1 onion, chopped
½ large green bell pepper, chopped
2 teaspoons minced garlic
3 eggs, beaten
1 zucchini, peeled and grated
1 yellow squash, peeled and grated
1 carrot, grated
1 green onion, sliced
1 cup buttermilk baking mix
½ cup shredded sharp Cheddar cheese
¼ cup vegetable oil
1 teaspoon salt
¾ teaspoon Italian seasoning
½ teaspoon paprika
½ teaspoon red pepper flakes
ground black pepper to taste
½ cup shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease an 8-inch square baking dish.
  • Heat 1 teaspoon vegetable oil in a skillet over medium heat; cook and stir onion, bell pepper, and garlic in hot oil until just tender, about 5 minutes. Transfer mixture to a large bowl.
  • Mix eggs, zucchini, yellow squash, carrot, green onion, baking mix, 1/2 cup Cheddar cheese, 1/4 cup vegetable oil, salt, Italian seasoning, paprika, red pepper flakes, and black pepper into onion mixture. Spread vegetable mixture into prepared baking dish and sprinkle with remaining 1/2 cup Cheddar cheese.
  • Bake in preheated oven until lightly browned, about 35 minutes.

This classic vegetable quiche recipe combines fresh and colourful vegetables, a creamy filling and a delicious pesto sauce that makes for a splendid supper to enjoy outside on a warm summer evening, or as a cheerful wintertime treat. The manchego cheese is used in place of the more typical parmesan as it has a nuttier flavour, but both work equally well.Vegetable quiche is a flexible dish, you can mix and match your favourite vegetables; broccoli, sliced courgettes, mushrooms, diced cherry tomatoes, and finely sliced asparagus all work equally well. The quiche itself can be served hot or cold, and will last a few days if kept chilled. The pesto is best prepared at the time of eating though.

1 sheet of puff pastry
300 g single cream
3 eggs ((beaten))
2 peppers (brunoise)
1 broccoli ((cut into small florets))
1 large tomato ((de-seeded and quartered))
1 onion ((peeled and sliced into rings))
1-2 spring onions ((finely chopped))
5 tbsp manchego cheese ((grated))
2 tbsp olive oil
1 garlic clove ((crushed))
butter ((for greasing))
salt & ground black pepper ((to season))
200 g fresh basil
200 ml olive oil
150 g manchego cheese ((grated))
50 g pine nuts
2 garlic cloves
salt & ground black pepper ((to season))

Steps:

  • Preheat your oven to 190ºC/375ºF or Gas Mark 5.
  • Lightly grease a 16cm/6in springform flan tin and line with the rolled out puff pastry.
  • Heat the olive oil in a large frying pan, add the garlic, onions, peppers, and broccoli and cook for 3-4 minutes - or until they are just starting to soften.
  • Transfer the cooked vegetables to a bowl to allow them to cool.
  • Add the tomatoes, cream, and eggs to the frying pan and mix together.
  • Season to taste with salt and pepper and then gently spread the mixture over the pastry.
  • Sprinkle with the grated Manchego cheese and place the tart in the oven for 25-30 minutes - or until a light golden brown.
  • To make the pesto sauce, lightly toast the pine nuts in a pan and then place in a food processor with the garlic, basil and Manchego cheese. Continue to blend whilst slowly adding the olive oil until smooth.
  • Place the sauce in a small bowl to serve with the quiche.

1 whole wheat pastry crust (unbaked)
4 large eggs
2 large egg whites
3/4 cup milk
1/4 cup plain Greek yogurt
1/4 cup pesto
1/4 teaspoon kosher salt
1/4 teaspoon freshly ground pepper
2 cups baby spinach (roughly chopped)
1/2 cup Parmesan cheese (freshly grated )
1/3 cup dried julienne sundried tomatoes ((not oil-packed) roughly chopped)

Steps:

  • Prepare the pastry crust according to the recipe directions (note: the recipe will yield 2 crusts. Feel free to either half the recipe or freeze the second half for a later time).
  • Preheat the oven to 425 degrees F. Roll the dough into a 12-inch circle, then fit it into a 9-inch pie plate (not deep dish). Trim the crust so it overhangs the plate edge by about 1 inch all the way around, then tuck the edges under at the plate edge and crimp with your fingers or a fork.
  • Prick the bottom of the crust all over with a fork at 1/2-inch intervals, then line the plate with foil or parchment paper. Fill with dry beans, uncooked rice, or pie weights, ensuring that the beans or weights are all the way up against the edges of the pan. Set on a rimmed baking sheet, then bake for 15 minutes. Remove the lining and weights. If the crust has puffed up in spots, gently press it back down with a fork. Bake, uncovered, for 8-10 additional minutes, until the bottom of the crust is lightly golden. Remove from oven and set aside. Reduce the oven temperature to 375 degrees F.
  • Meanwhile, place the sundried tomatoes in a small bowl and cover them with boiling water. Let sit for 5 minutes to rehydrate, then drain and pat dry.
  • In a large bowl whisk together the eggs, egg whites, milk, Greek yogurt, pesto, salt, and pepper. Then, stir in the spinach, Parmesan, and sundried tomatoes.
  • With the pie plate still on the baking sheet, carefully pour the filling into the prebaked crust.
  • Bake until the quiche is puffed and the center is set but still a little jiggly, 40 to 50 minutes. If the crust starts to brown too quickly as the quiche bakes, wrap the edges of the pan with foil to protect it. Let quiche cool on a wire rack for 15 minutes. Slice and serve warm or at room temperature.

  • Chop all the vegetables, apart from the tomatoes, and saute in olive oil for 10 minutes.

  • In a separate bowl, whisk the eggs with the milk and season with salt and pepper and parsely.
  • Pour this mixture on top of the veg mix and place the halved cherry tomatoes on top.

  • Start preheating oven to 375. While that is happening --
  • Saute onions, peppers, and mushrooms in one tbsp butter or margarine over medium heat for 10 minutes.
