TURKEY CUTLETS WITH BARLEY AND SWISS CHARD

Ingredients: pearl barley,onion,swiss chard,garlic cloves,extra virgin olive oil,chicken broth,lemon,parmesan cheese,turkey cutlets

Steps:

  1. rinse barley
  2. chop onion
  3. stem chard by cutting away leafy green prtion from either side of stalk
  4. set leaves aside
  5. chop 1 cup chard stalks and mince garlic
  6. heat two tablespoons oil in large saucepan over medium high heat until shimmering
  7. add onion and chard stalks and cook until softened , about five minutes
  8. stir in barley and garlic and cook until barley is lightly toasted , about three minutes
  9. stir broth into saucepan with barley and bring to simmer
  10. reduce heat to low , cover , and simmer until barley is tender and broth is absorbed , 20 to 40 minutes
  11. while barley cooks , cut chard leaves into 1 inch pieces
  12. grate 1 teaspoon lemon zest , then cut lemon in half and remove seeds
  13. grate parmesan
  14. fold chard leaves and lemon zest into barley , increase heat to medium high and cook uncovered , stirring gently , until chard is wilted about two minutes
  15. off heat , stir in parmesan cheese and season with salt and pepper
  16. transfer to serving platter and tent with aluminum ofil
  17. trim cutlets , pat dry and season with salt and pepper
  18. heat two tablespoonsoil in 12 inch non stick skillet over medium high heat until shimmering
  19. add lemon halves cut side down andcook until browned , about two minutes , transfer to platter with barley
  20. heat two teaspoons oil in now empty skillet and heat until shimmering
  21. add 3 cutlets to skillet and cook until well browned and tender about 2 minutes per side
  22. add to platter
  23. repeat with oil and the 3 additional cutlets
  24. squeeze lemon halves over cutlets
  25. sprinkle with remaining parmesan cheese
    60-minutes-or-less    time-to-make    course    preparation    main-dish
