Turkey Burgers with Avocado Sauce image

I love burgers and Southwestern food, so why not combine the two in a light and juicy burger? I like to whip these up, pop them in the fridge and cook them later for a quick weeknight meal! -Jan Warren-Rucker, Clemmons, North Carolina

1 cup fresh or frozen corn, thawed
1/2 cup chopped red onion
1 small sweet red pepper, chopped
2 jalapeno peppers, seeded and minced
2 teaspoons olive oil
2 tablespoons lime juice
2 garlic cloves, minced
1/2 teaspoon salt
1/2 teaspoon ground cumin
1/4 teaspoon chili powder
1/8 teaspoon dried oregano
1 pound extra-lean ground turkey
SAUCE:
1 medium ripe avocado, peeled
1/2 cup fat-free sour cream
2 tablespoons minced fresh cilantro
2 teaspoons lime juice
1 garlic clove, minced
1/8 teaspoon salt
SERVING:
4 whole wheat hamburger buns, split
Shredded lettuce and reduced-fat Mexican cheese blend, optional
Sliced tomato and red onion, optional

Steps:

  • In a large skillet, saute the corn, onion and peppers in oil until crisp-tender. Stir in the lime juice, garlic, salt, cumin, chili powder and oregano; cook 1 minute longer. Transfer to a large bowl and cool slightly. Crumble turkey over mixture and mix well. Shape into four burgers. Refrigerate for at least 30 minutes. , For sauce, in a small bowl, mash avocado with the sour cream, cilantro, lime juice, garlic and salt. Refrigerate until serving., Using long-handled tongs, moisten a paper towel with cooking oil and lightly coat the grill rack. Grill burgers, covered, over medium heat or broil 4 in. from the heat for 5-7 minutes on each side or until a thermometer reads 165° and juices run clear., Place on buns; top each with about 1/4 cup sauce. Serve with the lettuce, cheese, tomato and onion if desired.

This is from Taste of Home Magazine. I forgot to pick up corn so admitted that and also red peppers were too expensive so I used a green Italian pepper. These are so tasty and and super easy. The sauce is so good that you can use it for a dip or topping for tacos, etc.

shreddred lettuce
mexican cheese (optional)
sliced tomatoes (optional)
sliced red onion (optional)

Steps:

  • In a large skillet, saute the corn, onion and pepper in oil until crisp tender. Stir in the lime juice, garlic, salt, cumin, chili powder and oregano, cook 1 minute longer. Transfer to a large bowl and cool slightly. Crumble turkey over mixture and mix well. Shape into four burgers. Refrigerate for at least 30 minutes.
  • For sauce. In a small bowl, mash avacado with sour cream, cilantro, lime juice, garlic and salt. Refrigerate until service.
  • If grilling the burgers, coat grill rack with cooking spray before starting the grill. Grill the burgers 4 in from the heat for 5-7 minutes or until thermometer reads 165°F.
  • Place on buns top with about 1/4 sauce. Serve with lettuce, cheese, tomato and onion if desired.

  • In a large bowl, combine the turkey, mayo, salt, pepper, chili powder, dried oregano, cumin, and 2 tablespoons of tapioca flour. Using your hands, mix until the meat is just combined and the ingredients are evenly distributed. The meat should be a little ‘wet’ feeling compared to traditional beef patties; however, this helps keep the turkey meat from drying out. If your meat is too ‘wet’ to form into 4 equal-sized patties, add 1 additional tablespoon of tapioca to help bind the meat.
  • When your patties are formed, heat the avocado oil in a large skillet (preferably cast iron) over medium-high heat. When hot, carefully place the patties into the oil and cook until golden brown on each side and cooked through, about 4 minutes per side.
  • Turn off the heat and place 2-3 slices of avocado on top of each patty. Then, place a slice of pepper jack cheese over the sliced avocado. Cover the skillet to allow the cheese to just melt, 3-4 more minutes.
  • Serve on brioche buns with your favorite hamburger toppings! Alternatively, these patties are delicious served on top of a salad, or wrapped with lettuce leaves! Enjoy!
