THREE CHEESE LASAGNA RECIPE
Three cheese lasagna with mozzarella, parmesan, and ricotta cheeses. This classic meatless lasagna makes an easy and tasty dinner.

Steps:
- Add garlic and onion to a skillet with a splash of olive oil. Cook over medium high heat for around 10 minutes, until onion is soft. Add sauce, stir, and set aside
- In a bowl, stir to combine the freshly grated parmesan cheese, ricotta cheese, oregano, egg, and fresh parsley.
- Grease a 9 X 13 casserole dish with cooking spray
- Add 1/3 cup sauce to the bottom of the dish and spread it out
- Add 3 lasagna noodles
- Place 1/2 cup of the ricotta mixture and spread out over the noodles
- Add 1 cup of the sauce and spread out over the top
- Sprinkle on 1/2 cup of mozzarella cheese
- Add the next layer: 3 noodles, 1/2 cup ricotta, 1 cup of sauce, and 1/2 cup of mozzarella
- For the final layer, add 3 noodles, the rest of the ricotta, the rest of the sauce, and the remaining 1 cup of mozzarella over the top
- Cover with foil and bake at 375 degrees for 50 - 60 minutes, until hot and bubbly
- For crispy edges and top, remove foil for the last 5 minutes (optional)

- Bring a large pot of lightly salted water to a boil. Add pasta and cook for 8 to 10 minutes or until al dente; drain.
- Preheat oven to 350 degrees F (175 degrees C). In a large skillet over medium-high heat, brown beef and season with salt and pepper; drain. Stir in spaghetti sauce and garlic and simmer 5 minutes.
- In a medium bowl, combine mozzarella, Cheddar and ricotta; stir well. In 9x13 inch pan, alternate layers of noodles, meat mixture and cheese mixture until pan is filled.
- Bake in preheated oven for 30 minutes, or until cheese is melted and bubbly.

TRIPLE CHEESE & AUBERGINE LASAGNE

Steps:
- First, make the tomato & aubergine sauce. Heat 1 tbsp of the oil in a large non-stick frying pan and cook the aubergine in 3 batches, adding 1 tbsp oil for each batch. They should be softened and lightly golden.
- Add the remaining oil to the pan and cook the onions for 5 mins until softened. Stir in the garlic, cook for 1 min more, then return the aubergine to the pan with the tomatoes, tomato purée, sugar and chilli flakes. Bring just to the boil, then turn down to a simmer and cook for 10 mins. Take off the heat, stir in the basil and soy sauce, and season to taste.
- Mix together all the ingredients for the ricotta filling, season and set aside - or cover and leave in the fridge if making in advance. Both the aubergine and the ricotta sauce can be chilled for up to 2 days.
- For the cheese sauce, add all the ingredients to a pan and cook over a medium heat, stirring all the time, until it thickens and the cheese has melted, then turn down the heat to low and cook for another 5 mins. Season to taste.
- Heat oven to 180C/160C fan/gas 4. To assemble the lasagne, spoon half the aubergine mixture into the bottom of a large baking dish. Top with a layer of lasagne sheets, then spread over a ricotta layer. Add another layer of lasagne sheets, followed by the remaining aubergine mixture and another layer of lasagne sheets. Pour over the cheese sauce (it can now be frozen for 1 month - defrost before cooking). Bake in the oven for 50 mins-1 hr until golden and heated through.

- Prepare this sauce up to 3 days ahead to blend flavors; heat oil in a large heavy saucepan over medium heat.
- Add in onions, chopped carrots, garlic and dried chili flakes; saute for about 10-12 minutes.
- Add in ground beef and the sausage meat, cook, stirring with a wooden spoon, breaking up the meat for about 6-7 minutes.
- Add in all remaining ingredients; stir to combine.
- Season with salt and pepper.
- Cover and simmer for about 45 minutes, stirring occasionally; cool and refrigerate overnight.
- For the filling: combine ricotta, mozzarella cheese, and about 3/4 cup grated Parmesan cheese in a bowl; mix well to combine, season with black pepper and salt.
- Add in drained spinach, then mix in eggs.
- Set oven to 350°F.
- Grease an 13x9-inch glass baking dish or one a little larger with high sides.
- Spread about 1/2 cup (or a little more) sauce on the bottom.
- Place 5 cooked lasagna noodles over the sauce (overlapping to fit in the dish).
- Spread HALF of the ricotta/spinach mixture over the noodles.
- Sprinkle about 2 cups grated mozzarella cheese evenly over the ricotta/spinach mixture.
- Spoon about 2 cups (or more) sauce over the mozzarella cheese, spreading with a spoon to cover (the sauce will be slightly thick).
- Repeat layering starting again with 5 noodles, then remaining ricotta mixture, about 2 cups mozzarella cheese and more sauce.
- Arrange 5 more noodles over the sauce.
- Spread more sauce over the noodles.
- Sprinkle with about 1 cup grated mozzarella cheese, then sprinkle with about 1/3 cup grated Parmesan cheese (or to taste).
- Cover with foil (at this point you can refrigerate up to 1 day ahead to bake later).
- Bake for about 40 minutes.
- Uncover and bake for another 35-40 minutes, or until bubbly.
- Let stand about 10-15 minutes (or longer) before slicing.

TRIPLE MEAT LASAGNA
This is a traditional, kid friendly lasagna with a little hidden treasure of pepperoni in each slice. My family came up with this concept one day when we were making lasagna and had some pepperoni left over from making some homemade pizza. It has been a staple ingredient ever since!! Caution: may cause family and friends to invite themselves over for dinner!!

- Pre-heat oven to 350 degrees. Put ricotta cheese into mixer on low. While ricotta is mixing, brown ground sausage and place in med mixing bowl.
- Boil water for noodles. Add olive oil and salt to water.
- Add 1/2 Mozzarella/Italian cheese to ricotta and continue to mix on low. Brown ground beef/turkey while this is mixing. Add ground meat to ground sausage.
- Add water to noodles and cook to package directions. Add the other half of cheese when mixture becomes evenly blended.
- Add eggs, parsley, and oregano to cheese mixture, then drain noodles.
- Begin to layer your ingredients in 13 x 9 x 2 inches glass baking pan. Start with sauce to prevent noodles from sticking and crisping to the bottom. Then do a layer of noodles, then the cheese mixture.
- Lay out the pepperoni in rows following the pasta line. Try to space out according to how you will cut the lasagna. Sometimes,for convenience, we mix the tomato sauce with the meat mixture, if so, save about a 1/2 cup of sauce for the top. If you decide not to mix, then you will just have an extra step in the layering with meat, then sauce.
- Repeat layering until you reach the top layer. The top should have noodles, then simply sauce (without meat). Sprinkle top with Parmesan cheese.
- Put in oven for 30-45 minute Remove from oven and let sit for 5-10 minutes (good time to pop in some garlic bread) then serve.
