CREAMY MUSHROOM PASTA
Pasta is served up in a creamy white wine and mushroom sauce. This recipe tastes like it's from a restaurant! It is a quick and easy dish that my whole family loves. I also like to use different pastas with this dish.

Steps:
- Bring a large pot of lightly salted water to a boil. Add pasta and olive oil. Cook for 7 minutes, or until tender. Drain.
- Meanwhile, melt butter in a skillet over low heat. Add the mushrooms, and cook until soft and dark. Stir in the garlic, Italian seasoning, salt, white wine, and chicken broth. Increase the heat to medium, and cook stirring constantly for about 5 minutes.
- Reduce heat to low, and stir in the sour cream until smooth. Stir in cornstarch, and simmer for a minute to thicken. Stir in pasta, or spoon sauce over pasta. Serve, and top with grated Parmesan cheese.

CREAMY MUSHROOM SPAGHETTI

- Heat water to a boil for the pasta, salt water, drop in pasta and cook to al dente.
- Wipe mushrooms clean with damp towel. Remove woody stems. Thinly slice the mushrooms.
- Heat a large deep skillet with extra-virgin olive oil over medium-high heat. Add the mushrooms and cook until deeply golden and tender, 10 minutes.
- While mushrooms cook, halve the leeks lengthwise. Cut off a couple of inches from tough tops. Trim off root end. Thinly slice the leek then vigorously wash in a large bowl of cold water, separating all the layers to free of grit. Let leeks sit a few minutes then lift out of the water and dry on kitchen towel.
- Add leeks to mushrooms along with garlic and season with salt, pepper and fresh thyme. Cook 3 to 4 minutes more then add wine, reduce half a minute then stir in cream and heat through. Toss pasta with mushrooms and adjust seasoning. Top with grated cheese at the table.
CREAMY MUSHROOM PASTA

- Heat the oil and butter in a medium saucepan. Fry the onion over a low heat for 10 mins or until softened and translucent.
- Add the mushrooms and cook for 10 mins over a medium heat. Add the garlic and cook for 2 mins. Add the wine and bring to a simmer, reduce the liquid by half.
- Add the double cream and bring to a simmer, then add the lemon zest and parmesan. Season with salt and plenty of black pepper.
- Meanwhile, cook the pasta following pack instructions. Reserve 100ml of the pasta water. Toss the pasta in the pan with the creamy sauce and enough of the reserved water to loosen. Stir through the parsley, divide into bowls and top with extra cheese, if you like.

- Begin preparing the sauteed mushrooms as directed. While mushrooms are cooking, bring a large pot of water to a boil for the tagliatelle pasta. When the water has come to a boil, add salt and the pasta.
- While pasta is cooking, add a splash of white wine to the sauteed mushrooms and let simmer for 1 minute. Add cream and grated cheese and bring to a simmer. Remove pan from heat. When pasta has reached desired consistency, add to pan of mushrooms and stir. Serve warm with extra cheese for grating.
GARLIC MUSHROOM PASTA RECIPE
This is hands-down the best rich and velvety mushroom pasta recipe without cream. Loads of mushrooms, garlic, shallots, and a little parmesan, tossed with perfectly cooked pasta, and a lighter silky-smooth sauce!

- Cook the pasta to al dante in boiling salted water according to box instructions. Keep 1 cup of the pasta cooking water then drain the pasta.
- In a large skillet, heat the olive and butter over medium-high heat, add the shallots and garlic and cook, tossing regularly for 2 to 3 minutes (manage the heat so that the garlic does not burn).
- Add all the mushrooms and toss them around in the pan for a couple of minutes, adding another drizzle of extra virgin olive oil. Season with a good pinch of kosher salt, black pepper and the rosemary. Cook the mushrooms for about 7 to 10 minutes, tossing occasionally, until they turn color and release their juices.
- Add the tomato paste, wine and about ½ to 3/4 cup of the pasta cooking water. Cook over medium heat for about 4 to 5 minutes (this becomes your mushroom pasta sauce).
- Add the cooked pasta to the mushroom sauce. Toss to combine. If needed add a little bit more of the pasta cooking water.
- Stir in Parmesan cheese and finish with a sprinkle of parsley, walnuts and red pepper flakes. Serve immediately!

VERY MUSHROOMY MUSHROOM TART
This is for mushrooms lovers: lots of mushrooms, loosely bound with a little cream and eggs! The success of this tart depends on the mushrooms: use the tastiest fresh ones you can find, and at least 3 types! I had to invent this quickly to prevent my expensive shiitakes spoiling! I used my recipe recipe #231688, used slightly less than half, and wrapped the rest for the freezer. Although I work with metric amounts, I use American weights and measures which I hope is as close as possible to the original amounts.

- * A NOTE about the pastry: you can bake this mushroom dish in a greased pie plate without any pastry, if you like. The pastry mentioned is really delicious and quickly made in a processor: you'll have lots left over for another day and it freezes well. Line a 7" x 1 3/4" deep tart dish with the pastry, put a round of wax paper in the bottom, weight down with rice or beans, and pre-bake in a 350 F/180 C oven for 8 minutes. Then remove the paper and beans/rice carefully and discard.
- Heat oven to 325 deg F/160 deg Celsius.
- Clean the mushrooms except the oyster mushrooms, which are usually completely free of grit.
- Cut off part of the stems, as these are often gritty or discoloured. Then slice and chop the mushrooms into a bowl.
- Heat about 3 tablespoons oil in a large pot. When hot, tip in the chopped mushrooms.
- Stir, over medium heat -- if heat is too low the mushrooms will render a lot of liquid.
- Add more oil if necessary, don't put the lid on, stir now and then, and fry until the mushrooms have collapsed, shrunk in size, and are soft -- about 10 minutes. Keep heat medium.
- Add the sherry, stir through well, turn heat up slightly, and let sherry and any liquid almost boil away. (Don't let mushrooms burn; there should be a tiny bit of liquid in the bottom).
- Add the salt, nutmeg and pepper, stir through, and pull off heat.
- Whisk the eggs well, and stir in the cream and the grated cheese.
- Add this to the mushrooms. You could taste the mixture at this point, and add any extra seasoning you'd like.
- Tip the lot into the prebaked pie shell. Sprinkle over more nutmeg, and then sprinkle well with dried breadcrumbs to prevent top from drying out.
- Bake in the pre-heated oven for 45 - 50 minutes, or until the tart has risen slightly in the centre, and does not wobble at all when tested.
- Serve as a side dish with fried chicken, or as a brunch dish with green salad. Can be eaten hot or cold, and would be nice on a picnic.

CREAMY PASTA WITH CRISPY MUSHROOMS
Supermarkets would have you believe it's always mushroom season. It is-for white buttons, maybe. But the first cool fall days bring feathery maitakes, meaty oysters, and other flavorful varieties worth seeking out at the farmers' market. Whichever one you pick, all they'll need is a quick sear in a hot pan before being tossed into a creamy pasta sauce.

- Heat 2 Tbsp. oil in a large pot over medium-high. Cook half of mushrooms in a single layer, undisturbed, until edges are brown and starting to crisp, about 3 minutes. Give mushrooms a toss and continue to cook, tossing occasionally, until all sides are brown and crisp, about 5 minutes more. Using a slotted spoon, transfer mushrooms to a plate; season with salt. Repeat with remaining 2 Tbsp. oil and mushrooms and more salt.
- Reduce heat to medium-low and return all of the mushrooms to the pot. Add shallots and cook, stirring often, until shallots are translucent and softened, about 2 minutes.
- Meanwhile, cook pasta in a large pot of boiling salted water, stirring occasionally, until very al dente, about 2 minutes less than package directions.
- Using tongs, transfer pasta to pot with mushrooms and add cream and 1 cup pasta cooking liquid. Increase heat to medium, bring to a simmer, and cook, tossing constantly, until pasta is al dente and liquid is slightly thickened, about 3 minutes.
- Remove pot from heat. Add lemon zest and juice, parsley, butter, 1/2 oz. Parmesan, and lots of pepper and toss to combine. Taste and season with more salt if needed.
- Divide pasta among bowls and top with more Parmesan.
