CHOCOLATE SOUP
This is posted for the World Tour 2005 RecipeZaar event. I haven't tried it yet, but oh my, does it ever look good! The source is Lidia's Italian-American Kitchen by Lidia Matticchio Bastianich.

Steps:
- In a small bowl, stir 1/2 cup milk and the flour until smooth.
- In a saucepan bring 4 1/2 cups milk to a simmer over medium heat. Place chocolate in a small bowl, and ladle 1 cup of the simmering milk over the chocolate and whisk to dissolve it. Stir the dissolved chocolate into the simmering milk.
- Slowly add the flour mixture to milk in the saucepan, then stir in sugar, butter, and cinnamon, and return to the simmer. Cook, stirring until thick and smooth - about 5 minutes.
- Remove from heat, and let rest about a minute. Ladle soup into warm bowls, and pass the brioche, panettone, or cookies for dunking into the soup.

HOT CHOCOLATE SOUP

- Select appropriate dispending tip for recipe and screw onto head. Check that appropriate gasket is positioned inside the head. Pre-heat bottle and head. Over a double boiler, heat chocolate with whole milk and stir until smooth. Remove from heat when the mixture reaches approx. 165 F. Add egg whites to the heated mixture and pour into a pre-heated iSi Thermo Whip. Screw head onto the bottle. Charge with one iSi cream charger and shake bottle vigorously 4-6 times. Remove charger holder, discard used charger, and screw on decorator cap. Turn bottle upside-down with dispensing tip in the vertical position. Press lever to dispense.
WARM CHOCOLATE SOUFFLES
I made these with Dutch Process Cocoa. It was like eating a chocolate cloud. The recipe comes from the New Mayo Clinic Cookbook.

Steps:
- Preheat oven to 375 degrees.
- Lighlty spray six 1-cup individual souffle dishes or ramekins with cooking spray.
- In a small bowl, combine the cocoa and hot water, stirring until smooth; set aside.
- In a small saucepan over medium heat, melt the butter, stir in the canola oil; stirring to combine.
- To the butter mixture, add the flour, ground nuts and cinnamon.
- Cook mixture for approximately 1 minute, stirring constantly with a wire whisk.
- Stir in brown sugar, honey and salt.
- Gradually add the milk and cook, stirring constantly, until thickened, about 3 minutes.
- Remove from heat and add the cocoa mixture.
- Allow mixture to cool slightly.
- In a large bowl, using an electric mixer on high setting, beat the egg whites until foamy.
- Add the granulated sugar, 1 tablespoon at a time, and continue to beat until stiff peaks form.
- With rubber spatula, gently fold 1/3 of egg whites into cocoa mixture.
- Then fold in the remaining egg whites, mixing only until no white streaks remain.
- Gently scoop the mixture into prepared dishes and bake until souffle rises above the rim and is set in the center, approximately 15 to 20 minutes.
- Using a fine sieve, dust the tops with confectioners sugar and garnish with fresh berries.
- Serve immediately.

CHOCOLATE SOUP II
This is a great soup to make when the kids are at home, and there is snow on the ground outside.

Steps:
- Combine sugar, flour and cocoa. Put under broiler to brown, stirring frequently. Remove from heat. Add a little milk until creamy. Cool.
- Heat the remainder of the milk to boiling. Gradually stir in cocoa mixture, bring to a boil. Add vanilla and salt to taste.
- Cube the bread, and fry golden brown in the butter or margarine. Serve with the hot soup.

CHOCOLATE SOUP
Not a dessert for the faint-hearted, these pudding pots are pure liquid chocolate - with a dash of coffee and brandy

Steps:
- Put the cream in a saucepan over a medium heat and gently bring to the boil. Meanwhile, chop the chocolate into small pieces using a heavy knife and prepare the coffee.
- Once the cream is just boiling, turn off the heat and throw in the chopped chocolate. Stir gently until completely smooth, then add the coffee and brandy (if using).
- To serve, divide between 4 small bowls and add a scoop of vanilla ice cream to each.

- Grease the bottoms only of twelve 6-oz. ramekins or custard cups; set aside. In a large microwave, melt butter and chocolate; stir until smooth. Set aside., In a large bowl, beat eggs and yolks on high speed for 3 minutes or until light and fluffy. Gradually add sugar, beating until thick and lemon-colored, about 5 minutes. Beat in chocolate mixture. Combine flour and baking powder; beat into egg mixture just until combined. , Fill prepared ramekins half full; sprinkle with marshmallows. Bake at 400° for 12-15 minutes or until the top is puffed and center appears set. Sprinkle with cinnamon-sugar; serve immediately. Refrigerate leftovers.

- Use a vegetable peeler to peel off the orange part of the rind, leaving the bitter white pith on the fruit. Combine the orange rind, milk, and half-and-half in a large saucepan, and place it over medium heat. Bring the milk to a simmer, with bubbles appearing along the sides of the pan. Remove the pan from the heat and cover it with a lid. Let it sit to infuse the orange flavor in the milk, for at least 30 minutes and up to 2 hours, depending on how strong you want the orange flavor to be.
- Preheat the oven to 300 F, and line a baking sheet with aluminum foil. Cut the croissants into small cubes. Place the butter in a large bowl, and microwave it for 15 seconds, or until melted.
- Chill your mixing bowl and whisk attachment in the refrigerator for 15 minutes. Combine the heavy cream, crème fraiche, powdered sugar, and vanilla bean paste or extract in the chilled bowl. Beat on medium-high speed, scraping down the bowl once or twice, until the mixture is thickened and holds firm peaks. Don’t overbeat, or it will get grainy!
