A very simple and easy Zucchini Quiche. Easy to prepare and great for breakfast or any time of the day. Serve it with some fresh fruit for a complete meal.

Number Of Ingredients 9

1 cup Zucchini, shredded. Squeeze between paper towels to remove water.
1/2 cup Sweet Onion, chopped
1/4 cup Fresh Basil, chopped
5 large Eggs, beaten
1/2 cup Heavy Cream
1/2 teaspoon Paprika
Pinch of Nutmeg
Dash of Salt
1 ready made Deep Dish Pie Shell

Steps:

  • Chop the basil.
  • Dice the onions.
  • Grate the zucchini. Squeeze between paper towels to remove excess water.
  • Place onion and zucchini in a skillet over Medium heat.
  • Saute onions and zucchini until tender
  • Drain off excess oil. Set aside to cool.
  • Place eggs in a mixing bowl. Whisk well.
  • Add heavy cream.
  • Add basil.
  • Add paprika.
  • Add nutmeg.
  • Add salt.
  • Whisk together well.
  • Add the cooled zucchini and onions.
  • Stir to fully combine.
  • Pour mixture into pie shell.
  • Bake at 350F degrees for 40-45 minutes until done.
  • Test with toothpick for doneness.
  • Remove from oven and let cool 10 minutes.
  • Slice and serve.
  • Enjoy!

1 pound ground pork sausage with sage
1 teaspoon baking powder
20 grape tomatoes, sliced in half and sprinkled with salt
6 large eggs
10 ounces sharp Cheddar cheese, grated (about 2 1/2 cups)
Salt and pepper
Two 9-inch unbaked frozen pie shells (set them out to thaw while preparing the other ingredients)

Steps:

  • Preheat the oven to 350 degrees F.
  • In a large skillet, cook the sausage until browned and cooked through, about 10 minutes. Then remove with a slotted spoon and reserve.
  • In a large mixing bowl, whisk the baking powder, tomatoes and eggs together. Add the cooked sausage and the cheese to the egg mixture and stir together with a large spoon. Add salt and pepper and divide the mixture between both unbaked pie shells. Bake until the filling is set, about 30 minutes. Serve warm or at room temperature.
  • Cook's Notes: To lighten up this quiche, use turkey sausage and egg substitute.
  • Garth likes this quiche with cheese tortellini. If you add tortellini, cover with egg or the pasta will burn when the quiche bakes.

Nonstick cooking spray, for greasing the loaf pans
3 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1 teaspoon ground cinnamon
1 teaspoon salt
2 cups sugar
1 cup vegetable oil
3 large eggs, beaten
3 cups grated zucchini
1/2 cup frozen grated coconut, thawed
1/2 cup walnuts, chopped
1/4 cup maraschino cherries

Steps:

  • Preheat the oven to 325 degrees F. Grease two 5-by-9-inch loaf pans with cooking spray.
  • In a mixing bowl, sift together the flour, baking soda, baking powder, cinnamon and salt. Mix the sugar, oil and beaten eggs in a separate bowl and add to the flour mixture. Stir in the grated zucchini, coconut, nuts and cherries.
  • Pour the batter into the loaf pans and bake until a toothpick inserted into the center of the loaf comes out clean, about 1 hour. Cool for 10 minutes before removing the loaves from the pans. Turn the breads out onto wire racks to cool completely.

HASH BROWN CRUSTED VEGGIE AND HAM QUICHE



Hash Brown Crusted Veggie and Ham Quiche image

3 cups (about 10 ounces) frozen hash browns, thawed
4 tablespoons unsalted butter
Kosher salt and freshly ground black pepper
1/2 small zucchini, diced (about 1/2 cup)
1/2 small red bell pepper, diced (about 1/2 cup)
1 ounce (about 1 slice) ham, chopped
1/3 cup shredded sharp Cheddar
1/2 cup heavy cream
1 tablespoon finely chopped fresh chives
Large pinch cayenne
3 large eggs

Steps:

  • Preheat the oven to 450 degrees F.
  • Pat the hash browns dry and add to a large bowl. Melt 3 tablespoons of the butter in a medium skillet and add to the hash browns with salt and pepper and mix well. Press the hash browns on the bottom and up the sides of a 9-inch pie pan, pushing them gently into the corners. Bake until golden brown, 20 to 25 minutes. Remove the crust from the oven and reduce the oven temperature to 375 degrees F.
  • Meanwhile, melt the remaining tablespoon butter in the same skillet over medium-high heat. Add the zucchini and bell pepper and cook, stirring, occasionally, until slightly softened, about 3 minutes.
  • Spoon the vegetables into the crust and sprinkle with the ham and Cheddar.
  • Whisk the cream, chives, cayenne and eggs together in a bowl with 1/4 teaspoon salt. Pour the mixture into the crust. Bake the quiche until golden brown and just set in the center, 20 to 25 minutes.
  • Cool at least 10 minutes before serving. Serve warm or at room temperature.

Steps:

  • Preheat oven to 400 degrees.
  • Melt the butter in a heavy nonstick skillet over medium high heat.

  • Transfer the onions and next 3 ingredients to a bowl.
  • Combine the eggs, milk and nutmeg in another bowl.
  • Season with salt to taste and stir in onion mixture.
  • Pour into pie shell and bake 25-35 minutes or until center is set.

8 slices bacon
1 small onion, chopped
4 eggs
2 tablespoons milk
2 tablespoons all-purpose flour
1 teaspoon dried parsley
¼ teaspoon dried thyme
salt and pepper to taste
1 (9 inch) unbaked pie crust
¼ cup shredded mozzarella cheese
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place bacon in a large, deep skillet. Cook over medium high heat until evenly brown. Drain (reserving 1 tablespoon of grease) crumble bacon and set aside. Heat reserved bacon grease in skillet and saute onion until soft.
  • In a large bowl, beat together eggs, milk, flour, parsley, thyme, salt and pepper. Add bacon, onion, mozzarella and cheddar cheese; mix well. Pour mixture into pie crust.
  • Bake in preheated oven for 45 minutes, or until lightly brown on top and firm in the middle. Serve warm.

But if you have a little more time, you should lose the canned chiles and make it instead with roasted fresh poblanos, which are even more delicious. I like the contrasting crunch of Triscuits, but just about any cracker would do. Then again, you could make this quiche without a crust and save a bunch of time. 24 whole grain wheat crackers, ground in a food processor (Triscuits, about 1 cup) or 1 cup dried breadcrumbs
1 medium zucchini (about 6 ounces)
kosher salt
1 tablespoon vegetable oil
1 small onion, chopped (about 1/2 cup)
1/4 cup unbleached all-purpose flour
1/2 teaspoon baking powder
3 large eggs
1/2 lb freshly grated monterey jack cheese (about 2 cups)
1 cup whole-milk cottage cheese
1 (4 1/2 ounce) can chopped green chilies, drained
bottled salsa (optional)

Steps:

  • Preheat the oven to 375 degrees F. Stir 2 tablespoons of the melted butter into the cracker crumbs. Press the crumb mixture into the bottom and 1-inch up the side of a 9-inch glass pie plate. Bake the crust in the center of the preheated oven until it begins to brown, about 7 minutes. Remove the crust from the oven and reduce the oven temperature to 350 degrees F.
  • Meanwhile, grate the zucchini, preferably using the grating attachment of a food processor. Toss the zucchini with 1/2 teaspoon salt and let drain in a colander for 10 minutes. Heat the oil in a medium skillet over high heat until hot. Reduce the heat to medium; add the onion and cook, stirring occasionally, until softened, about 5 minutes. Squeeze the zucchini well with your hands to remove excess moisture. Add the zucchini to the onion and cook over high heat for 3 minutes.
  • Stir together the flour, the baking powder, and 1/4 teaspoon salt in a small bowl until combined. In a large bowl with an electric mixer, beat the eggs until thick and fluffy, about 3 minutes. Add the Monterey jack and cottage cheeses, the flour mixture, and remaining melted butter to the eggs and beat well. Stir in the zucchini mixture and chiles and pour the mixture into the crust. Bake the quiche in the center of the oven until the top is puffed and golden brown and a cake tester inserted in the center comes out clean, 35 to 40 minutes. Set aside at room temperature 5 minutes, cut into wedges, and serve with salsa, if desired.
