1 pound salmon steaks
1 lemon, juiced
1 tablespoon chopped fresh rosemary
salt and pepper to taste
1 lemon, sliced
⅓ cup water
¼ cup diced fresh pineapple
¼ cup minced onion
3 cloves garlic, minced
2 fresh jalapeno peppers, diced
1 tomato, diced
½ cup pineapple juice
¼ cup diced red bell pepper
¼ cup diced yellow bell pepper

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Arrange salmon steaks in a shallow baking dish, and coat with the lemon juice. Season with rosemary, salt, and pepper. Top with lemon slices. Pour water into the dish.
  • Bake for 30 to 40 minutes in the preheated oven, or until easily flaked with a fork.
  • In a medium bowl, mix pineapple, onion, garlic, jalapeno, tomato, pineapple juice, red bell pepper, and yellow bell pepper. Cover, and refrigerate while fish is baking. Top fish with salsa to serve.

2/3 cup Original Bisquick™ mix
1/4 cup yellow cornmeal
1 teaspoon chili powder
1 1/4 teaspoons salt
1 lb orange roughy or other white fish fillets
1 egg, beaten
1 can (8 oz) pineapple chunks, drained
1 tablespoon finely chopped red onion
1 tablespoon chopped fresh cilantro
1 tablespoon lime juice
1 kiwifruit, peeled, chopped
1 mango or papaya, cut lengthwise in half, pitted and chopped
1 jalapeño chile, seeded, finely chopped

Steps:

  • Heat oven to 425°F. In 13x9-inch pan, melt butter in oven.
  • In small bowl, mix Bisquick mix, cornmeal, chili powder and salt. Dip fish fillets into egg, then coat with Bisquick mixture. Place in pan.
  • Bake uncovered 10 minutes. Turn fish; bake about 15 minutes longer or until fish flakes easily with fork.
  • Meanwhile, in glass or plastic bowl, mix all fruit salsa ingredients. Serve salsa with fish.

1 mango, peeled, and chopped
2 plum tomatoes, seeded and chopped
1/4 red onion, finely chopped
1 jalapeno, seeded and diced
3 tablespoon finely chopped fresh cilantro
1 clove garlic, chopped
Juice of 1 lime
Kosher salt

Steps:

  • Add the pineapple, mango, tomatoes, red onion, cilantro, garlic, lime juice, and salt to a bowl. Cover and let chill for at least 1 hour before serving so the flavors can marry together.

I made this up when we were having fish. Everyone loved it, and it has been used ever since. Easy to make. I use a plastic spoon to serve so as not to have the acid in the salad cause the taste to change when a metal spoon is used.

1 mango, cut into small chunks
2 -3 slices fresh pineapple, cut into small chunks
1 scallion, cut into small pieces along with green stalks
1 small garlic clove, minced
1 fresh jalapeno (cut in half, remove seeds and white veins to remove heat)
1 -2 tablespoon olive oil
1/2-1 fresh limes or 1/2-1 lemon, juiced
2 -3 sprigs fresh cilantro, minced
1 pinch salt (or to your taste)

Steps:

  • Put all into a bowl except oil and lemon.
  • Add the 1/2-1 Fresh lime or lemon juice squeezed over all.
  • Add approximately 1-2 TBL of olive oil.
  • Let flavors meld for at least 1 hour. You can refrigerate or not.
  • Enjoy.

8 (6 inch) whole wheat flour tortillas
1 pound fresh or frozen swordfish or halibut steaks, cut 1 inch thick
½ teaspoon Jamaican jerk seasoning
2 cups shredded fresh spinach or lettuce
1 cup Fresh spinach leaves

Steps:

  • For the Tropical Fruit Salsa, combine the mango, tomato, cucumber, cilantro, green onion, jalapeno pepper and lime juice in a large mixing bowl. Cover and refrigerate until serving time. Serve with slotted spoon.
  • Wrap tortillas in foil. Place at the edge of the grill. Heat for 10 minutes over medium-hot coals, turning occasionally. Meanwhile, cut fish into 3/4-inch slices; sprinkle with Jamaican jerk seasoning. Place strips in a light greased grill basket. Grill directly over medium-hot coals for 8 to 10 minutes or until fish flakes easily, turning the basket once. Fill each tortilla with spinach or lettuce, fish, and Tropical Fruit Salsa. 1 tablespoon cilantro, minced
1/2 cup sour cream
1/2 cup mayonnaise
1/4 cup cilantro
1 tablespoon taco seasoning
1 tilapia fillet
1 salmon fillet
1 tablespoon lemons or lime juice
1 teaspoon taco seasoning
2 -3 flour tortillas, warmed
shredded cabbage
tomatoes

taco sauce

Steps:

  • Make fruit salsa first.
  • In a large bowl, mix the jalapeno jelly, lime juice, and oil. Chop, dice, mince all fresh fruit, onion, jalapeno, and cilantro and put into the same large bowl. Stir gently and refrigerate until ready to eat.
  • Next make sauce:
  • Place all ingredients into a medium bowl and stir to blend. Place in refrigerator to chill.
  • Both fruit salsa and sauce can be made ahead.
  • Place fish on large platter and drizzle with lemon or lime juice. Sprinkle with taco seasoning.
  • Place flour tortillas in foil and warm in the oven at 350 deg. for 10 minute.
  • Either on the stove top or BBQ, cook the fish until it flakes.
  • Fill tortillas with chunks of fish, cabbage, toppings, sauce and top with fruit salsa.
  • Enjoy and eat quickly.
