ITALIAN BALSAMIC TOMATOES
Classic Italian balsamic tomatoes made with the last of summer's heirlooms and red onions glazed with an aged balsamic reduction and a touch of fragrant basil.

Steps:
- Preheat a skillet over medium flame. Add a splash of water (or a light drizzle of olive oil and sautee the onion with the brown sugar and a pinch of sea salt until the onions start to soften. A couple of minutes should be enough. Add the balsamic vinegar and simmer until reduced by half.
- Slice the tomatoes into bite size wedges and place them on a serving platter. Pour the onion balsamic vinegar reduction over the top. Drizzle with the olive oil and give it a gentle toss to coat. Adjust seasonings to taste with sea salt and black pepper, i used some coarse volcanic black salt but any sea salt will do.
- Sprinkle with the fresh basil leaves and serve.

I love tomato salads in the summer, and this quick version with olive oil and balsamic vinegar is one of my favorites.

- In a serving bowl, combine the tomatoes and the green onions.
- In a small bowl, whisk together the dressing ingredients until they emulsify into a thick, velvety dressing. If the dressing seems too thick, add a teaspoon of water and mix it in.
- Pour the dressing on top of the vegetables and mix to combine.
- Let the salad rest for 10 minutes at room temperature before serving. This is not strictly mandatory, but it does help the flavors meld and improves the salad's flavor.

ROASTED TOMATO BALSAMIC VINAIGRETTE
I once worked with a chef who made an amazingly delicious roasted tomato vinaigrette. He would roast a whole pan of Roma tomatoes until the sugars and acids would condense and caramelize and concentrate into a delicious mass. I thought I could duplicate it by using a really good, double-concentrate tomato paste and nicely aged balsamic vinegar. It worked.

BALSAMIC TOMATO SALAD

- Gather the ingredients.
- Slice the tomatoes in half and, if using plum or larger tomatoes, core them to remove the seeds . Chop the tomatoes into chunks (whatever size you desire). If using grape, cherry, or another small tomato, cut in half so they will absorb the flavors of the dressing. There's no need to seed them.
- Place the chopped tomatoes in a large bowl. Add the olive oil, balsamic vinegar, garlic, and herbs (if using). Toss well.
- Transfer to a serving dish and season with salt and pepper to taste. Or plate the salad individually for your guests and garnish with a sprig of fresh oregano or basil.

- Heat the olive oil in a large pot over medium high heat. Add the diced onion and sauté until it softens, about 3-4 minutes. Add in the minced garlic and cook for another minute.
- Add in the canned tomatoes and season with salt and pepper. Using a potato masher, mash the tomatoes until they are all broken up. Add in the bay leaf, brown sugar, and chicken broth. Stir and bring the mixture to a boil.
- Once the soup is boiling reduce the heat to medium low and simmer for 10 minutes. Pull out the bay leaf and remove from the heat. Pour half the soup into a blender or food processor and process until smooth.
- Strain the soup and repeat the process with the second half. Return the strained soup to the pot and stir in the balsamic vinegar. Bring the soup back up to a simmer and cook for several more minutes. Serve the soup immediately topped with chives.
