Upside-Down Caramel Latte Bake image

With caramel, custard and whipped topping, this coffee-infused French toast bake is almost like a dessert!

Provided by Betty Crocker Kitchens

Categories     Breakfast

Time 9h10m

Yield 8

Number Of Ingredients 18

3/4 cup packed brown sugar
1/4 cup granulated sugar
1/2 cup butter or margarine
1/4 cup maple syrup
1 tablespoon instant espresso powder
1/2 cup chopped pecans
10 slices (1/2 inch thick) French bread
1/2 cup packed brown sugar
1/2 cup chopped pecans
10 slices (1/2 inch thick) French bread
6 eggs
2 teaspoons vanilla
3/4 cup whipping cream
3/4 cup milk
1/4 cup granulated sugar
1/2 cup whipping cream
1 tablespoon sugar
1/4 cup butter or margarine, melted

Steps:

  • Spray 13x9-inch (3-quart) baking dish with cooking spray.
  • In 2-quart saucepan, mix 3/4 cup brown sugar, 1/4 cup granulated sugar, 1/2 cup butter, the maple syrup and espresso. Cook 4 to 6 minutes over medium heat until sugars dissolve and mixture is smooth. Pour into baking dish. Sprinkle with 1/2 cup pecans. Top with 10 slices French bread, cutting slices in half if necessary to fit in baking dish in single layer.
  • Drizzle 1/4 cup melted butter over bread in pan. Sprinkle with 1/2 cup brown sugar and 1/2 cup pecans. Top with 10 slices French bread.
  • In large bowl, beat custard ingredients with wire whisk. Slowly pour mixture over French bread. Press down on bread with spatula so all of bread absorbs egg mixture. Cover; refrigerate 8 to 24 hours.
  • When ready to bake, heat oven to 350°F. Uncover; bake 35 to 40 minutes until puffed and lightly browned. Let stand 5 to 10 minutes before serving.
  • Meanwhile, in medium bowl, beat whipped topping ingredients with electric mixer on high speed until stiff peaks form. Serve each piece upside down with a dollop of whipped topping.

UPSIDE-DOWN COFFEE CAKE

Upside-Down Coffee Cake image

This is a gorgeous moist and gooey coffee cake! Use any type of fresh or frozen fruit, or combination of 2 fruits. Peach, cherry, blackberry and/or red raspberry are some of the best. The deep baking pan is required due to the bubbling caramel sauce and the height of the cake. Every time I serve it I get rave reviews!

Time 2h15m

Yield 16

Number Of Ingredients 12

½ cup butter
2 cups light brown sugar
3 cups fresh peaches, pitted and sliced
⅔ cup margarine
1 ⅓ cups white sugar
4 eggs
2 teaspoons vanilla extract
1 ⅓ cups milk
3 ⅓ cups all-purpose flour
4 teaspoons baking powder
½ teaspoon salt
1 teaspoon ground cinnamon

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Use a deep sided 10 inch pan, or wrap the outside of a 10 inch springform pan with aluminum foil to prevent leaking. Sift together the flour, baking powder, salt and cinnamon. Set aside.
  • In a saucepan over medium heat, combine brown sugar and 1/2 cup butter. Bring to a boil, then pour into bottom of springform pan. Sprinkle with sliced peaches.
  • In a large bowl, cream together 2/3 cup margarine and the white sugar until light and fluffy. Beat in the eggs one at a time, then stir in the vanilla. Beat in the flour mixture alternately with the milk. Pour batter over caramel and fruit in pan.
  • Bake in the preheated oven for 90 minutes, or until a toothpick inserted into the center of the cake comes out clean. Cool in pan for 10 minutes, then invert onto serving platter and carefully remove pan. Be extremely careful of hot caramel and fruit juices! Serve warm.

PEACH UPSIDE-DOWN CAKE ON THE GRILL

Peach Upside-Down Cake on the Grill image

Baked on a charcoal grill for a little smoky flavor, our peach upside-down cake is made with fresh peaches caramelized to perfection.

Categories     Dessert

Time 1h40m

Yield 10

Number Of Ingredients 11

1 tablespoon butter
2 tablespoons packed dark brown sugar
2 cups sliced fresh peaches (3 to 4 medium)
1/2 cup granulated sugar
1/3 cup milk, at room temperature
1/3 cup plus 2 tablespoons canola oil
1 1/2 teaspoons vanilla
1 egg, at room temperature
1 cup Gold Medal™ all-purpose flour
1 teaspoon baking powder
1/4 teaspoon salt

Steps:

  • Heat charcoal grill. Grease bottom only of 8-inch square pan with butter (discard any unused butter). Sprinkle brown sugar evenly in bottom of pan. Arrange peaches in single layer over brown sugar.
  • In large bowl, stir together granulated sugar, milk, oil, vanilla and egg until sugar is completely dissolved. Beat in flour, baking powder and salt until well blended.
  • Pour batter over peaches in pan, covering peaches completely and smoothing batter with spatula or back of spoon.
  • Fill 8-inch square foil pan halfway with water. Place in bottom of grill; arrange hot coals around pan. Place grill rack on grill. Place cake pan on rack directly over pan of water. This will allow cake to cook evenly over indirect heat.
  • Cover grill, leaving vents open. Bake cake 40 minutes or until toothpick inserted in center comes out clean. Cool completely on cooling rack, about 45 minutes.
  • Run thin knife around edges of pan to loosen cake. Place serving plate upside down over pan; turn plate and pan over. Remove pan.
