POTATO CASSEROLE

- Preheat the oven to 400 degrees F. Grease a 2-quart baking dish with cooking spray.
- Peel the potatoes and cut them into 1-inch cubes. Place the potatoes and salt in a pressure cooker with water to cover and bring to a boil. Reduce the heat and simmer the potatoes until very tender, about 5 minutes. (If you do not have a pressure cooker, boil the potatoes in a pot of water with a pinch of salt until tender, about 20 minutes.)
- While the potatoes boil, cook the bacon in a medium skillet over medium heat until browned and cooked through, 8 to 10 minutes. Drain the bacon on paper towels and, when cool enough to handle, crumble it into small pieces. Set aside.
- Add the milk, mayonnaise, sour cream, butter, garlic salt, pepper and 1 cup of the cheese to a stand mixer with a paddle attachment. Whip the mixture until thoroughly combined. Drain the potatoes and add to the mixer. Mix again to combine and the potatoes are whipped smooth.
- Spoon the mixture into the prepared baking dish. Sprinkle the crumbled bacon and remaining 1 cup cheese over the top and bake until the cheese is melted and the casserole is heated through, about 20 minutes.
CREAMY AU GRATIN POTATOES
This is my husband's favorite dish, and he considers it a special occasion every time I make it. The creamy cheese sauce and the tender potatoes in this classic French dish combine to make a deliciously addictive experience. It's a great side dish with a roast pork loin or beef tenderloin. Add a green salad and French bread, and you have found the magic path to a man's heart. To avoid lumps in your sauce, add the milk just a little at a time as you stir the flour and butter. Experiment with different cheeses for variety.

Steps:
- Preheat oven to 400 degrees F (200 degrees C). Butter a medium casserole dish.
- Layer 1/2 of the potatoes into bottom of the prepared casserole dish. Top with the onion slices, and add the remaining potatoes. Season with salt and pepper to taste.
- In a medium-size saucepan, melt butter over medium heat. Mix in the flour and salt, and stir constantly with a whisk for one minute. Stir in milk. Cook until mixture has thickened. Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds. Pour cheese over the potatoes, and cover the dish with aluminum foil.
- Bake 1 1/2 hours in the preheated oven.

MAMA'S SCALLOPED POTATOES

- Preheat the oven to 375 degrees F. Spray a 3-quart baking dish with cooking spray.
- In a large bowl, combine the evaporated milk, flour, paprika, seasoning salt, nutmeg, cayenne, 3/4 teaspoon kosher salt and 1/2 teaspoon black pepper. Add the potatoes, onions and zucchini and toss to coat, making sure to separate the vegetable slices.
- Pour the mixture into the prepared baking dish, distribute the vegetables evenly, and then flatten the top with a rubber spatula. Sprinkle with the Parmesan and bake until crispy on top and the potatoes are tender, 45 minutes to 1 hour.
- Let sit for 10 minutes to set. Garnish with green onions before serving.
TRISHA'S AU GRATIN POTATOES
Steps:
- place a layer of potatoes in a baking pan oiled with either butter or Pam, add onion, Swiss, nutmeg, salt and pepper, repeat layers. ending with Swiss Cheese. Pour enough cream over to about half way through thickness. Bake @ 350 for 75-90 minutes.

- Heat oven to 375°F. Grease 1 1/2-quart casserole with shortening or spray with cooking spray.
- In 2-quart saucepan, melt butter over medium heat. Cook onion in butter about 2 minutes, stirring occasionally, until tender. Stir in flour, salt and pepper. Cook, stirring constantly, until bubbly; remove from heat.
- Stir in milk. Heat to boiling, stirring constantly. Boil and stir 1 minute; remove from heat. Stir in 1 1/2 cups of the cheese until melted.
- Spread potatoes in casserole. Pour cheese sauce over potatoes. Bake uncovered 1 hour.
- In small bowl, mix remaining 1/2 cup cheese and the bread crumbs; sprinkle over potatoes. Sprinkle with paprika. Bake uncovered 15 to 20 minutes or until top is brown and bubbly and potatoes are tender.

SOUR CREAM AU GRATIN POTATOES
Hi everyone! I have lived in the States for over 30 years, but my American husband and I moved to Norway almost 7 years ago. (I was born in Norway) Converting recipes is sometimes a challenge, but the "try-and-fail" method seems to work, and is sometimes very funny----I have a few recipes that have been favorites through the years and this Au Gratin potato recipe is one of them. I don't know where or when I got it, but my 3 kids, who are now 34, 32 and 27 and all living in America, loved this when they were growing up, and still do! Try it! P.S. So happy to find this site! It is fantastic, and much fun! I've also submitted another recipe--one of my favorites , called TUNA-BROCCOLI BAKE, delicious and practically FAT-FREE! Check it out! I like this potato recipe as it is delicious and very, very simple to make.

- Preheat an oven to 350 degrees F (175 degrees C). Grease one 9x13 inch baking pan with butter. Spread potatoes evenly in the pan.
- Whisk together heavy cream, milk, garlic, flour, salt, and pepper in a large bowl. Pour cream mixture over the potatoes. Cover with foil.
- Bake in the preheated oven for 20 minutes, then remove the foil. Continue baking until the potatoes are easily pierced with a fork, about 40 minutes. CINDERELLA'S AU GRATIN POTATOES
The recipe comes from the Cinderella's Royal Table restaurant, which is in Cinderella's Castle at Walt Disney World. We ate there once about 10 years ago; this was on the menu and I loved it! I finally found the recipe on the internet and hope you enjoy it as much as I did!

- Preheat oven to 350 degrees F.
- Put bacon in frying pan and cook until crisp; set aside.
- Meanwhile, dice and then cook the potatoes in boiling water for about 8 minutes, or until just barely tender. Drain and set aside.
- Melt the butter and and saute diced onions over medium heat for about 5 minutes. Add the crumbled bacon and cook for 2 more minutes. Then add flour and stir to make a paste. Cook for 5 minutes, stirring continuously.
- Add three cups of milk to the onion mixture, stirring until lumps are gone. Cook mixture 10 more minutes and continue stirring. Add potatoes, cheese, garlic salt, white pepper and kosher salt. Mix until cheese is melted.
- Bake at 350 degrees F for 10 minutes. (This recipe can also be prepared up through Step 5 and refrigerated. When ready to finish, place refrigerated casserole in preheated oven for 15-20 minutes.).

- Preheat oven to 400 degrees F.
- Spray an 8 x 11 inch casserole dish with non-stick cooking spray.
- In a medium-size saucepan, melt butter over medium heat.
- Mix in the flour, salt, and garlic powder and stir constantly with a whisk for one minute.
- Stir in milk.
- Cook until mixture has thickened.
- Stir in cheese all at once, and continue stirring until melted, about 30 to 60 seconds.
- Layer 1/2 of the potatoes into the bottom of the prepared casserole dish and season with salt and pepper.
- Top with the diced onions, then pour half of the cheese mixture on top of the onions.
- Layer the rest of the potatoes, season with salt and pepper, and top with the remaining cheese sauce.
- Cover the dish with aluminum foil and bake for 80-90 minutes (I usually remove the foil for the last 15 minutes so that the top can brown just a little bit).

- Preheat the oven to 400 degrees F. Wash the potatoes and pierce them with a fork. Rub the potatoes with the olive oil and place them on a jellyroll pan or a large cookie sheet with a rim. Bake the potatoes for 45 minutes to an hour, or until done. Remove the potatoes from the oven and cut them in half lengthwise. Set aside. Reduce the temperature of the oven to 350 degrees F. When the potatoes are cool enough to handle, scoop out the potato flesh into a large electric mixing bowl. Add the milk, butter, sour cream, cheese, garlic salt, and salt and pepper to taste. Mix until creamy. Divide the mixture evenly and spoon it back into the potato shells. Return the potatoes to the oven for 15 minutes. Remove from the oven and garnish with the bacon and green onion. Cook Notes: I learned the hard way not to wrap the potatoes in foil before baking. It softens the shells and they will fall apart not good! Baking them unwrapped makes the shells stronger for scooping out the potato flesh later.
