VEGETARIAN KOFTA KABOBS



Vegetarian Kofta Kabobs image

This makes a spicy and healthy version of one of my favorite dishes. Serve with tabbouleh, pita bread and olives for a wonderful feast. Black beans or chickpeas can be substituted for adzuki beans. Adjust hot sauce and garlic to your tastes.

1 cup bulgur
2 cups vegetable broth or stock
1 (18.75 ounce) can adzuki beans
2 tablespoons olive oil
1 onion, finely chopped
3 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
2 tablespoons chopped fresh cilantro
2 teaspoons hot pepper sauce
1 egg, beaten
1 cup stale whole wheat bread cubes
1 cup skim milk
salt and freshly ground black pepper to taste
1 tablespoon olive oil
8 (12-inch) skewers

Steps:

  • Combine the bulgur wheat and vegetable stock in a saucepan. Bring to a boil, then simmer for about 10 minutes, or until liquid has been absorbed. Set aside to cool.
  • Meanwhile, in a large bowl, combine the adzuki beans, 2 tablespoons of olive oil, onion, garlic, cumin, coriander, cilantro, hot sauce, and the egg. Mash with a potato masher or sturdy whisk until fairly smooth. Soak the bread in milk, then squeeze out the excess; add to the bean mixture along with the bulgur. Mix using your hands until everything is well blended. Cover, and refrigerate for 1 hour, or until firm.
  • Preheat the oven to 425 degrees F (220 degrees C).
  • Wet your hands, and form the kofta into 32 oval shapes. Press onto skewers four at a time. Brush with remaining olive oil. Place on a baking sheet or broiling pan.
  • Bake for 10 to 15 minutes in the preheated oven. Turn over, brush again with oil, and continue baking for 5 to 10 minutes, until crispy.

1 red pepper, cut into 1-1/2-inch pieces
1 red onion, cut into 8 wedges
3 cups fresh pineapple chunks (1 inch)

1/3 cup A.1. Original Sauce
2 Tbsp. apricot preserves

Steps:

  • HEAT grill to medium-high heat. REMOVE stems from mushrooms; discard. Cut mushroom caps in half; thread onto 8 skewers alternately with remaining vegetables and pineapple. Brush with oil. MIX A.1. and preserves until blended. GRILL kabobs 10 min. or until peppers and onions are crisp-tender, turning frequently and brushing generously with A.1. mixture.

Pour garlic mixture over kabobs; let stand for 15 minutes. , Grill kabobs, covered, over medium heat for 10-15 minutes or just until vegetables are tender, turning frequently.

Vegetarian Koftas image

Koftas are usually made with meat, but this is a fun variation with bean and wheat, served with Tabouleh. I have had bad luck making "kabobs" out of the mixture as the recipe calls to do, and usually just end up grilling the kofta balls without putting them on skewers. Still tastes good! Note: I buy the adzuki beans canned, which eliminates step 1.

6 ounces adzuki beans
1 1/3 cups bulgur wheat
2 cups vegetable stock
3 tablespoons olive oil
1 onion, finely chopped
2 garlic cloves, crushed
1 teaspoon ground coriander
1 teaspoon ground cumin
2 tablespoons fresh cilantro, chopped
3 eggs, beaten
3/4-1 cup dried breadcrumbs
1/2 teaspoon salt
1/2 teaspoon pepper

Steps:

  • Cook the adzuki beans in boiling water for 40 minutes until tender. Drain and rinse. Let cool.
  • Cook the bulgur wheat in the stock for 10 minutes until the stock is absorbed. Set aside.
  • Heat 1 tbsp oil in a skillet to fry onion, garlic, and spices for 4-5 minutes.
  • In a boil, mix onion, beans, cilantro, seasoning, and eggs and mash with a potato masher. Add the bread crumbs and bulgur wheat and stir well. Cover and chill for 1 hour, until firm.
  • With wet hands mold the kofta mixture into 32 oval shapes.
  • Press onto skewers, then brush with oil and broil for 5-6 minutes until golden. Turn, and brush with oil and broil again. Drain on paper towels. Serve with Tabbouleh (see other recipe) black olives, and pita bread.

1 medium onion, cut into chunks
¼ cup fresh cilantro leaves
1 ½ (12 ounce) packages meatless ground beef substitute (such as Impossible(TM) Foods)
2 teaspoons ground paprika
1 teaspoon Greek seasoning

1 teaspoon ground cinnamon
¼ teaspoon cayenne pepper
salt and ground black pepper to taste
4 (6 inch) pita bread rounds, cut in half

Steps:

  • Preheat an outdoor grill to medium-high heat and lightly oil the grate.
  • Combine onion and cilantro in the bowl of a food processor; pulse until minced. Add ground beef substitute, paprika, Greek seasoning, cumin, cinnamon, cayenne, salt, and pepper; pulse until well combined. Form mixture into eight 4x2-inch patties.
  • Cook patties on the preheated grill until no longer pink in the center, 7 to 8 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Fill each pita half with shredded lettuce, diced tomato, diced onion, 1 tablespoon tzatziki, and a cooked patty.

2 teaspoons freshly ground black pepper, plus more to taste

½ tablespoon paprika
½ tablespoon chili powder
½ tablespoon dried mint
½ tablespoon dried oregano
⅓ cup small yellow onion, sauteed until translucent
1 medium yellow bell pepper
1 medium bell pepper
2 medium zucchinis
5 tablespoons olive oil, divided
½ cup garlic
2 lemons, juiced
1 ½ teaspoons kosher salt
½ cup full fat greek yogurt
2 tablespoons mayonnaise
2 pita bread rounds
3 cups arugula
1 cup fresh flat-leaf parsley
1 cup fresh mint leaf, roughly chopped
½ cup cherry tomato, halved
1 cup cucumber, halved lengthwise and thinly sliced into half-moons
½ cup red onion, pickled
⅓ cup lemon juice
8 skewers, 10 in (25 cm)

Steps:

  • In a medium bowl, combine the Impossible™ Burger, salt, black pepper, cumin, paprika, chili powder, mint, oregano, and onion.
  • Cut the yellow and red peppers into ¾-inch pieces and the zucchini in half lengthwise, then into ¾-inch-thick moons.
  • Assemble the skewers: Thread 3 pieces of bell pepper and zucchini onto a skewer, leaving about 1½ inches of space at the base. Mold 2 tablespoons of the Impossible™ Burger mixture around the skewer about 1½ inches above the vegetables. Add 3 more pieces of vegetable, another portion of beef, and 3 more vegetables. Repeat to build the remaining kebabs (8 total). Place the kebabs on a plate and refrigerate for 1 hour.
  • Make the garlic sauce: In a food processor, combine the garlic, lemon juice, and salt. Pulse 5 times, until the garlic is minced. Add the yogurt and mayonnaise, and process until smooth. Refrigerate until ready to use.
  • Preheat the grill to 350°F (180°C).
  • Drizzle 3 tablespoons of olive oil all over the kebabs. Season the vegetables with salt.
  • Place the kebabs on the grill and cook for 5 minutes on each side, or until the "meat" is cooked through and the vegetables are tender. Remove from the grill.
  • Meanwhile, brush the remaining 2 tablespoons of olive oil over the pita bread. Grill for 45-60 seconds per side, or until lightly toasted. Remove from the grill and let cool slightly, then cut into triangles.
  • To serve, divide the arugula, parsley, mint, tomatoes, cucumber, and pickled red onions among 4 plates. Drizzle with the lemon juice. Place 2 kebabs on each plate and serve immediately with the garlic sauce and grilled pita bread alongside.

  • Place chickpeas, panko, onion, garlic, flaxseed, parsley, cumin, coriander, ginger, cinnamon, cayenne, soy sauce and lemon into the bowl of a food processor. Pulse until finely chopped and well mixed, stopping to scrape down sides of bowl as needed. Taste test and adjust seasonings as needed. Season with salt and pepper to taste and pulse a few more times to incorporate.
  • Roll an eighth of chickpea mixture into about a nugget or cylinder shape (see photos). Place on a skewer. Repeat with remaining mixture, placing two koftes on each skewer. You should have four skewers total. Place a few veggies on each skewer.
  • Arrange skewers on oiled baking sheet, and if you have any leftover veggies, simply arrange them on the baking sheet alongside skewers. Brush koftes and veggies generously with olive oil. Bake about 15 minutes, turning halfway through cook time, until koftes and veggies are browned in spots.
