Trisha corn cakes recipe is a delicious and easy to make holiday side dish. I know that when it comes to the holidays, we like to indulge in all of our favorite foods.

Number Of Ingredients 11

1/2 cup cornmeal
1/2 cup flour
1 tbsp baking powder
1 tbsp salt to taste
1 cup buttermilk
1 tbsp sugar
2 tbsp vegetable oil
2 tbsp butter
1 egg eggs
1/3 cup canned corn
1 tbsp dried chives

Steps:

  • In a mixing bowl, combine all of the dry ingredients. Whisk together until well combined and there are no more lumps or clumps present in the flour mixture at all.
  • Mix together melted butter, oil and buttermilk in separate bowl. Add the egg to this mixture and mix well before adding it to the dry ingredients.
  • Pour into a pre heated pan and let it cook for about two minutes on each side or until both sides are golden brown.
  • Serve hot with butter and syrup, or any other toppings of your choice!
  • Enjoy

Number Of Ingredients 9

3 1/2 pounds russet potatoes, peeled
1 large sweet onion
1/2 cup all-purpose flour
2 large eggs, lightly beaten
3 tablespoons finely chopped chives
1/4 teaspoon baking powder
Kosher salt and ground black pepper
Canola oil, for frying
Unsalted butter, for frying

Steps:

  • Set a large strainer or colander over a bowl and line it with a clean kitchen towel. Using a box grater, grate the potatoes and onion into the strainer. Using the towel, squeeze as much liquid from the potatoes and onion as possible. Transfer the mixture to another bowl and stir in the flour, eggs, chives, baking powder, salt and pepper.
  • Coat the bottom of an 8-inch nonstick skillet with oil and add a couple of tablespoons of butter. Heat over medium heat until the butter foam subsides. Spoon about 1 3/4 cups of the potato mixture into the pan and press to fill the circumference. Fry over medium heat, flipping once, until the pancake is golden and crisp, 3 to 4 minutes per side. Drain the pancake on a paper towel-lined baking sheet. Repeat with the remaining batter.

1/2 cup all-purpose flour
1/2 cup yellow cornmeal
1 tablespoon sugar
1 tablespoon baking powder
1 teaspoon kosher salt
2 tablespoons unsalted butter, plus extra for cooking corn cakes
1 large egg
1 cup low-fat buttermilk
1/2 cup shredded sharp Cheddar
1/3 cup canned corn, rinsed and drained, optional
1 tablespoon dried chives
Serving suggestions: butter and maple syrup

Steps:

  • Whisk together the flour, cornmeal, sugar, baking powder and salt in a mixing bowl.
  • Melt the butter in a large nonstick skillet over medium heat. Set aside to cool slightly while you prepare the wet ingredients.
  • Whisk together the egg and buttermilk in a large mixing bowl. While whisking, pour in the melted butter and stir until combined. Stir in the dry ingredients just until combined. (Be sure not to overwork the batter.) Fold in the Cheddar, corn, if using, and chives.
  • Place the skillet over medium heat and add enough butter to coat the bottom. Ladle about 1/2 cup batter into the pan, spreading gently to form a thick circle. Cook until bubbles appear on the surface, 1 to 2 minutes. Flip over and cook until golden brown, about 1 to 2 minutes more. Melt a small pat of butter in the skillet in between each batch (this will help the corn cakes rise). Serve immediately, with more butter and maple syrup, if desired.

1/2 t. Baking Powder
1/2 t. Salt
1/2 cup Cocoa
2 sticks (1 cup) Butter, room temperature
1/2 cup Vegetable Shortening
3 cups Sugar
5 large Eggs, room temperature
1 cup Milk (International Delight Amaretto Cafe coffee creamer)
2 t. Vanilla (Almond Extract)

Steps:

  • Preheat oven to 350F. Grease 10 inch tube pan Sift together flour, baking powder, salt and cocoa together. Set aside. With a stand mixer running, cream butter and shortening with sugar till fluffy. Add Eggs, one at a time, mixing well after each addition. Add flavoring. With the motor running, alternate, add flour mixture and milk, beginning and ending with flour. Pour batter into pan and bake 1 hour and 15 minutes, testing with a toothpick. The toothpick should have a bit of batter on it. Do NOT over bake. Cool 60 minutes then turn out to a rack to cool completely.

3 pounds red potatoes, peeled and sliced 1/4-inch thick
Salt
Vegetable oil, to coat pan
1 pound lean ground beef
1/2 onion, chopped
4 tablespoons (1/2 stick) butter
1/4 cup all-purpose flour
Black pepper
2 cups milk
2 cups grated sharp Cheddar
1/2 cup unseasoned dry breadcrumbs

Steps:

  • Place the potatoes in a large saucepan with water to cover by 1 inch. Add a generous pinch of salt and cook for 15 minutes, or until tender. Potatoes cook quickly. Test often for tenderness and don't overcook them. Alternatively, cook the potatoes in a pressure cooker for 5 minutes, releasing the pressure immediately to prevent overcooking. Drain the potatoes and arrange them in a 6- by 9- by 2-inch casserole dish. In a large skillet, add a little oil to coat the pan. Combine the beef and onion and cook together over medium heat until the beef is browned and the onion softened, about 10 minutes. Drain excess fat. Preheat the oven to 350°F. Melt the butter in a medium saucepan and whisk in the flour to make a roux. Cook over medium heat, whisking constantly, until the mixture bubbles and the flour turns light brown in color. Gradually whisk in the milk and continue to stir while cooking over medium heat. When the mixture thickens, season with salt and pepper, then stir in the cheese and browned beef and onions. Pour the ground beef mixture over the potatoes and bake the casserole for 20 minutes, until heated through and bubbling. Sprinkle the breadcrumbs on top of the casserole and bake until the crumbs are toasted, about 5 minutes longer.
