VEGAN CHICKPEA SALAD



Vegan Chickpea Salad image

This vegan chickpea salad with kidney beans, tomatoes, and cucumber is one of my favorite salads! It's the perfect addition to BBQs and potlucks, it's super healthy, and very easy to make!

Number Of Ingredients 10

2 cans chickpeas
1 can kidney beans
1 cucumber
8 tomatoes
1 bunch fresh parsley
juice of 1 lemon
5 tablespoons olive oil
1/2 Spanish onion
salt, to taste
black pepper, to taste

Steps:

  • Rinse the canned chickpeas and kidney beans.
  • Finely chop the Spanish onion. Dice the cucumber and the tomatoes.
  • Finely chop the parsley. Combine everything in a large bowl and stir in the lemon juice and the olive oil. Season with salt and pepper.

1 can chickpeas ((15 ounces) rinsed and drained)
1 cup carrots (peeled and shredded)
1 cup baby spinach (roughly chopped (or substitute shredded lettuce))
¼ cup Kalamata olives (sliced)
2 Tablespoons olive oil
1 Tablespoon lemon juice
salt and pepper (to taste)

Steps:

  • Add the chickpeas, carrots, spinach, and olives to a large salad bowl.
  • Mix the olive oil, lemon juice, and salt and pepper in a small bowl or jar to make the dressing.
  • Pour the dressing over and salad and toss well to coat.
  • Taste and adjust for salt and pepper, as needed. Serve.

1 15 oz. can Chickpeas (Garbanzos)
1/4 cup Vegan mayo
1 Tbsp Nutritional Yeast Flakes
1 tsp Yellow Mustard
1/2 tsp Onion Powder
1/4 tsp Garlic Powder
1/8 tsp Seasoned Salt
1.5 Tbsp Dill Relish
1 tsp Dried Chives

Steps:

  • Drain and rinse garbanzos.
  • Mash garbanzos with a fork, or pulse in a food processor until chunky.
  • Add remaining ingredients and stir together.
  • Serve on bread, crackers, or veggies. Yum!
