It's refreshing, delicious, and super easy to make on a hot day...not to mention it looks beautiful in your glass! So why not kick back, relax, and enjoy a tall glass of this mouthwatering cocktail and watch as your stresses just melt away. Garnish glasses with lime slices, mint, and watermelon slices if desired.

6 cups cubed seedless watermelon
50 fresh mint leaves
5 limes, juiced
1 cup white rum
⅔ cup simple syrup
2 cups ice cubes, or as needed
1 cup club soda, or as needed

Steps:

  • Place cubed watermelon in a blender and blend until smooth. Pour into a bowl through a mesh strainer to remove pulp. Measure out 2 cups of strained watermelon juice and set aside.
  • Place mint leaves in the bottom of a pitcher. Pour in 1/2 the watermelon juice; muddle mint leaves with a muddler or the bottom of a wooden spoon.
  • Pour remaining watermelon juice, lime juice, rum, and simple syrup into the pitcher. Fill with ice and top with club soda. Serve.

4 cups cubed watermelon
1 cup blueberries
2 tablespoons thinly sliced mint
2 tablespoons fresh lime juice
2 tablespoons rum
2 teaspoon agave nectar

Steps:

  • In a medium bowl, combine the watermelon, blueberries and mint.
  • In a small bowl, whisk together the lime juice, rum and agave nectar.
  • Stir the lime juice mixture into the watermelon mixture.
  • Refrigerate, covered, for 1 hour. Serve.

4 lbs (about 6 cups) seedless watermelon, cut into small chunks (we did triangles)
1/4 cup fresh lime juice
1/2 cup mint leaves, roughly chopped
1/4-1/2 teaspoon salt, or to taste
Cayenne pepper, to taste
Other ingredients that would go well with this: 1/2 cup diced cucumber, 1/2 cup diced berries, and even little rum (about 1/4 cup)!

Steps:

  • Toss all of the ingredients together in a large bowl until uniform.
  • You can set it into the refrigerator for about 1 hour if you would like it cold or you can serve it as is at room temperature. Enjoy!

1/4 cup of lime juice
1/4 cup mint leaves (sliced)
1 jalapeno (sliced)
2 tablespoons agave syrup
pinch of sea salt

Steps:

  • In a large dish add sliced or cubed watermelon.
  • In a small mixing bowl combine the lime juice, mint leaves, jalapeno, and agave syrup. Whisk well to combine.
  • After it's well combined, muddle the mint and jalapenos into the dressing using a wooden spoon.
  • Pour the dressing over the watermelon and top with flaky sea salt.

2 tablespoons honey or sugar
1/4 cup fresh lime juice
zest from 1 lime
1/3 cup mint leaves plus extra for garnish

Steps:

  • Cut your watermelon into bite-sized cubes. If using part of the rind as a bowl, be careful when scooping the flesh from the bowl side.
  • Cut the 1/3 cup of fresh mint leaves into small strips. Set aside.
  • In a small bowl, whisk together the sweetener, lime juice, and lime zest.
  • Pour the dressing over your watermelon. Add the mint leaves. Stir.
  • Enjoy!

1 tablespoon granulated sugar
5 sprigs fresh mint, leaves torn in half & stems discarded
3 tablespoons fresh lime juice
1 tablespoon rum (optional)
1 cup seedless watermelon, balled
1 cup seedless grapes
1 cup cantaloupe, balled
1 cup strawberries, hulled and quartered
1 cup kiwi, peeled and quartered
1 cup fresh blueberries

Steps:

  • In a small bowl, add the sugar and mint leaves. Muddle the mint leaves into the sugar (pressing/crushing/rubbing the leaves into the sugar to release the mint flavor). Remove the mint leaves. Stir the lime juice and rum (if using) into the sugar to create a mojito dressing. Set aside.
  • In a large bowl, gently mix together all of the fruits. Drizzle the mojito dressing over the fruit mixture and gently combine the dressing with the fruit. Cover the bowl and refrigerate at least 1 hour.
  • Before serving, gently combine the fruit with the dressing one more time.

3 Tablespoons powdered sugar

Steps:

  • Add watermelon, strawberries, raspberries, blueberries, and mint in a large bowl. Stir together lime juice and powdered sugar in a small bowl then pour over fruit and berries. Gently toss with a spatula then let sit in the refrigerator for at least 15 minutes before serving to allow the natural juices in the fruit to start coming out.
