Fried Green Tomato Salad with Balsamic Vinaigrette Dressing image

Provided by Food Network

Time 35m

Yield 4 servings

Number Of Ingredients 18

Coconut oil, for frying
1 1/2 cups cornmeal
1 teaspoon paprika
1/2 teaspoon cayenne
1 teaspoon salt, plus more for seasoning
1/2 teaspoon ground pepper, plus more for seasoning
3 eggs, beaten
1 cup all-purpose flour
2 green tomatoes, sliced
2 tablespoons balsamic vinegar
1 tablespoon honey
1 tablespoon Dijon mustard
Pinch salt and ground pepper
1/4 cup olive oil
1 pound mixed greens
1/2 cup crumbled feta cheese
1/4 cup slivered almonds
2 peaches, pitted and thinly sliced

Steps:

  • For the fried green tomatoes: Preheat the frying oil to 350 degrees F in a heavy-bottomed pot over medium to medium-high heat.
  • In a shallow dish, combine the cornmeal, paprika, cayenne, salt and pepper and whisk together. In second shallow dish add the eggs, and in a third shallow dish add the flour. Dredge the slices of tomato into the flour, then the eggs and then the seasoned cornmeal. Add the breaded tomatoes to the oil, in batches if necessary, and fry until golden brown on each side, about 3 minutes. Remove and drain on paper towels. Season with salt and pepper.
  • For the dressing: Whisk the vinegar, honey, mustard, salt and pepper in a bowl. Drizzle in the oil until emulsified.
  • To assemble the salad: In a salad bowl, add the greens, feta cheese, almonds and peaches. Top with the balsamic vinaigrette dressing and mix together. Plate the salad and top with fried green tomatoes.

ROASTED TOMATO BALSAMIC VINAIGRETTE

Roasted Tomato Balsamic Vinaigrette image

I once worked with a chef who made an amazingly delicious roasted tomato vinaigrette. He would roast a whole pan of Roma tomatoes until the sugars and acids would condense and caramelize and concentrate into a delicious mass. I thought I could duplicate it by using a really good, double-concentrate tomato paste and nicely aged balsamic vinegar. It worked.

10-MINUTE TOMATO SALAD

10-Minute Tomato Salad image

I love tomato salads in the summer, and this quick version with olive oil and balsamic vinegar is one of my favorites.

Provided by Vered DeLeeuw

Categories     Salad

Time 20m

Number Of Ingredients 8

1 pint firm cherry tomatoes (halved (2 cups; can sub chopped tomatoes))
1/4 cup chopped green onions (green parts only)
2 tablespoons extra virgin olive oil
1 teaspoon balsamic vinegar
1 teaspoon Dijon mustard
1 tablespoon orange zest ((from 1 orange))
1/2 teaspoon Diamond Crystal kosher salt
1/4 teaspoon black pepper

Steps:

  • In a serving bowl, combine the tomatoes and the green onions.
  • In a small bowl, whisk together the dressing ingredients until they emulsify into a thick, velvety dressing. If the dressing seems too thick, add a teaspoon of water and mix it in.
  • Pour the dressing on top of the vegetables and mix to combine.
  • Let the salad rest for 10 minutes at room temperature before serving. This is not strictly mandatory, but it does help the flavors meld and improves the salad's flavor.

Time 8m

Yield 6

Number Of Ingredients 8

24 ounces cherry, plum, or hot house tomatoes (or other variety of ripe tomato)
3 tablespoons extra-virgin olive oil
2 tablespoons balsamic vinegar

  • First, fill a small bowl with ice water and add the chopped red onion (soaking the onion will tame its intense flavor and make it more crisp). Set aside as you prep the remaining ingredients.
  • To assemble the salad, spread the tomato wedges over a large serving platter. Drain the onions well, and layer about one-third of the onions on top. Add half of the cherry tomatoes, followed by a layer of any optional additions, followed by another one-third of the onions. Finish with the remaining cherry tomatoes, followed by the remaining onions, and sprinkle the basil all over.
  • Drizzle the olive oil over the salad, followed by the balsamic vinegar. Sprinkle the salt and several twists of black pepper on top. Serve promptly. This salad is best consumed within a couple of hours, but leftover salad will keep in the refrigerator, covered, for 3 days.
