EASY VEGAN APPLESAUCE CAKE
I am a very picky eater and I love this cake! My husband and my kids (ages 7, 6, and 2) also love it. The entire batch is gone in less than one day and I don't mind making it a few times a week because it's so easy! It's healthy too so I made it for breakfast once :)

Steps:
- Preheat oven to 350 degrees.
- Mix oil and sugar; then add applesauce.
- Combine dry ingredients and add to applesauce mixture; beat until smooth.
- Pour into a greased and floured 8-inch square baking dish.
- Bake for 40-45 minutes
- Use icing if desired.
VEGAN APPLESAUCE SPICE CAKE
Steps:
- 1 Preheat oven to 350 degrees. Grease well and lightly flour one 10-inch round pan (or one 9-inch, not 8-inch, square pan). 2 In large mixing bowl, whisk together flour, sugar, soda, salt and spices. Stir in the raisins and walnuts, separating the raisins. Add the applesauce, oil, and vanilla. Blend well. No electric mixer needed. 3 Pour into prepared pan. Bake at 350 degrees for about 35 minutes or until it tests done. 4 Cool in pan on wire rack for 10 minutes. Remove from pan and cool on rack for an hour.

- Sift flour, white sugar, soda, salt, baking powder, and spices into a large mixing bowl. Mix in 1/2 cup butter or margarine, buttermilk, and applesauce. Beat for 2 minutes with an electric mixer on medium speed. Beat in eggs. Fold in 3/4 cup chopped nuts. Pour batter into a greased and floured 9 x 13 inch pan.
- Bake at 350 degrees F (175 degrees C) for 50 minutes.
- Mix confectioners' sugar, cream cheese, and vanilla until smooth. Melt 1/4 cup butter over medium heat, and add 1 cup chopped pecans. Keep stirring until browned. Stir cooled pecans into cream cheese mixture. Frost the cooled cake.

- Preheat oven to 350 degrees F. Grease and flour 13x9-inch pan.
- Combine cake mix, eggs, applesauce and oil in large bowl. Beat at medium speed with electric mixer for 2 minutes. Stir in nuts. Pour into bake pan.

- Mix the flax seed meal with water and set aside. In a large bowl combine 1.5 cups of flour, sugar, salt, baking powder, baking soda, sugar, cinnamon, ginger, cardamom, cloves and nutmeg. Whisk well. Fold in the dates.
