SLOW COOKER CHICKEN QUESADILLAS



Slow Cooker Chicken Quesadillas image

Very simple and quick! These can be made for a quick weeknight dinner and picky eaters! Serve with diced onions, black olives, sour cream, and salsa.

1 (10 ounce) can red enchilada sauce
¼ cup water
1 (1.25 ounce) package reduced-sodium taco seasoning mix
2 skinless, boneless chicken breasts
1 (10 ounce) package 8- to 10-inch flour tortillas
1 (12 ounce) bag shredded Mexican cheese blend

Steps:

  • Combine enchilada sauce, water, and taco seasoning in a slow cooker. Cut chicken breasts in half lengthwise and add to the slow cooker. Cook on Low until chicken is tender, 4 to 5 hours.
  • Remove chicken and shred using 2 forks. Mix back into the sauce in the slow cooker.
  • Spoon some of the chicken mixture onto a tortilla. Sprinkle shredded cheese on top. Cover with another tortilla.
  • Heat a large nonstick skillet over medium heat. Slide quesadilla into the skillet. Cook until browned on both sides, 2 to 4 minutes, flipping halfway through. Repeat with remaining tortillas, chicken, and cheese.

My son was at a party and he had came home raving about how good these were, so I called and got the recipe from another Mom. They are very good and pretty quick fix for super.

2 cups cooked chicken (chopped or shredded)
1 medium onion (diced)
1 (4 ounce) can diced green chilies
1 (10 ounce) can rotel (drained)
1/4 teaspoon cumin
1/4 teaspoon garlic salt
16 ounces sour cream
3 cups shredded cheddar cheese
6 inches flour tortillas
2 tablespoons vegetable oil

Steps:

  • Saute onion, rotel, spices and chicken in a bit of the oil until hot. (I use a rotisserie chicken from the supermarket and I like to slice fresh mushrooms in to this mixture also).
  • Spread some sour cream on 5 tortilla shells. I like it kind of thick.
  • Spread the chicken and vegetable mixture, I use quite a bit.
  • Sprinkle with cheese then top with another tortilla shell. Mash it down.
  • Fry them in a bit of vegetable oil in a nonstick skillet for a couple of minutes on each side.

nonstick cooking spray
1/2 lb boneless skinless chicken breast half, cut into 1/2-inch pieces
1 (10 ounce) can rotel mexican diced tomatoes with lime and cilantro, undrained
4 flour tortillas (10 inch)
1 cup shredded monterey jack cheese (1 cup = 4 oz)
1 cup shredded cheddar cheese

Steps:

  • Spray large skillet with cooking spray; heat over medium heat.
  • Add chicken and tomatoes with their liquid, cooking 10 minutes, or until chicken pieces are no longer pink in centers and liquid is evaporated, stirring frequently.
  • Cover to keep warm.
  • Spread chicken mixture evenly onto bottom half of each tortilla to within 1 inch of edge.
  • Combine cheeses in small bowl; sprinkle 1/2 cup of the cheese mixture over each tortilla.
  • Fold tortillas over to cover filling.
  • Spray a skillet with additional cooking spray and heat over medium-high heat, cook quesadillas 3 minutes on each side, or until golden brown on both sides.
  • Cut into wedges to serve.

  • Heat a large skillet over medium high heat and add the olive oil. Add the onion and pepper and cook, stirring occasionally, until softened and lightly charred, about 7-8 minutes. Stir in the chicken, chili powder, cumin, garlic, and salt.
  • Lay the tortillas out on a cutting board. Sprinkle some shredded cheese on half of each tortilla. Spoon some of the chicken mixture on top. Place a few slices of avocado on top of the chicken and top with some more shredded cheese. Fold the tortillas in half over the filling and press down to flatten slightly.
  • Spray a large skillet with cooking spray and place two quesadillas in the skillet. Cook a few minutes on each side until the tortillas are toasted and cheese is melted. Remove to a plate and cook the remaining two quesadillas. Cut each quesadilla into three pieces and serve with desired toppings.
