6 skinless, boneless chicken breast halves - cut into strips
¼ cup olive oil
2 large onions, diced
⅓ cup curry powder, or to taste

Steps:

  • Heat oil in a large skillet over medium heat. Add onion and saute until soft and golden brown. Slowly stir in curry powder. Once ingredients are blended together, add chicken breasts. Cover skillet and simmer over medium low heat for about 45 minutes or until chicken is cooked through and no longer pink inside.
  • Remove cover from skillet and cook for an additional 15 minutes, until sauce reduces. (Note: Make sure that you stir and that dish does not burn, as curry powder burns very easily!)

1.5 tbsp oil ((vegetable, canola))
2 garlic cloves (, minced)
2 tsp ginger (, grated)
1/2 onion (, finely chopped)
500g / 1lb chicken thighs, sliced ((Note 1))
2.5 tbsp curry powder ((Note 2))
270 ml / 1.25 cups coconut milk (, full fat (9 oz) (Note 3))
1.5 cups (375 ml) chicken stock low sodium
1/2 tsp salt
3/4 cup frozen peas
1/4 cup coriander / cilantro leaves (, chopped)

Steps:

  • Heat oil in a skillet over medium high heat. Cook garlic, ginger and onion for 3 minutes until onion is translucent.
  • Add chicken and cook until it it changes from pink to white.
  • Add curry powder and cook for 2 minutes.
  • Add coconut milk and chicken stock. Stir, lower heat to medium and cook, simmering rapidly, for 10 minutes until sauce reduces and thickens.
  • Add peas and salt. Cook for a further 2 minutes, then taste to see if it needs more salt. Garnish with coriander.
  • Serve over rice, noodles or mashed potato!

1/4 cup chopped fresh parsley
4 green onions, thinly sliced
4 cloves garlic, thinly sliced
4 to 6 boneless, skinless chicken breasts
1/4 cup flour
2 tablespoons extra-virgin olive oil
1 tablespoon unsalted butter
1 cup unsalted or low-sodium chicken stock
1/2 cup dry white wine
1 1/2 teaspoons curry powder, or to taste
3/4 cup heavy cream
Kosher salt, to taste
Freshly ground black pepper, to taste

Steps:

  • Gather the ingredients.
  • Chop the parsley. Slice the green onions thinly. Finely mince the garlic.
  • Pat the chicken breasts dry and lightly sprinkle them all over with salt and pepper. Dredge each of them in flour to coat both sides.
  • In a large skillet or sauté pan, heat the oil and butter over medium heat. Add the chicken breasts and cook for about 4 to 5 minutes on each side, until lightly browned. Add the chicken broth, wine, parsley, green onions, garlic, and curry powder. Bring to a boil; reduce the heat to medium-low and simmer, uncovered, for 5 minutes.
  • Cover the pan and simmer for 5 to 10 minutes longer.
  • Stir in the cream and add salt to taste. Heat through.

Weeknight cooking doesn't get any easier than this endlessly adaptable five-ingredient, 30-minute curry from Mark Bittman. Sauté a pile of chopped onions in a little oil, then stir in curry powder (or red curry paste for Thai flavors). Pour in a can of coconut milk and swirl to combine. Add chicken, simmer until it's cooked through and finish with some chopped tomatoes. And dinner is served! This recipe lends itself to experimentation, so change it up. Be generous with spices. Toss in chopped bell pepper or carrots with the onions. Add a can of drained chickpeas or a generous handful of fresh spinach with the tomatoes. 3 tbsp vegetable oil
500g onion , finely chopped
6 garlic cloves , peeled and chopped
large knob root ginger peeled and finely chopped
2 tbsp Madras curry paste
400g can chopped tomato

Steps:

  • Heat oil in a large shallow pan. Throw in onions and cook for 10 mins, or until soft. Tip in the garlic and ginger, then cook for a further 2 mins, watching the garlic doesn't burn. Stir in curry paste and cook for another min.
  • Now pour in 1 litre of cold water, the tomatoes and 1 tsp salt. Give it a good stir and bring to the boil. Cook the sauce over a high heat for about 10 mins, or until the liquid has reduced by a third. Will keep for 1 week in the fridge or freeze for up to 2 months.

2 tbsp sunflower oil
1 onion, thinly sliced
2 garlic cloves, crushed
thumb-sized piece of ginger, grated
6 chicken thighs, boneless and skinless
3 tbsp medium spice paste (tikka works well)
400g can chopped tomatoes
100g Greek yogurt
1 small bunch of coriander, leaves chopped
50g ground almonds
naan breads or cooked basmati rice, to serve

Steps:

  • Heat the oil in a flameproof casserole dish or large frying pan over a medium heat. Add the onion and a generous pinch of salt and fry for 8-10 mins, or until the onion has turned golden brown and sticky. Add the garlic and ginger, cooking for a further minute.
  • Chop the chicken into chunky 3cm pieces, add to the pan and fry for 5 mins before stirring through the spice paste and tomatoes, along with 250ml water. Bring to the boil, lower to a simmer and cook on a gentle heat uncovered for 25-30 mins or until rich and slightly reduced. Stir though the yogurt, coriander and ground almonds, season and serve with warm naan or fluffy basmati rice.

400 g chicken, cut into strips
400 -500 ml chicken consomme
1 tablespoon butter
1 tablespoon wheat flour
1 -2 tablespoon curry powder
1 -4 teaspoon white pepper
1 teaspoon cumin

Steps:

  • Fry the flour and the butter on a frying pan or in a sauce pan.
  • Brown only a bit.
  • Pour in the chicken consommé and beat to smooth.
  • Pour the sauce to a bowl and fry the chicken strips on the pan.
  • Pour in the sauce and cook over a low heat about 5 minutes.
  • Serve with rice.
  • You can add almost any spice you like to this, and the amounts of curry, white pepper and cumin can vary a lot.
  • These amounts are only approximate, I never measure them.
  • This is best with long-grain rice first fried a little with onions and butter and then boiled in chicken consomme (with a cinnamon stick and curry).

1 cup yogurt (curds)

Steps:

  • Add a 1/2 teaspoon chilli powder and turmeric to the chicken pieces.
  • Mix well and let it marinate for atleast 1/2 hour.
  • Heat a heat and add oil.
  • When the oil is hot, add the ginger and onion.
  • Fry in medium heat until the onions are brown and soft.
  • Add chopped tomatoes and continue frying until oil begins to leave.
  • Add the remaining salt and chilli powder and continue to fry stirring occasionally for 3 minutes.
  • Add the well marinated chicken pieces and mix well so that all the pieces are coated with the onion, tomato gravy.
  • Close the vessel with lid and let the chicken cook on low-medium for about 5-7 minutes.
  • Add a little water and the yogurt and mix well. Let it cook for a few more minutes until the gravy becomes a bit thick. ( the yogurt added makes a very rich gravy).
  • Switch off the stove. Sprinkle with the chopped cliantro leaves.
  • Serve hot with white rice.
