if desired, then serve with flat bread, fresh vegetables, crackers, chips or all of the above.
  • *It is important that the cream cheese be room temperature so there are no lumps.

MOROCCAN ZAALOUK RECIPE

To make this popular Moroccan side or salad, fresh tomatoes and eggplants are seasoned with a robust quantity of herbs, garlic, olive oil, and spices then cooked to a dip-like consistency.Roasting the eggplants is optional but recommended for a layer of smoky flavor. It's my preferred method.Don't worry about exact measures when making zaalouk. The ratio of tomatoes to eggplant can be adjusted according to what you have on hand or what you prefer in terms of flavor. Seasoning is also very flexible and more or less olive oil is also fine.Zaalouk is traditionally enjoyed as a dip with Moroccan bread (khobz). If you prefer to eat with a fork or want to make enough to have leftovers for another meal, you may want to increase the recipe by half. Serve zaalouk warm, cold, or at room temperature.

2 large eggplants (or 3 medium)
2 medium or large tomatoes (or more to taste)
6 cloves garlic, pressed or finely chopped (or to taste)
2 tablespoons chopped fresh parsley (approx.)
2 tablespoons chopped fresh cilantro (approx.)
1 teaspoon salt (or to taste)
2 teaspoons paprika (or to taste)
2 teaspoons cumin (or to taste)
4 tablespoons olive oil (approx.; no need to measure)
cayenne pepper or whole chili peppers (optional; to taste)
lemon juice or small wedge of lemon (optional; to taste)
chopped parsley or cilantro (optional; for garnish)
olive oil (optional; to drizzle on top as garnish)

Steps:

  • Trim the stems from the eggplants and cut them in half lengthwise. Arrange the eggplant halves skin side up on a baking sheet lined with aluminum foil and place under the broiler as close to the flame or heating element as possible.
  • Roast the eggplants for about 20 to 25 minutes, or until the skins are charred and puckered with sections that crumble or crack like burnt paper when pressed. The flesh will be very soft.
  • While the eggplant is roasting, peel, seed, and chop the tomatoes.
  • Transfer the chopped tomatoes to a skillet along with the olive oil, garlic, parsley, cilantro, and spices. The optional cayenne and whole chili peppers can be added at this time as well.
  • Cook the tomato mixture over medium heat, stirring frequently, until the tomatoes break down and a rich tomato sauce forms. This usually takes 10 to 20 minutes, depending on how soft the tomatoes were and how many you used.
  • When the eggplants are roasted, remove them from the oven. When cool enough to handle, use a large spoon to scoop the flesh from the skin. Discard the skin.
  • Add the eggplant flesh to the tomato mixture, stirring to combine. Use the back of a spoon or a fork to mash any firm bits of eggplant. If you want to add the optional lemon juice or a very small wedge of lemon, you can do so at this time.
  • Cook the zaalouk for five to ten minutes to allow the flavors to blend, or longer if you want to reduce the salad to a drier, pastier consistency. Taste and adjust seasoning then remove from the heat.
  • Peel, seed, and chop the tomatoes. Place them in a large deep skillet or large pot along with the olive oil, spices, garlic, and herbs. Stir to combine.
  • Trim the stems from the eggplants and peel them. Some strips of skin can be left intact if you like a colorful zaalouk.Finely chop the peeled eggplants and add them to the skillet or pot along with 1/4 to 1/3 cup of water. If your pan is quite full, don't worry about stirring the eggplant into the tomato mixture just yet.
  • Cover and cook the tomato mixture and eggplants over medium heat for about 10 to 15 minutes, or until the chopped eggplant has begun to soften and reduce in volume.
  • Stir to combine all the ingredients well. Add the optional chili peppers or cayenne, if using, and a little more water if you found that the ingredients were sticking to the bottom of the pan.
  • Cover and continue cooking for another 15 to 20 minutes, or until the eggplant and tomatoes are soft enough to mash.
  • At this point, you can add the optional lemon juice or lemon wedge if using.Continue cooking the zaalouk uncovered to reduce the liquids, scraping the bottom of the pan and stirring frequently. Adjust the heat if necessary to avoid burning the zaalouk.If you want a puree-like consistency, mash the eggplants and tomatoes while the liquids reduce. If you prefer a chunky texture, stir without mashing.
  • When the zaalouk has reduced to a consistency you like, taste and adjust seasoning then remove from the heat.
  • Zaalouk can be served warm, cold, or at room temperature. Garnish as desired with fresh parsley or cilantro and/or a drizzle of good olive oil.
  • Zaalouk will keep for several days in the fridge or two to three months in the freezer.If freezing, allow the zaalouk to thaw before reheating in a pan. Reduce any excess liquids and adjust the seasoning if needed.

Panzanella is a classic tomato and bread salad from Tuscany. Bursting with ripe tomatoes, cucumber and basil, it's hard to think of a salad that screams "summer" any louder. Chunks of lightly toasted bread meanwhile bring delicious texture and some heft to the salad, making it filling enough for lunch or a light meal.Be warned, this salad demands the very best tomatoes! If you don't have juicy tomatoes, don't make this. Make another salad instead!And though some Italians may tell you toasting bread is not the traditional way to make Panzanella, don't skip it. That is, unless you WANT unidentifiable white mush in your bowl within minutes of making this!

4 - 5 cups (loosely packed) stale bread (, torn into 2.5cm/1" chunks (~180g/6 oz, depending on bread used))
1 tbsp extra virgin olive oil

2 Lebanese cucumbers ((or 1 long telegraph/English cucumber), peeled (optional) (Note 3))
1 cup basil leaves (, loosely packed)

1 tsp Dijon mustard
8 tbsp extra virgin olive oil (, the best you can afford)

Steps:

  • Preheat oven to 180°C /350°F (160°C fan).
  • Toss bread chunks with 1 tbsp olive oil in a bowl.
  • Toast: Spread bread on a a tray and toast for about 15 minutes, until the outside is becoming golden and crunchy but the inside is still a little soft, like toast. Remove and leave to cool.
  • Cut tomato into 8 wedges each. Cut some of these wedges into half (I like irregular shapes for this rustic salad).
  • Sweat tomato with salt: Put tomatoes into a colander over a large bowl. Season with the salt, toss and set aside for 10 minutes to draw out the juices. RESERVE the tomato juice in the bowl for the dressing.
  • Cut cucumber into any shaped chunks aroun 2.5cm / 1" pieces. Again, I like to do irregular but even-sized shapes.
  • Toss veg: Place tomato sweating in colander into large bowl. Add cucumber and basil, toss gently.
  • Tomato Dressing: Add Dressing ingredients into bowl holding the tomato juice, whisk well.
  • Dress salad: Add bread to salad, pour over dressing. Give it a light toss.
  • Rest then serve: Leave for 5 minutes to let the juices soak into the bread, tossing once or twice. Toss once more just before serving!
