½ cup butter
1 ½ cups graham cracker crumbs
7 ounces flaked coconut
14 ounces sweetened condensed milk
12 ounces semisweet chocolate chips
½ cup creamy peanut butter

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • In one 13x9 inch baking dish, melt the butter. Sprinkle the graham cracker crumbs over the melted butter . Top with the coconut, then the sweetened condensed milk and bake for 25 minutes or until golden brown.
  • In a saucepan over low heat melt the chocolate chips and peanut butter together. Stir until creamy and pour over the baked bars. Let cool thoroughly then cut into bars. Garnish with more flaked coconut. Store bars in an airtight container.

5 eggs, separated
1 cup shortening
2-1/2 cups sugar
5 tablespoons strong brewed coffee
2 teaspoons vanilla extract
3 cups cake flour
4 teaspoons baking cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup buttermilk
FROSTING:
5-1/2 to 6 cups confectioners' sugar
1 tablespoon baking cocoa
1-1/2 cups butter, softened
3 tablespoons plus 1-1/2 teaspoons strong brewed coffee
1-1/2 teaspoons vanilla extract

Steps:

  • Let eggs stand at room temperature for 30 minutes. In a large bowl, cream shortening and sugar. Add egg yolks, one at a time, beating well after each addition. Beat in coffee and vanilla. Combine the flour, cocoa, baking soda and salt; add to the creamed mixture alternately with buttermilk. In another bowl , beat egg whites on high speed until stiff peaks form; fold into batter., Pour into three greased and floured 9-in. round baking pans. Bake at 350° for 25-30 minutes or until a toothpick inserted in the center comes out clean. Cool for 10 minutes before removing from pans to wire racks to cool completely., For frosting, combine confectioners' sugar and cocoa. In another large bowl, cream butter and sugar mixture. Beat in coffee and vanilla. Spread between layers and over top and sides of cake.

Mocha bars have been a favorite bakery treat of mine for years, but they're always hard to find. This recipe is the best mocha bar I've ever had!

Number Of Ingredients 10

1 (18 ounce) box cake mix
1 (6 ounce) box instant vanilla pudding
2 cups milk
2 eggs
1/2 cup butter, softened
1/2 cup creamy peanut butter
3 cups powdered sugar
1/2 teaspoon vanilla extract
3 -4 tablespoons milk, seperated
crushed peanuts

Steps:

  • Mix cake mix, pudding, milk and eggs in large bowl.
  • Bake in 13x9 pan according to box directions. The cake may take an extra 5-10 minutes.
  • Whip butter, peanut butter together. Add powdered sugar 1 cup at a time, the mixture will be crumbly. Add milk 1 tablespoon at a time until the icing is fluffy and spreadable.
  • Cut cake into 20 or 24 squares. Frost all sides and roll in crushed peanuts.
  • Variation: add heath bits to the crushed peanuts. Gives an extra crunch!

¼ cup sugar
5 tablespoons cocoa powder, you can add 1 tbsp of instant coffee if you want a stronger mocha flavor
1 egg, beaten
1 ¼ cups graham cracker crumbs
1 cup sliced almond, chopped
½ cup flaked coconut
½ cup butter, softened
2 tablespoons custard powder
5 teaspoons heavy cream
2 tablespoons instant coffee
2 cups powdered sugar
2 tablespoons butter
6 oz chocolate
cocoa powder, to garnish

Steps:

  • In a bain-marie, melt the butter, sugar, and cocoa powder.
  • Stir in the egg and keep stirring for a minute until the mix thickens.
  • Remove the bowl from heat.
  • Add the graham cracker crumbs, the almonds (chopped finely), and the coconut flakes.
  • When well mixed, pour into an 8x8 inch (20x20 cm) pan and flatten until you get an even layer.
  • Cream the custard powder, softened butter, cream, and instant coffee until smooth.
  • Add the powdered sugar and mix until smooth.
  • Pour mixture on top of the crust and spread it until you get an even layer.
  • In a bain marie, slowly melt the chocolate and the butter.
  • Cool it down a little bit then pour it over middle layer.
  • Chill the bars for at least 3 hours.
  • Cut them into 9 even squares and sprinkle each one with cocoa powder.
  • Enjoy!

2 teaspoons instant coffee granules
2 tablespoons strong brewed coffee
2 tablespoons milk
¼ cup butter, softened
¼ cup cocoa powder
2 ½ cups confectioners' sugar
6 ounces white chocolate
½ cup butter
½ cup white sugar
1 teaspoon vanilla extract
1 egg
2 cups graham cracker crumbs
½ cup finely chopped walnuts
¾ cup flaked coconut

Steps:

  • To make Pastry: Combine 1/2 cup butter, white sugar, vanilla and the egg in a double boiler over low heat. Stir until thick. Add the graham cracker crumbs, coconut and nuts and mix well. Pour into baking pan and let cool.
  • To prepare Filling: In medium-sized bowl, dissolve the instant coffee in the hot coffee. Mix in powdered sugar, cocoa, 1/4 cup of butter and milk. Spread filling over pastry and chill for 15 minutes.
  • To prepare Topping: Melt white chocolate in double boiler over low heat. Spread over filling and cut into squares. Store in refrigerator.

This is just as easy as any cake from a box and much more flavourful. I needed to use up some pantry ingredients and this recipe is what I came up with. The Beau bought some Hershey's SPECIAL DARK Cocoa by mistake, he thought it was hot cocoa mix, otherwise it might not have been a product I would have ever purchased. If you don't have it you could probably substitute another dutch-processed cocoa but your results might not be quite the same as mine. I made cupcakes so I could portion them out to freeze some and they were rich enough to not really need frosting but please frost as you like. They came out as black as night, my co-workers asked what food colouring I added to get them like that, to which I happily replied "None!". The Beau said they were "Too chocolatey and too moist" so count yourself warned, lol. The recipe made 24 cupcakes and would make two 8" round or square cakes, or a 9x13. Adjust your time slightly according to which units you're baking.

1 cup sugar
1 cup light brown sugar, firmly packed
1 3/4 cups flour
1 cup hershey's special dark cocoa, plus extra
hershey's special dark cocoa, for dusting pans
1 teaspoon salt
1 1/2 teaspoons baking soda
1 1/2 teaspoons baking powder
1/2 teaspoon cinnamon
2 large eggs, lightly beaten
1 cup chocolate milk
3 tablespoons hot fudge topping (don't heat, just measure cold)
1/2 cup unsalted butter, melted and cooled slightly
1 tablespoon vanilla
1 cup water, very hot
3 teaspoons instant espresso powder (heaping teaspoons-I use Medaglia D'Oro brand-you could use any brand)

Steps:

  • Butter 2 8" cake pans or muffin pans, etc, and coat evenly with cocoa powder (I began using my new silicone pans with this recipe and did not need to pre-treat my pans with butter or cocoa).
  • In large bowl mix together well first 8 ingredients with a wire whisk.
  • Add eggs, chocolate milk, hot fudge topping, butter and vanilla; beat on medium for 2 minutes.
  • In a small bowl, mix together hot water and instant espresso, stirring well to dissolve.
  • Add espresso carefully to cake mix and beat until mixed well, batter will seem thin.
  • Pour evenly into the prepared pans.
  • Bake in pre-heated oven at 350º for about 40 minutes or until toothpick comes out clean; it's a dense cake and won't rise as high as you might expect.
  • Cool in pans 10 minutes, then turn out onto wire racks to cool completely.
  • Frost or dust with powdered sugar as desired.
